Special Yellow Beef Soup of Sokaraja
Preparation: 20 minutes
Cooking time: 45 minutes
Total: 65 minutes

Ingredients:
500 gram of beef (choose the brisket cut)
750 ml water
2 stalks of lemongrass, crushed (you can substitute with 2 lemon verbena leaves)
1 tbsp. sugar
3 cm of galangal, crushed
2 tbsp. sweet soy sauce
1 tbsp. Beef broth powder
Salt to taste
3 tbsp. Cooking Oil, for sautéing
1 piece of kaffir lime leaf

Puree Seasoning:
11 cloves of shallot, mashed
6 cloves of garlic, mashed
½ tsp pepper powder
2 cm of ginger, mashed
4 candlenuts, roasted and mashed
4 cm of Turmeric, mashed

Spicy Sauce Ingredients:
150 gram of peanuts, fried and mashed
9 red chili peppers, mashed
1 tbsp. palm sugar, slice smoothly (or you can substitute with brown sugar)
¼ tbsp. sugar
2 tsp of tamarind water (you can substitute with sour carambole)
3 cloves of shallot, mashed
2 cloves of garlic, mashed
Salt to taste

How to make the Spicy Sauce:
Grind the red chili peppers, shallots, garlics, salt, grinded palm sugar and tamarind water. Then, sauté the puree seasoning with 2 tbsp. of cooking oil for 3 minutes. Add 200 ml water into it and wait until the spicy sauce becomes thick. After that, lift it and put into a small bowl.

How to Cook:
1. Boil the beef (brisket) until half cooked. Then, drain it and cut into dices.
2. Add 1800 ml water into your pot and boil the beefs again.
3. While the beefs are boiled until well cooked, heat the cooking oil in a pan with a medium heat (130-140OF) and sauté the puree seasoning which have been prepared for 3 minutes. Then, add galangal, kaffir lime leaf and lemongrasses.
4. After that, put the sauté seasoning into the pot. Add salt, sugar, sweet soy sauce and beef broth powder.
5. Cook it well. Then, wait until the beefs are become tender and ready to be served.
6. Serve: Prepare the bowl and fill it with the complements, such as short bean sprouts, glass noodles which have been boiled, green onions, celeries, fried soy beans, crispy fried shallots.
7. To make it more delicious, eat the special yellow beef soup of Sokaraja with rice, spicy sauce and crackers.

1/2 head of cabbage shredded
1 large carrot, peeled and grated on the large holes of a box grater
1/8 cup Balsamic Vinegar
1/4 cup red wine vinegar
3/8 cup ketchup
1/8 cup cane sugar
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 tablespoon hot sauce

Mix all ingredients and chill in refrigerator before serving.

Furr's Fruit Punch Jell-O Salad




3 packages Mix Fruit Jell-O (3 ounce Package)
3 cups Boiling Water
2 1/2 cups Cold Water
1 Can Fruit Cocktail (14.5 ounce drained)
1 cup Flaked Coconut
1 cup Miniature Marshmallows

Place Jell-O in a mixing bowl add 3 cups of boiling water, stir to dissolve Jell-O. Place the two and one half cups of cold water in Jell-O and blend thoroughly. Pour one cup of gelatin in small bowl and set aside and do not chill. Place Jell-O in a serving dish or 13" x 9" pan. Chill Jell-O until soft set.

When Jell-O is soft set remove from refrigerator. Place fruit cocktail that has been drained, on top of Jell-O. Sprinkle coconut on top of fruit cocktail place marshmallows on top of all and arrange evenly. Press all very lightly with a spoon. Finally pour the reserved liquid Jell-O mixture on top of marshmallows. Place Jell-O back into the refrigerator until the salad is completely set.


Steamed Chicken with Lemon Basil Wrapped in Banana Palm Leaf

Ingredients:
½ kg 1chicken, cut in to 7 pcs
Lemon basils
1 tomato, cut into 7 pcs
1 cm galangal
1 cm ginger
1 cm turmeric
½ tsp chili powder
6 cloves of garlic
4 cloves of onion
1 Tbs. 2Knorr All-in-One
1 tsp salt
½ tsp sugar
1 tsp candlenut
2 pcs kaffir lime for removing the raw chicken smell
4 Tbs. cooking oil for sautéing
3Banana palm leaves (make it wither by drying it on a stove)

Procedure:
1.Smear the chicken with Squeezed lime juice. Wait for about 10 – 15 minutes. Then, clean it up.
2.Puree all the ingredients with blender, then sauté the puree until it smells aromatically.
3.Put in 7 pieces of chicken, then add 3 Tbs. water, stir until it is dried.
4.Take the dried banana palm leaves for covering the chickens.
5.Put lemon basils on top of each banana palm leaf.
6.Add 1 piece of chicken, and give other lemon basils on the top of the chicken and put a piece of tomato.
7.Wrap up the banana leaves until it covers all. Pin the banana palm leaf with small skewers/toothpicks in the corner and the middle.
8.Repeat the 5-7 step for the 6 other pieces of chicken.
9.Steam the chickens wrapped with banana palm leaf for about 40 minutes.
10.Delicious steamed chickens wrapped with banana palm leaf are ready to serve.

Cream Cheese Brownies




8 ounces cream cheese, room temperature
1/4 cup sugar
1 large egg, room temperature
1/4 teaspoon vanilla extract
For the brownies:
6 tablespoons unsalted butter, plus more for pan
1/4 cup cornstarch
1/4 cup unsweetened cocoa powder
1 tablespoon instant coffee or espresso powder
1/2 teaspoon kosher salt
9 ounces semisweet chocolate, coarsely chopped
1 cup sugar
1 teaspoon vanilla extract
3 large eggs, room temperature

Make the cream cheese swirl:
Using an electric mixer on high speed, beat cream cheese and sugar in a large bowl until smooth. Add egg and vanilla and beat until smooth.
Make the brownies:
Preheat oven to 350°F. Butter baking pan and line with 2 overlapping layers of parchment, leaving a 2" overhang on all sides. Butter parchment.
Whisk cornstarch, cocoa powder, coffee, and salt in a small bowl.
Combine chocolate and 6 Tbsp. butter in a large heatproof bowl set over a pot of barely simmering water, stirring occasionally, until butter and chocolate are melted and smooth. Remove from heat, then stir in sugar and vanilla. Whisk in eggs, one at a time, then whisk in cornstarch mixture until smooth, about 1 minute.
Transfer batter to prepared pan. Dollop cream cheese mixture over batter, then swirl into batter with a knife or spatula.
Bake brownies until a toothpick inserted into the center comes out with a few moist crumbs attached, about 30 minutes. Transfer pan to a wire rack and let cool completely. Using parchment overhang, transfer brownies to a cutting board. Cut into 4 pieces lengthwise, then 4 pieces crosswise to make 16 bars.

Brownies can be made 3 days ahead. Store in an airtight container at room temperature.

