Hi Gang! I'm probably not posting this in the right spot, I couldn't find the 'new member introductions' topic (I won't be offended if the moderator moves it to the right place)

I've been stopping in here about once a week for a few years now and decided to finally do an introductory post. I have gotten many good ideas from this site for menus, tips, etc... I am recently disabled and decided to take up cooking as one of my hobbies (hey, a person has to eat, right). I hope to be able to contribute to the community at some point, but right now I am just a newbie.

Some people eat to live, I live to eat.

Just a few months after the actor scored positive marks for his performance as race-barrier breaking baseball player Jackie Robinson, the young actor has been cast as James Brown in the upcoming biopic about the Godfather of Soul, according to Variety.

The Mystery Begins and Scooby-Doo! Curse of the Lake Monster, but both were obviously made for TV. Cartoon Network has produced and aired three different animated series, What’s New, Scooby-Doo?, Shaggy & Scooby-Doo Get a Clue! and Scooby-Doo! Mystery Incorporated, which ended this past April. This last one is probably the second best animated series following the original Hanna Barbera series, as it’s a more serious affair with horror film homages included.



Join me in singing along to the original series’ theme song, which features the most hilarious pronunciation of the word “sliver” I’ve ever heard. Boseman has proven himself to be a talented actor, but I'm curious about his vocal range. Brown had a unique, instantly recognizable voice that would certainly be hard to emulate. It wouldn't be shocked if Taylor ultimately decides to dub Brown's singing over Boseman's performance, but I think we would all prefer to see the full performance.

The first film, which to me was one of the least inspired TV-to-movie adaptations I’ve ever seen, grossed around $275 million globally, while the more enjoyable and on point second film earned about $180 million worldwide. This is probably going to be a cheaper production than either of those movies, so I wonder if it will be nearly as successful.

Prairie Sushi

1 8-ounce package cream cheese

1 tablespoon fresh chopped basil

1 teaspoon fresh minced chives

1 tablespoon fresh chopped parsley

1 tablespoon lemon juice

Salt and freshly ground black pepper

6 taco-sized flour tortillas

1 pound thinly shaved turkey

3 carrots, julienned

1 cucumber, julienned



Mix the cream cheese, basil, chives, parsley, lemon juice, and sprinkle with salt and pepper together in a bowl. Lay out the tortillas and spread with the herb cream cheese mixture. Next, layer on the turkey, carrots and cucumber onto each tortilla. Like making sushi, roll the tortillas up tightly, then wrap in plastic wrap and refrigerate, about 1 hour. When ready to serve, unwrap the sushi rolls and slice into quarters.

Olive Garden Five Cheese Lasagna

CREAM SAUCE:

1/4 cup butter

1/4 cup flour

2 cups milk

CHEESE FILLING:

1/4 cup Sun-dried tomatoes, oil packed and minced

1 tablespoon minced fresh garlic

3 and 1/2 cups ricotta cheese

3 eggs

1 cup grated Parmesan cheese

1/2 cup grated Romano cheese

1/2 teaspoon salt

1 teaspoon black pepper

OTHER:

4 cups shredded mozzarella cheese

1 cup spinach lasagna noodles (or regular if spinach is unavailable)

1/4 cup fontina cheese

marinara sauce as desired

extra Parmesan cheese, freshly grated



To make sauce, melt butter over medium heat in heavy, 1 quart saucepan. Add flour and stir until well blended; cook until frothy. Add milk, stirring constantly with wire whisk as mixture comes to a simmer. Cook and stir until thickened (3-4 minutes). Chill while mixing other ingredients. Drain tomatoes. Place other cheese filling ingredients in 3-quart mixing bowl with tomatoes and garlic. Add 1 and 1/2 cups of cooled cream sauce and mix until well blended. Refrigerate, reserving 1/2-cup for later use.



Cook lasagna noodles according to package directions. Cool under cold water and drain. Place 3 lasagna noodles in a 9x13x2 lightly oiled baking dish, overlapping slightly. Spread 1 and 1/2 cups cheese filling over noodles; sprinkle with one cup mozzarella and 1/4 cup fontina cheese. Repeat pasta and cheese layering three more times; top with remaining three lasagna noodles. Spread 1/2 cup of reserved cream sauce over top and cover lightly with foil. Preheat oven to 350 degrees and bake for 1 hour. Remove from oven and keep warm at least 30 minutes before serving.