Spring chicken soup with rosemary-lemon broth

SPRING CHICKEN SOUP WITH ROSEMARY-LEMON BROTH


4 tsp. olive oil, divided, plus more for finishing the soup

1/4 cup finely diced onion

1 tsp. minced garlic

2 stems fresh rosemary, plus a few small sprigs for garnishing the soup

1 qt. low-sodium vegetable broth

1/2 cup finely diced carrot

1/2 cup finely diced celery

1 oz. (1-2 big handfuls) chopped fresh kale, stems removed

- pinch crushed red pepper flakes

1 cup chopped rotisserie chicken (or approx. 24 Mini Chicken Meatballs)

1/4 cup Israeli couscous

- kosher salt and freshly ground Black Peppercorns, to taste

- freshly grated zest of 1 lemon

1 oz. freshly squeezed lemon juice (or more to taste)

- thinly sliced lemon, for garnish

In a medium saucepan over medium heat, heat ½ of the oil. Cook onion and garlic, stirring occasionally, until onion is softened and garlic is very fragrant (about 5 min.). Add rosemary and broth. Increase heat to high; bring to a boil. Reduce heat to low (soup should barely bubble); cook about 1 hr. Strain onion, garlic and rosemary from broth; discard solids and set broth aside. In a deep pot over medium heat, heat remaining oil. Cook carrot and celery in oil until softened (about 5 min.). Add kale and red pepper flakes, stirring to coat kale with oil; cook 1 min. Add rosemary broth and chicken. Increase heat to medium-high; bring to a gentle boil. Add couscous; cook until tender (about 8 min.). Season to taste with salt and pepper. Just before serving, stir in zest and juice. Drizzle individual servings with a bit of oil and garnish with rosemary sprigs and lemon slices.

Serves 4.

MINI CHICKEN MEATBALLS

1/2 cup breadcrumbs

1 tsp. very finely minced fresh rosemary

- zest of 1 lemon

1/2 tsp. kosher salt

1/4 tsp. freshly ground Black Peppercorns

1/3 cup skim milk

1 egg, lightly beaten

1 lb. ground chicken

In a medium mixing bowl, whisk together first 5 ingredients; stir in milk. Let crumbs stand for 15 min.; mix in egg. Add chicken; mix well. Using slightly damp hands, shape into approx. 60 mini meatballs (about ¾" diameter). Spray 2 large parchment-lined rimmed baking sheets with cooking spray; bake meatballs in a preheated 400° oven until done (about 10 min.).

Makes 60.

Note:

· Meatballs may be frozen for up to 3 months. Cool baked meatballs at room temperature for 1 hr. Place on a baking sheet and freeze until nearly solid (about 3 hrs.). Transfer balls to a single freezer bag or multiple freezer-safe containers. Thaw overnight in the refrigerator before using in soups or pasta dishes.

4 tablespoons salted butter

2 cups diced tomatoes

A pinch of chile flakes

Kosher salt

Freshly ground black pepper

12 extra-large eggs

1/2 cup low-fat or whole milk

1 cup grated Parmigiano-Reggiano, cheddar, or other cheese (or a combination of cheeses)

1. In a large sauté pan, melt the butter over medium heat. Add the tomatoes, chile flakes, and salt to taste, reduce the heat to medium-low, cover, and cook, stirring occasionally to make sure that the tomatoes do not stick, until they have broken down, about 20 minutes. Add pepper to taste.

2. Meanwhile, in a large bowl, whisk the eggs just enough to break up the whites and yolks. (You want them fairly well blended but not overbeaten.) Add the milk and grated cheese and whisk gently just to combine.

3. Reduce the heat to low and add the eggs to the tomatoes. Cook gently, stirring constantly with a silicone spatula in a figure-8 motion, until the eggs begin to thicken and are soft and silky, 20 to 30 minutes. Serve immediately.

(5) Invest in a meat thermometer to determine temperature to ensure the steak is over- or under-cooked.

Pick out the perfect steak – When selecting a steak, you should look for is proper aging and marbling. The flesh should be pink and marbled well. Marbling indicates the fat content throughout the meat and gives the steak a “melt in your mouth” taste and texture. In addition, the cut should be at least an inch thick to ensure proper temperature distribution.
Make sure your grill is hot enough to sear the meat properly – You want the grill hot enough to seal in the juices, as that’s where the flavor is located.
Seasoning the steak properly is essential – Make sure to liberally season with kosher salt and course ground black pepper.

1 pound medium egg noodles
1/2 pounds ground beef
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon black pepper
1 (12-ounce) jar salsa
1 (26-ounce) jar spaghetti sauce with mushrooms
1 (3.8-ounce) can sliced black olives, drained
1 cup (4 ounces) shredded Mexican cheese blend

In a 6-quart soup pot, cook noodles according to package directions; drain, rinse, drain again, and set aside in the colander.

In the same pot, brown the beef with the garlic powder, salt, and pepper over high heat for 5 to 7 minutes, or until no pink remains; drain.

Stir in the salsa, spaghetti sauce, and olives then return the noodles to the pot. Reduce heat to medium and cook 3 to 5 minutes, until thoroughly combined and heated through, stirring frequently.

Serve topped with shredded cheese.

Bread:
1 cup sour cream
4 eggs, lightly beaten
1/4 cup vegetable oil
1/4 cup water
1 (18.25 ounce) box butter recipe cake mix
1 small box instant pistachio pudding mix
1/2 jar maraschino cherries, chopped (optional)

Topping:
6 tablespoons brown sugar
2 tablespoons cinnamon
1 1/4 cups chopped walnuts

Mix all ingredients for bread except cherries, with mixer for three minutes on medium. Stir in cherries, if using. Spread 1/2 of the mixture into a large greased and floured loaf pan. Sprinkle with 1/2 of the topping mixture, then repeat with remaining batter and topping.

Bake at 350 degrees F for 55 minutes to 1 hour or until a wooden pick inserted into center comes out clean. You may need to cover with foil tent for the last 15 minutes so the top does not over-brown. Remove from the pan onto dish towel and cool.

Drizzle with confectioners' sugar glaze, if desired, when cool.

1 slice white bread, torn
1 large egg, lightly beaten
1 tsp minced garlic
1/2 tsp salt
1/2 tsp pepper
1 can cream of mushroom soup
1 can beef broth
3 ounce pkg cream cheese, softened
1 pkg wide egg noodles, cooked

Combine first 7 ingredients and form into meatballs. Brown in skillet and set aside. Add soup, broth and cream cheese to skillet, stirring until blended. Return meatballs to skillet. Cover, reduce heat, and simmer for 10 minutes, stirring occasionally. Serve meatballs and sauce over noodles.

Pour milk into lg. bowl. Add pumpkin, dry pudding mix, and pumpkins pie spice. Beat with wire whisk 2 minutes or until well blended (mixture will be thick) Gently stir in cool whip. Spoon evenly into 10 dessert glasses.

refrigerate 4 hours or until set.

Mix butter,pecans and sugar until well blended; sprinkle evenly over desserts just before serving.

8 oz cool whip French Vanilla, thawed and divided
1 baked 9" square brownie layer, cooled and cut into 1" cubes (5 1/2 cups)
2 cups raspberries

Pour milk into lg. bowl. Add dry pudding mixes. Beat with a wire whisk for 2 minutes or until well blended. Gently stir in 1 cup of cool whip.

Place half of the brownie cubes in 2 qt. serving bowl; top with layers of half each pudding mixture, raspberries and the remaining cool whip. Repeat with all layers.

7 oz puy lentils (or use 2 x 8 ½ oz packs precooked lentils)
½ cup extra-virgin olive oil
2 tablespoons fresh lemon juice, plus more for the avocado
2 teaspoons harissa powder
5½ oz chopped cooked plain (not pickled) beets
3 tablespoons chopped baby kale
1 tablespoon finely chopped fresh tarragon
12 oz smoked salmon
3 halved, de-stoned ripe avocados
6 tablespoons cottage cheese
1 teaspoon poppy seeds
3 tablespoons pomegranate seeds
Toasted seeds (optional)
Salt and black pepper, to taste

If you are using fresh lentils, cook them following the instructions on the package, then drain and cool.
Mix the oil, lemon juice and harissa together to make the dressing.
Season with salt.
Tip the lentils into a bowl and the stir in the dressing.
Stir through the kale and beets.
Divide the salmon between 6 serving dishes.
Top with the lentil mixture.
Top each one with an avocado half.
Squeeze lemon juice over the avocado (this stops it going brown).
Now divide the cottage cheese between each plate.
Add the poppy seeds and pomegranate seeds.
Add some toasted seeds too if using (sunflower or pumpkin seeds, or pine nuts)
Grind over salt and black pepper and serve immediately.

3 Egg Whites (room temperature, about 1/3 cup)
1/4 teaspoon Cream Tarter
1 teaspoon Vanilla
3/4 cup Sugar
1/3 cup Pecans (chopped small, lightly roasted for crust)
1/4 cup Pecans (chopped medium, topping)
1/2 cup Ritz Crackers (chopped in fine pieces, lightly roasted for crust)
12 ounces Whipped Topping (Cool-Whip)

In a preheated oven at 350 place 1/3 cup pecans and Ritz crackers for 5 minutes. You want to lightly roast the nuts and crackers. Watch them carefully so they do not burn. The crackers and nuts should be a light golden in color. Remove from oven when golden and place on paper towel until cool.

Add vanilla and cream of tarter to egg whites and beat until stiff. Slowly add sugar and continue to beat egg whites until very stiff, peaks form and sugar is dissolved. Fold in 1/3 cup pecans and Ritz crackers.

Place in a 10" pie pan that has been lightly sprayed with a non stick baking spray. Spread the meringue to the sides and cover the bottom of pan. The meringue will be about 1" - 1 1/8" thick layer in the pie pan. Hollow out a little hole in the middle of the bottom of the meringue the size of half a dime, this will help with a even baking of the shell. If you have any meringue left make little nest bake the same manor and fill with leftover pudding or fruits.

Place in a preheated oven at 275 degrees for 1 hour. Check shell, the meringue should not scorch, it will turn light tan in color. Turn oven off and let shell dry in the oven for another hour. Remove shell and cool. When shell is cool place the whipped topping in the shell and sprinkle with 1/4 cup broken pecans. Place in refrigerator to completely chill before serving.

Meringue's will whip fluffier and be fuller when prepared at low humidity.


Fried Milk Fish with Spicy Balinese Sauce

Hi, this is the recipe from my beloved country, Indonesia, called "Bandeng Bumbu Bali".

Ingredients:
• 1 kg milkfish (or you can change it with rainbow trout)
• 100 ml water
• 4 tablespoon lime water
• 3 tablespoon soy sauce
• 2 pcs lime leaves
• 1 pcs MSG seasoning enhancer (you can find the best one in your country)
• Salt and sugar
• Vegetable oil

Ingredients for Making the Sauce:
• 5 cloves of garlic
• 3 cm ginger
• 8 cloves of onion
• 25 pcs of cayenne peppers
• Salt

Procedure:
1. Wash and clean the milkfish, remove its scales, and chop it. Before you fry the chopped milkfish, rub the fish with salt or other seasonings you usually use to fry.
2. Let sit for at least 10 minutes, and fry the fish until a golden yellow colour. Drain it.
3. Heat the vegetable oil for sautéing and pour the ingredients for making the sauce. Add the lime leaves to make the sauce sweet-scented. Cook until it’s well done.
4. Add sugar, soy sauce, MSG seasoning enhancer, and water. Cook until the sauce is condensed.
5. Cook the fried milkfish with the condensed sauce until it is mixed well. Remove the heat. Ready to serve.

Duck Dynasty Sweet Potato Pie




3 cups cooked and mashed sweet potatoes (See note)
2 cups sugar
6 eggs
1 1/2 teaspoon ground cinnamon
1/2 teaspoon grated nutmeg
1/2 teaspoon salt
1/4 pound (1 stick) butter, melted
1 (12-ounce) can evaporated milk
1 1/2 teaspoons vanilla extract
1 9-inch unbaked pie crust

Preheat oven to 350 degrees F.
Combine potatoes, sugar, eggs, and spices in a large mixing bowl or food processor. Mix until smooth. Whisk in the butter, milk, and vanilla. Pour into unbaked pie crust and bake at 350 degrees F for about one hour until the top is lightly browned and the filling is set in the middle.
Cool on a wire rack for 30 minutes before cutting. Serve with a dollop of whipped cream if desired. Refrigerate pie if not using immediately. Bring to room temperature before serving.

Notes

Use a potato masher in a large bowl to manually mash the potatoes, or puree in a blender or food processor. Measure after the potatoes are mashed.

Using fresh potatoes is best - scrub and bake at 350 degrees F for about 1 hour until completely soft, then peel and mash. Or use canned potatoes – you will need 2 cans. Drain and mash, then measure and use 3 cups total.

Irish Potato Bites




20 Red Potatoes, small (golf ball size)
½ c Corned Beef
¼ c Cheddar Cheese, shredded
2 hard boiled eggs chopped
1 Tbsp Butter, melted
Salt
Sour cream (optional)

Fill a large pot with water and bring it to a boil.
Add potatoes and boil until they are fork tender.
Preheat oven to 400°F
Once potatoes are cooked and have cooled cut each one in half and cut a small slice off of the rounded end so the potato can sit up.
Scoop out the inside of each potato half saving the potato insides in a bowl.
Add cheese, corned beef, eggs and butter to the bowl with the saved potato insides.
Salt mixture to taste. Also sprinkle some salt over the potato halves.
Scoop mixture into potato halves and then place them on a baking sheet.
Place baking sheet in oven for 10 minutes.
Remove from oven and serve with a dollop of sour cream.


WIP amateur chicken casserole recipe

New cheesy chicken casserole I'm trying out. I'm an aspiring home cook (never taken a culinary class or anything), and this is one of my first concoctions, but be brutally honest. Some measures are estimates, as I like to fly by the seat of my pants; Really keeps you on your toes.

2 c rotini
2 c chicken, cut into bite sizes
clove of garlic, minced
1/4-1/2 cup diced onion
1 c diced mushrooms
olive oil
around 1.5 c heavy cream
around 1.5 c shredded cheddar cheese
tsp paprika
tsp of thyme ****thinking of taking this out
1/2 tsp salt
tsp dried bay leaves
2 tsp rosemary
1 chicken bullion cube
a bit more cheddar

Preheat oven to 400, have a greased dish
Cook rotini until bit under al dente, strain
Cook chicken in a bit of oil until golden
Saute garlic, onions, mushrooms in a bit of oil, just until garlic is good, and onions are clear. Then add cream, cheese, and seasonings/herbs. Heat and stir until cheese is melted and bullion is completely stirred in. Combine chicken, rotini, and sauce in the dish, and sprinkle cheese on top.
Cook in oven 15-30 minutes.

I've made this a few times, and I think it's fairly tasty, but it feels a bit off. After making it tonight, I decided to ask some people who know what they're doing.
Any tips and advice on how to improve on this? Should I leave in the thyme or take it out? Are the proportions right? Is the cook time and temp right, etc?