Serve topped with hot marinara and Parmesan cheese. (Can be refrigerated for a day before baking if desired)



The five uses of the cheese are:



Filling: ricotta, Parmesan, Romano



Lasagna: mozzarella



Finishing: Romano



I know technically this is only four cheeses, but they make five appearances.



Yield: 16 servings

Macaroni Grill ravioli Di Gamberi

Pasta:

1 pound Flour

4 Eggs

1 tablespoon Olive Oil

1 tablespoon Water

1 teaspoon Salt

Shrimp Stuffing

1 tablespoon Olive Oil

1 tablespoon Butter

1 1/2 pounds Shrimp, cleaned and devined

2 leeks, white portion, chopped

1/2 teaspoon Salt

1/4 teaspoon Ground White Pepper

1 pound Ricotta cheese

1 Egg

1/4 cup Heavy Cream

1 tablespoon Fresh Basil, chopped fine

1/2 tablespoon Fresh Thyme, chopped fine

Lemon Butter Sauce

2 cups Butter

1/4 cup Dry White Wine

2 tablespoons Garlic chopped

2 teaspoons Saffron - you can substitute with turmeric

1/4 teaspoon Ground White Pepper

Juice from lemon

1 cup Heavy Cream

1/2 pound Cooked Shrimp



Place the flour in a mound on a clean, dry surface. Form a well or hole in the center of the flour. Beak eggs into the center of the flour and add the oil, water, and salt. Use your hands to mix the ingredients together and slowly mix in the flour. Knead until well mixed. Cover with a clean towel, and let it rest for 30 minutes. Cut the dough into quarters. Begin to pass the dough through a pasta machine and continue to run it through until the dough is smooth. Run the dough through the thinnest setting to form 4 sheets of dough.



Shrimp Filling:



Place olive oil and butter in a saute pan. Warm. Add shrimp, leeks, salt, and pepper. Cook for 4 minutes. Remove shrimp and set aside. In a bowl combine ricotta cheese, egg, cream, basil and thyme, and mix together. Combine cooled shrimp mixture and leek mixture.



Filling the ravioli:



Brush each sheet of pasta with beaten egg. Place 1 tablespoon mounds of shrimp/leek mixture 3 inches apart along 1 side of pasta. Fold the pasta over to form pockets. Gently press an indentation into the dough between the mounds of shrimp/leek mixture. Cut the ravioli into pieces along these lines.



Lemon Butter Sauce:



Melt butter in a saute pan. Add garlic, saffron, and pepper. Saute for 2 minutes. Add white wine and cook for 1 minute. Add lemon juice and cream. Cook until well mixed. Add cooked shrimp and cook for 1 minute.



Serve by cooking ravioli for about 2 -3 minutes in a pot of boiling salted water. Remove from water and drain. Place ravioli in a bowl and cover with sauce.

Cajun Cafe Bourbon Chicken

1 1/2 pounds of Thigh Meat or Dark Meat (cut in bite size chunks)

2 tablespoons Teriyaki Sauce

1/2 teaspoon Worcestershire Sauce

1/2 teaspoon Garlic Salt

1/2 teaspoon Ginger Powder

3 tablespoons Brown Sugar

1 tablespoon Granulated Sugar

1 cup White Grape Juice

1/2 cup Bourbon

1/4 cup water



Mix teriyaki sauce, Worcestershire sauce, garlic salt, ginger, brown sugar 1/2 cup white grape juice and bourbon. Stir until thoroughly blended. Pour 1/3 sauce on chicken pieces and mix. Refrigerate for 3 hours or best overnight. Save remainder sauce and refrigerate.



Braise chicken with marinate on medium low heat until cooked. Remove from frying pan. In a 2 quart sauce pan heat remainder of bourbon sauce and add 1/2 cup of white grape juice and 1 tablespoon of sugar with 1/4 cup water. Bring to a simmer and stir until sugar is disolved. Add chicken to sauce and stir until chicken is coated and its ready to serve

Missouri Hash

1 large onion, chopped

1 pound ground beef

2 cups canned tomatoes mashed

1 tablespoon chili powder

1/2 teaspoon black pepper



Brown ground beef and onion, season. Add the rest of the ingredients. Put into a casserole dish, cover. Bake at 375 degrees for 1 hour. You can sprinkle on cheese during the last 10 minutes of baking if you like.