Cream Cheese Banana Bread




Bread
1 large egg
1/2 cup light brown sugar, packed
1/4 cup granulated sugar
1/4 cup liquid-state coconut oil (canola or vegetable may be substituted)
1/4 cup cup sour cream (lite is okay; or Greek yogurt may be substituted)
2 teaspoons vanilla extract
1 cup mashed ripe bananas (about 2 large bananas)
1 cup all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
pinch salt, optional and to taste

Cream Cheese Filling
1 large egg
4 ounces softened brick-style cream cheese (lite is okay)
1/4 cup granulated sugar
3 tablespoons all-purpose flour

Preheat oven to 350F. Spray one 9x5-inch loaf pan with floured cooking spray, or grease and flour the pan; set aside.
Bread - In a large bowl, add the egg, sugars, coconut oil, sour cream, vanilla, and whisk to combine.
Add the bananas and stir to incorporate.
Add 1 cup flour, baking powder, baking soda, optional salt, and fold with spatula or stir gently with a spoon until just combined; don't overmix; set aside.
Turn about two-thirds of the batter out into the prepared pan, smoothing the top lightly with a spatula and pushing it into corners and sides as necessary; set aside.
Cream Cheese Filling - In a large bowl, add all ingredients and whisk to combine. Alternatively, mix with a hand mixer.
Evenly pour filling mixture over the bread, smoothing the top lightly with a spatula and pushing it into corners and sides as necessary.
Top with remaining batter, smoothing the top very lightly with a spatula as to not disturb cream cheese layer and pushing batter into corners and sides as necessary.
Bake for about 48 to 50 minutes or until the top is domed, golden, and the center is set, and a toothpick inserted in the center comes out clean, or with a few moist crumbs, but no batter. Note this is tricky because the cream cheese never gets totally solid so the toothpick test isn't the most accurate. Tip - Tent the pan with a sheet of foil draped over it at the 30 minute-mark if you feel the tops and sides will become too browned before center cooks through. Baking times will vary based on moisture content of bananas, cream cheese, climate, and oven variances. Bake until done; watch your bread, not the clock.
Allow bread to cool in pan for about 15 minutes before turning out on a wire rack to cool completely before slicing and serving. Optionally, serve bread with Honey Butter, Cinnamon-Sugar Butter, Blueberry Butter, Strawberry Butter, or Vanilla Browned Butter Glaze. Bread will keep airtight at room temperature for up to 1 week, or in the freezer for up to 6 months.


Twix Carmelitas




3/4 cup butter, melted
3/4 cup brown sugar
pinch of salt
3/4 cup of flour
1 cup old fashioned oats
1 teaspoon baking soda
5 milk chocolate bars
24 caramels
1/4 cup evaporated milk
10 twix minis, chopped

In a glass bowl, unwrap the caramels and add the evaporated milk. Melt in the microwave in 30 second intervals, stirring between. Set aside.
Heat the oven to 350.
In a bowl, combine the melted butter, brown sugar, flour, oats, salt, and baking soda. Stir to combine and press 1/3 into an 8x9" pan. Bake for 8-10 minutes and remove from the oven.
Lay the chocolate down, top with caramel and twix and sprinkle the remaining crust mixture on top. Bake an additional 15 minutes and set aside to cool before cutting. Or serve warm, which is our favorite but more messy.

Banana Blondie Cheesecake




Cheesecake
Nonstick cooking spray
3 (8-ounce) packages cream cheese, at room temperature
1 cup granulated sugar
3 large eggs
2 teaspoons vanilla extract
3/4 cup sour cream
1/2 cup whole milk
3 tablespoons all-purpose flour

Blondie
1/2 cup salted butter, melted (1 stick)
1 cup packed light brown sugar
1 large egg
1½ teaspoons vanilla extract
1/4 teaspoon kosher salt
1 cup all-purpose flour
1/2 cup mashed banana (about 2 small bananas)

Assembly
1¼ cups caramel sauce, store-bought or homemade, divided
3 teaspoons flaked sea salt, divided

For the Cheesecake:

1. Preheat the oven to 350°. Coat a 9-inch springform pan with the cooking spray.

2. In the bowl of a stand mixer fitted with the paddle attachment, mix the cream cheese and granulated sugar on medium-low speed for 1 to 2 minutes until smooth. With the mixer still on medium-low speed, add the eggs and vanilla extract, mixing until smooth, scraping the sides and the bottom of the bowl as necessary.

3. Turn the speed to low and slowly mix in the sour cream and milk until incorporated. Add the flour and mix to combine.

4. Pour the cheesecake mixture into the prepared pan. Bake for 1 hour or until the cheesecake is almost set. The center will still be slightly loose. Turn the oven off and allow the cheesecake to remain in the oven for 2 more hours without opening the door.

5. After the two hours are up, remove the cheesecake from the oven, then cover and refrigerate it for 4 hours or overnight.

For the Blondie:

6. Preheat the oven to 350°. Coat a 9-inch round cake pan with the cooking spray. Line the bottom of the pan with a round of parchment paper and coat the parchment with cooking spray.

7. In the bowl of a stand mixer fitted with the paddle attachment, mix the melted butter and brown sugar on medium speed until combined. Add the egg and vanilla extract and mix on medium speed until smooth. Turn the mixer speed to low and add in the salt and flour until just combined. Mix in the banana until incorporated.

8. Spread the batter in the prepared pan. Bake for 25 minutes or until a toothpick inserted 3 inches from the edge comes out clean.

9. Allow the blondie to cool in the pan.

To Assemble the Cheesecake:

10. Remove the blondie from the pan and transfer it to a cake plate. Spread 3/4 cup of the caramel sauce over the blondie. Sprinkle the caramel with 1 teaspoon of the flaked sea salt.

11. Carefully remove the cheesecake from the pan by sliding a large spatula under the cheesecake and placing it onto the caramel-coated blondie. Spread the remaining 3/4 cup of the caramel sauce over the cheesecake and sprinkle with the remaining 2 teaspoons of sea salt.

12. Serve immediately or cover and refrigerate until you're ready to serve.

1 cup butter or margarine, melted
3/4 cup lemon juice
3/4 cup Worcestershire sauce
1 tablespoon salt
1 tablespoon coarsely ground pepper
1 teaspoon dried rosemary
1/8 teaspoon ground red pepper
1 tablespoon hot sauce
3 garlic cloves, minced
2 1/2 pounds unpeeled large or jumbo shrimp
2 lemons, thinly sliced
1 medium onion, thinly sliced
Fresh rosemary sprigs

Procedure

Combine first 9 ingredients in a small bowl; set aside.

Rinse shrimp with cold water; drain well. Layer shrimp, lemon slices, and onionslices in an ungreased 13 x 9 x 2-inch baking dish.

Pour butter mixture over shrimp. Bake uncovered, at 400 degrees F for 20 to 25 minutes or until shrimp turn pink, basting occasionally with pan juices.

Garnish with fresh rosemary sprigs.

Mini Eclaires With Peanut Cream Filling




For the dough:

16 oz water
9 oz butter
2 oz caster sugar
12 oz flour
6 eggs
a pinch of salt

For the glaze:

4 oz milk chocolate
2 oz butter
1 tablespoon water
2 tbsp vegetable oil
2 tbsp cocoa powder

For the cream:

1 Dr Oetker chocolate pudding
handful of unsalted peanuts

Preheat the oven at 425 F.
Put water in a large pan, add butter and warm until butter is melted.
Add caster sugar, a pinch of salt and stir until the sugar melts.
When the sugar has melted, pull the pan from the heat and add the flour all at once and mix as quickly and thoroughly with a whisk, until the flour is completely incorporated.
Let the dough cool down to reach room temperature, then gradually add the eggs, one at a time, stirring after each egg until completely incorporated.
Line a baking sheet with baking/wax paper and fill a pastry bag fitted with a large plain tip with the dough, then pipe out oblong shapes on the baking sheet.
Bake for 10 minutes at 425 F then reduce temperature to 350 F. Continue baking until golden brown, 20-25 minutes more.
Turn off oven and slightly open the door but don’t take eclairs out, allow them to dry in oven about 15 minutes. Transfer to a wire rack to cool slightly.
For the cream: Ground peanuts until you almost get a powder. Make the pudding as instructed on the package then add the finely grounded peanuts.
For glaze, take a saucepan, break chocolate pieces in, add butter, oil and water and bring to a boil. Keep boiling until you get an homogeneous cream. Then add 2 tablespoons of cocoa powder and mix with a whisk to make sure no cocoa powder lumps are left. Allow to cool a little and when it’s thick enough, dip half the eclairs in, lightly shaking the excess. Leave to harden.
Then cut eclairs through the middle, lengthwise, fill half the eclairs with the cream recipe above and close.

Buca di Beppo Chicken Marsala




Olive oil
4 thin chicken breast cutlets
2 ounces low salt bacon, cut into 1/4-inch pieces
1/2 cup all-purpose flour
Coarse salt
Fresh ground pepper
1/2 cup dry Buca di Beppo Marsala wine (not available to the public)
2 to 4 tablespoons heavy cream
Minced fresh flat-leaf parsley

Coat a large skillet lightly with olive oil and set over medium-high heat. Add bacon and cook just until crisp and lightly browned. Remove with a slotted spoon; set aside. Leave fat in pan.

Put flour on a plate. Pat cutlets dry. Season lightly with salt and pepper, then dredge in flour.

Heat pan with bacon fat over medium-high heat. Add a touch more olive oil if necessary to make approximately 2 tablespoons. When fat is hot, shake excess flour off cutlets and place in pan. Sauté, turning once until browned on both sides. Thin cutlets should only take a few minutes per side. Remove cutlets. Pour excess fat from pan. With pan over medium-high heat, add the Marsala and scrape up the browned bits from the bottom of the pan. Cook Marsala until it is reduced by one quarter.

Stir in cream and simmer until you get a nicely thickened sauce. Return the chicken and bacon to the pan and turn the cutlets to coat and reheat for a minute. Serve with the sauce over the top, with a sprinkling of parsley.

Papa Murphy's Mediterranean Herb Chicken Pizza




1 Pillsbury thin crust pizza dough
1 chicken breast, sliced into small pieces
salt and pepper
6 Tbsp pure olive oil, separated
2 Tbsp minced garlic
1 1/2 c. mozzarella cheese, grated
1/2 c. feta cheese crumbles
1/4 - 1/2 c. sundried tomatoes
1 c. spinach leaves

Preheat the oven to 400°. Heat a saute pan over medium heat with 3 Tbsp oil. Add chicken and season with salt and pepper; cook through and set aside.
Grease a cookie sheet with nonstick cooking spray. Roll out pizza dough on the cookie sheet and flatten as needed to make an even rectangular shape.
Brush the remaining 3 Tbsp oil onto the dough. Then spread minced garlic over the oil.
Sprinkle mozzarella cheese over the garlic; add spinach leaves, cooked chicken, sundried tomatoes, then feta cheese crumbles.
Bake 12-14 minutes, or until crust turns a nice golden brown. Cut into 12 slices and serve.

2 tablespoons finely chopped fresh parsley
1/2 teaspoon salt
1/2 teaspoon crushed red pepper

4 (6-inch) pitas, halved

1/2 cup chopped plum tomato
1/4 cup prechopped red onion

1. Combine first 6 ingredients in a large bowl; stir in 1 tablespoon yogurt, 1 tablespoon juice, and 2 garlic cloves. Add chicken; toss to coat. Heat oil in a large nonstick skillet over medium-high heat. Add chicken mixture to pan; sauté 6 minutes or until browned and done, stirring frequently.

2. While chicken cooks, combine remaining 1/4 cup yogurt, remaining 1 tablespoon lemon juice, remaining 1 garlic clove, and tahini, stirring well. Spread 1 1/2 teaspoons tahini mixture inside each pita half; divide chicken evenly among pita halves. Fill each pita half with 1 tablespoon cucumber, 1 tablespoon tomato, and 1 1/2 teaspoons onion.

Chicago-Style Italian Roast Beef




3 teaspoons garlic powder
3 teaspoons dried oregano
3 teaspoons Italian seasoning
1 teaspoon pepper
1 3-pound sirloin roast, fat trimmed (mine already was trimmed)
2 tablespoons oil, divided
1 onion, chopped fine (not!)
3 garlic cloves, minced
1 tablespoon flour
2 cups low-sodium beef broth (oops, mine is regular – hope it isn’t too salty!)
2 cups low-sodium chicken broth (again, regular!)
1 1/2 cups water
1 teaspoon red pepper flakes (while I heart red pepper flakes, Tony doesn’t like them, so I just put a small pinch in)
1 teaspoon salt

Heat your oven to 300 degrees. Combine garlic powder, Italian seasoning, oregano and pepper in a small bowl.

Pat roast dry with a paper towel – make sure its good and dry. Heat 1 tablespoon of the oil in a dutch oven to medium-high heat and sear the meat on all the sides. It will take about 10 minutes total.

Add onion (you know the drill – not!) to fat in skillet and cook over medium heat until soft, about 5 minutes. Stir in garlic, flour, and 1 teaspooon of the spice mixture until fragrant, about 1 minute. Now stir in all the liquids and using a wooden spoon, scrape up all the bits on the bottom of the pan. Bring to a boil, then pour into roasting pan.

Stir remaining oil, pepper flakes, and salt to remaining spice mixture. Rub mixture all over the meat and roast until meat registers 125 degrees. Remove and tent with foil for 20 minutes. Now the reason for adding oil to the rub mixture is to prevent the herbs from burning while in the oven.

Pour the juice from the roasting pan through a strainer and serve along side sliced roast beef.

Strawberry Cheesecake French Toast Casserole




12 slices day old Challah, French, Italian or any other bread good for French Toast
12 oz light cream cheese
2/3 cup granulated sugar
1 egg
1 tsp lemon juice
10 eggs
3/4 cup milk
3/4 cup half-and-half
1/3 cup maple syrup
2 tsp vanilla extract
1 tsp cinnamon
1/2 tsp ground nutmeg
2 cups sliced strawberries

Strawberry-Maple Syrup

1/2 cup strawberry jam
1/2 cup maple syrup

Lightly grease a 9 x 13 baking dish.
Beat cream cheese until light and fluffy.
Beat in sugar until thoroughly combined.
Beat in 1 egg and lemon juice until thoroughly combined. Set aside.
Whisk together 10 eggs, milk, half-and-half, maple syrup, vanilla extract, cinnamon and nutmeg. Set aside.
Schmear bread with cream cheese mixture. Layer on sliced strawberries. Place another slice of bread on top to create a sandwich. Repeat for all slices of bread.
Cut into cubes and place approximately two-thirds of the sandwich cubes into baking dish.
Top with remaining strawberries and drizzle remaining cream cheese mixture over the top.
Place remaining sandwich cubes on top.
Finally, pour egg mixture over the top.
Press down lightly and cover with plastic wrap.
Refrigerate over night.
Remove from refrigerator and let rest while you preheat the oven to 350 degrees.
Cover with foil and bake for 30 minutes.
Remove foil and bake for another 25-35 minutes or until the surface is golden and the center is set.
Serve with maple syrup or additional fresh strawberries and whipped cream.