9 Slices Wheat Bread

3 Slices Cooked Turkey

3 Slices Cooked Ham

3 Slices American Cheese

3 Slices Swiss Cheese

Batter

1 Egg

1 - 1 1/4 cups Water

1/2 teaspoon Salt

1 teaspoon Sugar

1 1/2 cups Flour

1 tablespoon Baking Powder

Vegetable Oil (for deep frying)



Place turkey and Swiss cheese on one slice of bread and ham and American cheese on another slice of bread. Place third slice in-between and secure the triple decker sandwich in the corners with tooth picks.



Place egg in mixing bowl, add water and beat together. Add salt, sugar, flour, and baking powder. Beat batter until smooth.



Dip sandwich in batter and carefully cover all the sides and surface. Carefully place in hot oil and fry until golden. When sandwich has turned a warm gold color remove from hot oil and place on paper towel. Let cool for a few minutes before removing the tooth picks. Before serving slice into fourths and sprinkle with powder sugar.



Serve with raspberry preserves, pickle garnish and your favorite side order of French fried potatoes.

puree well -



transfer to pot and add:



3 quarts (12 cups) chicken stock

8 oz. can tomato sauce

2 - 3 t. ground cumin

1 - 2 t. salt -

bring to boil over medium-high heat. Lower heat to low and simmer for 1 hour.



Stir in:

2 T. cornstarch mixed with 1/4 cup water - stirring constantly.



Cut into thin strips -

20 small tortillas and deep fry until crisp; drain.



To serve - place a handful of tortilla chips in bowl and ladle soup over.



Garnish with shredded Monterey Jack cheese and avocado slices.

1 can (14 ounces) Sweetened Condensed Milk, divided

1 jar (10 ounces) Maraschino Cherries, drained

1 package (8 ounces) Cream Cheese

1 cup Cold Water

1 package (3.4 ounces) Instant Vanilla Pudding Mix

1 cup Whipping Cream, whipped

1/2 cup Toasted Almonds, chopped



In a saucepan over low heat, cook and stir 1/2 cup milk and chocolate until the chocolate is melted and the mixture is thickened, this will take about 4 - 5 minutes. Stir in 1/2 teaspoon almond extract. Pour into pastry shell; set aside. Reserve eight whole cherries for garnish. Chop the remaining cherries for garnish. In a mixing bowl, beat the cream cheese until light. Gradually beat in water and remaining milk. Add pudding mix and remaining extract; mix well. Fold in Whipped Cream. Stir in chopped cherries and almonds. Pour over the pie. Chill 4 hours or until set. Garnish with whole cherries and chocolate curls if desired.

1 stick butter

1 cup brown sugar

1 can 11 ounce mandarin oranges

1/2 cup coconut

1 package yellow cake mix

3/4 cup chopped nuts



Preheat oven to 350 degrees. Heat butter in rectangular 9"x13" pan, until melted. Sprinkle brown sugar in pa n and then arrange orange slices. Sprinkle the sugar and oranges with coconut. Prepare cake mix as directed, stirring in chopped pecans. Pour into pan and bake 45 to 55 minutes. Take out of oven and immediate turn over.

Quick and Easy Chocolate Mousse

4 ounces chocolate chips

3 tablespoons of water

1 teaspoon vanilla extract

2 cups frozen, nondairy whipped topping, thawed



1. In a small, heavy saucepan, melt the chocolate chips with the water over a low heat. Let cool.



2. Stir in the vanilla. Transfer to a medium bowl. With a rubber spatula, fold in the whipped topping. Cover and refrigerate until well chilled.... about 2 hours.

24 Ritz crackers (crushed to make crumbs)

1 cup Sugar

8 ounces Cream Cheese

4 tablespoons Milk

1 teaspoon Vanilla

Dream Whip--1 large package or two small package.