Strawberry-Maple Syrup

Combine equal parts strawberry jam (or jelly or preserves) and maple syrup. Heat on medium-high heat in microwave in 30 second intervals, stirring in between until the jam has dissolved into the syrup.

• 2 cups self-rising flour
• 4 tablespoons butter
• 1 cup buttermilk
• 4 ounces thinly sliced cooked country ham

Heat oven to 425°F

1. Sift flour into a large bowl; mix in butter until the mixture has the consistency of cornmeal. Using a wooden spoon, stir in buttermilk to form a dough. Transfer dough to a floured work surface; knead briefly until smooth.
2. Roll dough into a 1/4" thick rectangle. Cut dough into twelve 4"x3" rectangles; transfer to a baking sheet. Bake until golden brown, about 15-20 minutes. Cool slightly.

To serve, slice biscuits and stuff with ham.

4 ripe avocados, seeded, peeled and diced
2 ripe red tomatoes, diced
2 jalapeno peppers, seeded and finely diced
½ 19 oz. can of black beans, drained and rinsed
4 green onions, thinly sliced
2 limes, juiced
½ cup of sharp aged cheddar cheese, grated
1 tsp. garlic salt

Place two of the avocados in a bowl. Add the tomatoes, jalapeno peppers, garlic salt and the lime juice. Mash lightly with a potato masher. Add the beans, onions and the cheese along with the two remaining avocados. Stir to combine. Chill until ready to use.

2 cups milk chocolate chips
1 cup dark chocolate chips
1 (14-ounce) can sweetened condensed milk
2 tablespoons butter
15 caramels, unwrapped
1 tablespoon milk
16 whole pecans

Line an 8 x 8 baking pan with parchment paper so it comes up the sides a bit.
In a large microwave-safe bowl, mix the chocolate chips, condensed milk, and butter. In a separate microwave-safe bowl, combine the caramels and milk. Set aside the bowl with the caramels.
Microwave the chocolate chip mixture at 50% power for 30 seconds. Stir, and continue to repeat until the ingredients are melted and combined. This should take about 3-5 minutes. Pour the chocolate mixture into the prepared pan and smooth it out using a spatula.
Microwave the caramel mixture at 50% power for 30 seconds. Stir, and continue to repeat. This should take about 1-2 minutes. Immediately pour the melted caramel over the fudge and swirl it around using a fork or knife.
Press the whole pecans into the fudge in rows of 4.
Let set in the refrigerator for 2 hours. Store the fudge in the refrigerator.

Makes 16 pieces

2/3 cup carrot juice
1/3 cup pineapple juice
3 tablespoons sugar
2 tablespoons honey
1 tablespoon ginger juice (such as The Ginger People)

Dash of ground cloves
2 (1/4-ounce) packets unflavored gelatin
3/4 cup bourbon
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
Cooking spray

Vermouth cream layer:
2/3 cup evaporated milk
1/3 cup dry vermouth
2 1/2 tablespoons sugar
1 tablespoon fresh lemon juice
1 tablespoon fresh orange juice
1/2 teaspoon vanilla extract
1 (1/4-ounce) packet unflavored gelatin

1. To prepare carrot layer, combine carrot and pineapple juices, 3 tablespoons sugar, honey, ginger juice, cinnamon, and cloves in a saucepan over medium-low heat. Sprinkle 2 packets gelatin over mixture; let stand 1 minute. Increase heat to medium; cook, stirring constantly, until gelatin and sugar dissolve.

2. Remove pan from heat; stir in bourbon, 1/2 teaspoon vanilla, and almond extract. Pour into an 11 x 7-inch glass baking dish lightly coated with cooking spray. Place dish in refrigerator; refrigerate 45 minutes.

3. To prepare cream layer, combine evaporated milk, vermouth, 2 1/2 tablespoons sugar, lemon and orange juices, and 1/2 teaspoon vanilla in a saucepan over medium-low heat; sprinkle 1 packet gelatin over mixture. Increase heat to medium; cook until sugar and gelatin dissolve, stirring constantly. Cool 3 minutes. Gently pour vermouth mixture evenly over carrot mixture in dish. Refrigerate 4 hours or until set. Dip bottom of dish in warm water. Using a sharp knife, cut gelatin into 32 equal cubes; carefully remove from dish using a spatula.

1/2 cup [125 mL] chicken broth
1/4 cup + 1 tablespoons [75 g] grated Parmesan cheese



Preheat oven to 425°F [220°C].
Peel, seed then cut butternut squash into 1-inch [2.5-cm] chunks.
Toss butternut squash chunks with 2 teaspoons [10 mL] of olive oil into a 15 x 10 x 3/4-inch [38 x 25 x 2-cm] baking pan.
Bake for 20 minutes.
Toss in onion chunks, pepper and remaining oil until well coated.
Spread into an een layer over bottom of pan.
Bake into preheated oven for approximately 20 minutes, until vegetables are tender.
Drizzle with chicken broth; mix lightly.
Sprinkle all over with 1/4 cup [60 g] of grated Parmesan cheese.
Toss to coat.
Transfer into a serving bowl, sprinkle with remaining cheese, and serve.

2 cups [500 mL] any short pasta noodles
1 cup [250 mL] small cauliflower flowerets
1 cup [250 mL] small broccoli flowerets
1/4 cup [60 g] butter
1/4 cup [35 g] flour
3 cups [750 mL] cold milk
3/4 cup [175 g] grated Swiss cheese
3/4 cup [175 g] grated Old Cheddar cheese
1 cup [250 mL] ham dices
1/2 cup [125 mL] plain breadcrumbs
1/3 cup [75 g] grated Parmesan cheese
Salt and pepper, to taste



Preheat oven to 375°F [190°C].
Into a casserole filled with salted boiling water, cook pasta noodles until 'al dente', adding cauliflower and broccoli flowerets for the last 3 minutes of boiling time.
Drain and reserve.
Into a non-stick casserole, melt butter over medium heat.
Stir in flour using a wooden spoon.
Cook, stirring over medium heat for 1 minute making sure not to color the flour.
Slowly pour in cold milk stirring.
Cook, whipping over medium heat, until just starting to boil.
Stir in grated Swiss and Old Cheddar cheeses, until completely melted.
Mix in reserved drained pasta noodles and vegetables along with ham dices.
Salt, pepper, and mix well.
Evenly spoon mixture into a 13 x 9-inch [33 x 23-cm] baking dish.
Into a bowl, mix together breadcrumbs and grated Parmesan cheese.
Sprinkle all over pasta noodles mixture.
Brown into preheated oven, for approximately 20 to 25 minutes.

8 baked puff pastry shells
2 1/2 cups [625 mL] milk
2 [1-ounce / 31-g each] packs lemon dill sauce mix
1 cup [250 mL] cooked ham dices
1 cup [250 mL] boiled, drained cooled fresh small green peas



Preheat oven to 350°F [180°C].
Remove tops of pastry shells; empty the inside if needed.
Arrange pastry shells and tops onto a baking sheet.
Bake into preheated oven for 10 minutes.
Pour milk and lemon dill sauce mix into a casserole.
Whipping, bring mixture to a boil over medium heat.
Leave to simmer for 3 minutes over low heat whipping from time to time.
Mix in ham dices and green peas.
Heat for 2 to 3 minutes.
Evenly spoon into pastry shells, top with pastry tops, and serve.

Grand Lux Cafe Double Stuffed Potato Spring Rolls




1 pound russet potatoes, peeled, and chopped into large chunks
1/4 - 1/2 cup heavy cream
2 tablespoons butter
1/2 teaspoon salt
1 package spring roll wrappers (you can use egg roll wrappers)
4 ounces applewood smoked bacon
1/2 cup cheddar cheese, shredded
1/4 cup sour cream

Mashed potatoes

Place peeled and cut potatoes into a saucepan, and cover with water. Bring saucepan to a boil, and them reduce to a simmer, simmer potatoes for 15 - 20 minutes, or until potatoes are fork tender. When potatoes are tender, drain off water, and mashed potatoes with a hand masher, add butter, and heavy cream, blend until smooth. Season to taste with salt and pepper.

Chopped bunch of green onions, chop the greens into small 1/4 inch thick slices. Add 1/4 cup of the sliced green onions to the mashed potatoes and resume the remaining green onion slices for the garnish. Slice bacon into matchstick slices, and cook bacon until the bacon is browned and crispy.

To make spring rolls:

I like using fresh spring roll wrappers, I found the ones that need to be re-hydrated could be difficult to work with. Add about 1 1/2 tablespoons of mashed potatoes to the spring roll. Roll the spring roll, and secure the ends with a bit of water. Repeat until you have either no more mashed potatoes, or no more spring roll wrappers.

Cook spring rolls:

In a deep pan, add enough oil to cover the bottom 4 inches of the pan with cooking oil. Heat oil until it is about 350 degrees. Add a few spring rolls at a time to the oil, cook for about 1 to 2 minutes on each side. Drain spring rolls on papertowels.

Assemble Grand Lux Cafe Double Stuffed Potato Spring Rolls:

Cut spring rolls diagonally in half. Place spring rolls on a serving plate, garnish with cheese, cooked bacon, green onion tops, and serve with sour cream.

1 Rotisserie Chicken or Fried Chicken
2 sheet Puff Pastry Dough
4-5 Potatoes
4-5 Carrots
2 cup Frozen Peas
2 can Cream of Chicken Soup
15 oz Milk
1 tsp Sugar
Salt and Pepper (to taste)

Pick meat from bones and cut into bite size pieces.
Peel and cut potatoes into 1/2" cubes.
Peel and slice carrots into 1/4" slices.
Remove pastry from box and thaw at room temperature.
Boil potatoes and carrots in water until almost tender.
Drain liquid, add frozen peas and set aside.
In a large pot, add soup, milk, and sugar. Mix well and simmer.
Preheat oven to 400.
Add chicken and vegetables to the sauce and simmer until warm, stirring frequently.
Spoon mixture into each pie tin, Do not over fill.
Cut pastry into 6" circles and then roll slightly to make sure crust will overlap rim.
Moisten edges of pastry and cover each tin pressing edges to the rim.
Bake at 400 18 minutes.

Arby's Ham and Cheddar Melt




Deli ham, thinly sliced (I like black forest ham-- but any kind will work)
Arby's Sauce (see below)
Onion buns
For the cheddar cheese sauce:
2 Tbsp. butter
2 Tbsp. flour
3/4 c. milk (or more if needed)
1-2 c. cheddar cheese (shredded by hand, not pre-packaged)
salt & pepper, to taste

In a medium-sized skillet over medium heat, cook deli ham until heated through (spray the pan with cooking spray to reduce sticking).
Spread Arby's sauce on one side of each bun and place ham on the bun.
Spoon on cheddar cheese sauce (see below) and serve.
For the cheese sauce:
Melt butter in a small sauce pan over medium heat. Whisk in the flour (whisking constantly) and cook for about 1 minute forming a roux.
SLOWLY whisk in milk until reaching desired consistency.
Remove from heat and stir in cheese.
Add salt & pepper, to taste.

Arby's Sauce

1 cup Water
1/2 cup Ketchup
2 tablespoon Brown Sugar
1/4 cup White Vinegar
3/4 teaspoon Onion Powder
3/4 teaspoon Garlic Powder
1/2 teaspoon Paprika
3 tablespoon Worcestershire Sauce (Lea and Perrins)
1/8 teaspoon Salt
1/8 teaspoon Cayenne Pepper
Corn Starch Mixture (thickening mixture)
1 tablespoon Corn Starch
2 tablespoon Water
Mix well set aside.

Place all sauce ingredients in a blender and blend on high speed for 15 - 20 seconds. Pour ingredients into a small saucepan, heat on medium low. Simmer gently for twenty minutes, stirring several times. After twenty minutes add corn starch mixture, stir well. When sauce begins to thickens let simmer on a very low temperature for ten minutes. Remove from heat and let cool.

Mixture will be similar in thickness to steak sauce. Store in a covered container in the refrigerator. This sauce is a nice change on hamburgers or pastrami, and great dipping sauce for hot wings.

for a single serving

For grits

8oz grits follow package cooking instructions

2oz cream cheese

1oz smoked gouda

1tsp lemon juice

1tsp hot sauce of choice

1T butter

pinch salt

pinch white pepper

For roasted tomatoes

2 Roma tomatoes quartered

1tsp minced garlic

1Tbsp minced shallot

1tsp chopped thyme

1tsp chopped rosemary

2Tbsp olive oil

pinch salt

pinch pepper

Toss all together, lay on sheet pan slowly roast in a 250 degree until tomatoes have lost their moisture about 2 hours

For the braised fennel

1 bulb fennel

2 Tbsp butter

pinch salt

pinch white pepper

water to cover

Julienne fennel leaving the ends attached place in shallow sauté pan and cover with water add butter Salt and pepper and simmer until fennel is al dente remove fennel and cool . reserve broth add shrimp shells and 1 cup additional water slowly simmer for 30 min.



Sautéed vegetables

1/4 sweet Vidalia onion

3 cloves garlic slivered

1/2 roasted pimento pepper

1Tbsp olive oil

julienne onion and peppers, sauté with slivered garlic until soft, no color

3 U10 head on shrimp



For sauce

1Tbsp shrimp fennel stock

1tsp lemon Juice

2Tbsp white wine

1tsp Hot sauce

1Tbsp butter



For garnish

1Tbsp crushed corn nuts

1Tbsp fried parsley



Cook grits with package instructions, at end of cooking add cheese, lemon juice, hot sauce and butter

Heat olive oil in sauté pan add shrimp and sear on one side about 1 minuet, carefully flip shrimp keeping the heads attached, add tomatoes, fennel, onion, garlic and pimentos. deglaze with white wine, fennel stock, and lemon juice, Add hot sauce and mount with butter. reduce to desired consistency. season with salt and pepper.

Place grits on plate spoon vegetables over the top. then place shrimp on top of vegetables. spoon over sauce and garnish with corn nuts and fried parsley.

Vanilla Wafer Cookies




1/2 cup butter, softened
1 cup white sugar
1 egg
1 tablespoon vanilla extract
1 1/3 cups all-purpose flour
3/4 teaspoon baking powder
1/4 teaspoon salt

Preheat oven to 350 degrees F (175 degrees C).
Beat butter and sugar in a mixing bowl with an electric mixer until light and fluffy; beat in egg and vanilla extract. Combine flour, baking powder, and salt in a bowl and mix the dry ingredients thoroughly into butter mixture. Drop cookies about 2 inches apart, 1 teaspoon at a time, onto ungreased baking sheets.
Bake in the preheated oven until edges of cookies are golden brown, 12 to 15 minutes. Cool cookies on wire racks.

Note
I am not much of a cookie lover, but these are so chewy after they cool a bit when first taken out of the oven.


Totino's Pizza Rolls




1 tablespoon olive oil
½ pound Italian sausage
3 cloves garlic, minced
½ large green pepper, diced fine
1 small onion, diced fine
4 ounces mushrooms, diced
½ cup diced pepperoni
2 cups marinara sauce
1 cup shredded mozzarella cheese
Cooking spray
1 package wonton wrappers (about 48 wraps)

In a medium skillet, heat olive oil over medium heat until hot. Add in the Italian sausage, garlic, green pepper, and onion. Cook until softened, about 6 minutes.
Add in the mushrooms and pepperoni, and cook until the mushrooms have just released their water, about 2 minutes. Stir in the marinara, reduce heat, and simmer until thickened, about 10 minutes.
Remove from heat, stir in the mozzarella, and set aside. Preheat oven to 375°.
Spray a baking sheet with cooking spray. Arrange three wonton wrappers along the bottom edge of the sheet. Spoon about 1 tablespoon of filling into the middle of each wrapper. Using a finger dipped in water, run along the edge of each wrapper and then fold wrapper in half and press down to seal.
Continue until baking sheet is filled with pizza rolls (spaced about 1? apart). Spray tops with cooking spray and bake in preheated oven for 12-15 minutes, or until rolls are golden and crispy. Repeat process with remaining wraps and filling.
If pizza rolls are greasy, blot them with paper towels before serving. Let cool 5-10 minutes before serving (filling will be hot).

Notes
Veggie-option: leave out the Italian sausage and the pepperoni when making the filling. You may need to add more olive oil to keep the mushroom mixture form sticking while cooking.

Applebee's Chicken Quesadillas Grande




2 slices cooked crispy bacon (sliced into ½” inch pieces)
2 (8 inch) flour tortillas
softened butter (for lightly spreading on the tortillas)
2 tablespoons Pico de Gallo
1/2 cup shredded Colby-jack cheese
2 cooked boneless skinless chicken breasts (heated and cut into strips)
Optional Condiments-
sour cream
guacamole
salsa

Step 1: Heat a large non-stick fry pan over medium heat. Spread butter lightly on one side of the flour tortilla shell. Place butter side down into the pan.
Step 2: Sprinkle half of the cheese evenly over the entire tortilla. On half of the tortilla sprinkle half of the bacon, half of the chicken pieces, and 1 tablespoon of Pico de Gallo. Cook until the cheese has melted and the bottom has browned. Using a spatula fold the tortilla in half and press down the edges gently.
Step 3: Remove from the pan. Repeat with remaining tortilla. Slice each quesadilla into thee triangles. Serve with sour cream, guacamole, and salsa.

Makes 2 Servings

Beef and Bean Casserole

1 lb. ground round
2 onions, finely chopped
3 cloves garlic, minced
1 lb. black beans, mashed
1 Tbs. olive oil
2 Tbs. canned chopped green chili peppers
1 Tbs. chili powder
1-1/2 tsp. ground cumin
2 cups tomato sauce
1 lb. Italian-style stewed tomatoes, very coarsely chopped
12 corn tortillas
3/4 cup shredded cheddar cheese

Preheat oven to 350F. Saute meat, half the onion and 1 clove of garlic in a flameproof casserole over medium high heat 5 minutes, stirring frequently to break up meat, until meat loses its pink color. Drain excess fat. Stir in mashed black beans. Transfer mixture to a bowl and set aside. Wipe casserole clean. Heat the oil in same casserole over medium heat.

Saute remaining onion 3 minutes until softened. Add remaining garlic, chili peppers, chili powder and cumin. Saute 30 seconds. Add tomato sauce and tomatoes with juice. Bring to a boil. Reduce heat to low, simmer partially covered 20 minutes or until sauce is slightly thickened.

Transfer all but 1/2 cup sauce into the meat and bean mixture. Mix thoroughly. Transfer the remaining sauce to a bowl and keep warm. Dip half the tortillas, one at a time, in the hot tomato sauce until softened. Arrange tortillas in the bottom of the casserole. Spread meat and bean mixture evenly over tortillas. Repeat procedure with remaining tortillas, arranging over meat and bean mixture. Sprinkle with the shredded cheese. Bake 35 minutes or until bubbly and cheese is melted. Let stand 5 minutes before serving.

2 thin slices reduced-fat Swiss cheese (about 2 oz)
4 chicken cutlets (4 oz each), 1/4 inch thick
2 tablespoons all-purpose flour
1/2 teaspoon black pepper
1 tablespoon unsalted butter or margarine
1/2 cup reduced-sodium chicken broth
1/4 cup dry white wine or reduced-sodium chicken broth
1/4 teaspoon dried oregano
Chopped fresh parsley and fresh oregano sprigs for garnish

1. Cut each cheese slice in half; place 1 half on top of each cutlet. Starting with a short end, tightly roll up cutlets, jelly-roll style. Tie securely with string.

2. On waxed paper, combine flour and pepper. Mix well. Add cutlets; toss gently to coat.

3. In a large nonstick skillet, melt butter over medium heat. Add cutlets; cook, turning frequently, until golden, about 3 minutes.

4. Add broth, wine, and dried oregano to skillet. Increase to medium-low; simmer until chicken is cooked through and sauce is slightly thickened, about 10 to 12 minutes. Place on a serving plate; remove string. Garnish with parsley and oregano sprigs.

Vegetable Lasagna Rolls

1 tablespoon extra-virgin olive oil
1 medium yellow onion, chopped
2 cloves garlic, minced
1 small zucchini, finely diced
1 small yellow squash, finely diced
Salt and freshly ground black pepper
15 ounces whole milk ricotta
1/2 cup Parmesan cheese, finely grated
1 large egg, beaten
3 tablespoons fresh flat-leaf parsley leaves, chopped

Tomato Sauce
28 ounces canned whole peeled tomatoes (I prefer San Marzano)
1 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup fresh basil leaves, chopped

Lasagna Rolls
1 pound lasagna noodles, cooked according to package instructions and drained
1½ cups mozzarella cheese, grated
1/4 cup Parmesan cheese, grated

For the Filling:

Heat the oil in a large skillet over medium heat. Add the onions and garlic and cook until softened, about 4 minutes. Add the zucchini, yellow squash, salt and pepper, and cook, stirring frequently, until the squash softens but is not mushy, about 4 minutes. Pour the mixture into a medium bowl and let cool.

Add the ricotta, Parmesan, egg, parsley, 1/2 teaspoon salt and 1/4 teaspoon pepper to the cooled vegetables. Stir to combine.

For the Tomato Sauce:

In a food processor, pulse the tomatoes with their juices until they are coarsely ground or chop the tomatoes by hand. Transfer them to a bowl, add the salt and pepper, then stir in the basil.

For the Lasagna Rolls:

Preheat the oven to 375°. Grease a 9-inch x 13-inch baking dish.

Spread about 1 cup of the tomato sauce on the bottom of the baking dish.

To create the rolls, spread each lasagna noodle with a layer of the ricotta mixture. Starting at one end, roll up the noodle. Repeat with the remaining lasagna noodles and ricotta mixture.

I like to set up an assembly line by spreading out all of the noodles on a sheet pan so I can do this quickly. Another tip to make it faster and less messy is to put the ricotta mixture in a large resealable plastic bag. Snip a large hole out of one corner of the bag with scissors and use the bag to pipe the mixture onto each noodle.

Place each lasagna roll, seam-side down, into the baking dish.

Spread the remaining sauce over the lasagna rolls. Top with the mozzarella cheese and remaining 1/4 cup Parmesan cheese. Bake until the sauce is bubbling and the cheese is melted, about 35 to 40 minutes. Let stand 10 minutes before serving.