1 can Cherry Pie Filling



Place the crumbs in bottom of serving dish (reserving a small bit for garnish). Cream together the sugar, cream cheese, milk and vanilla until light and set aside. Prepare the dream whip according to package directions and mix the dream whip with the sugar and cheese mixture. Place this on top of crumbs, Top this with the cherry pie filling and sprinkle with a little of the cracker crumbs.

4 Eggs Whites

3 cups Sugar

4 tablespoons Flour

2 teaspoons Vanilla

1 cup Almonds blanched and chopped



Puree whole almonds in blender. Beat 3 egg whites until foamy and add pureed almonds, sugar, flour, and vanilla. Mix well until mixture becomes pliable. It is stiff, bean in another egg white. With your fingers take small pieces of the mixture, roll in chopped almonds and form into "fingers". Arrange them on a lightly greased baking sheet and bake in a preheated 325-degree oven until light golden, about 20 minutes. Do not remove from baking sheet until cooled.

Hot Water Pastry - Pie Crust

Makes one, 9-inch double pie just

.

Ingredients:

3/4 cup (5 1/2 oz - 155 g) shortening (I used Butter Flavor Crisco), (cold from fridge or room temp OK)

1/2 teaspoon (2.5 g) distilled white vinegar

1 Tablespoon (15 g) milk, (cold from fridge or room temp OK)

1 teaspoon (6 g) salt or to taste

1 1/2 teaspoons (4 g) cornstarch

1/4 cup (2 fl oz - 58 g) boiling hot water (I heated it in the microwave)

2 cups (9 oz - 255g) all-purpose flour

Directions:

In a mixing bowl, add shortening, vinegar, milk, salt and cornstarch, don't mix yet.

Pour in the boiling hot water and whip with a dinner fork until mixture is smooth and creamy and combined, it will look similar to mayonnaise.

.

Add flour to shortening mixture and stir with a rubber spatula until dough just comes together. Don't over mix.

.

Divide dough in half and roll out dough between sheets of wax paper. If dough is difficult to work with, refrigerate before rolling.

(I find it easier to hand press the bottom dough into a pie plate that has been sprayed with non-stick spray, rather than rolling it out and adding to the pie plate. I do roll out the top dough between sheets of waxed paper.)

1 cup Water

1/2 cup Butter

1/4 teaspoon Salt

1 cup Flour

4 large Eggs

CUSTARD FILLING

3 cups Milk

1/2 cup Sugar

3 tablespoons Cornstarch

4 Egg yolks

2 teaspoons Vanilla extract

CHOCOLATE GLAZE

12 ounces Semisweet Chocolate Chips

1/4 cup Shortening

1/4 cup Light Corn Syrup

6 tablespoons Milk



In medium saucepan heat milk slowly just until bubbles form around the edge. In small bowl, combine sugar and cornstarch, mixing well. Stir into hot milk all at once. Cook, stirring, over medium heat until mixture boils. Reduce heat and simmer 1 minute. Beat a small amount of mixture into egg yolks. Pour back into saucepan and cook, stirring, over medium heat until mixture boils and thickens. Stir in vanilla. Place waxed paper on surface to prevent skin from forming. Refrigerate until ready to use. Makes 3 cups. Will fill 12 Eclairs.



Bring water, butter and salt to boil. Remove from heat and stir in flour. Beat over low heat until mixture leaves sides of pan. Remove from heat. Beat in eggs, one at a time. Beat until shiny and satiny and broken in strands. Drop three inches apart on ungreased sheet. Form 12 strips 4 x 1 inches. Bake at 400F for 35 to 40 minutes. (Will sound hollow when tapped, you should keep it from drafts). Slit tops of Eclairs and fill with custard. Spread tops with chocolate glaze, chill and serve.

Black Bottom Cups

1 package (8 ounces) cream cheese

1 egg

1 1/2 cups granulated sugar

1/8 teaspoon salt

1 package (6 ounces) semi sweet chocolate morsels

1 1/2 cups flour

1/4 cup cocoa powder

1 teaspoon baking soda

1 cup water

1/3 cup vegetable oil

1 tablespoon vinegar

1 teaspoon vanilla



Preheat oven to 350 degrees. In a medium mixing bowl with an electric mixer, beat cream cheese, egg, 1/3 cup sugar and salt. Stir in chocolate morsels; set aside.



In a large mixing bowl add flour. cocoa, and remaining 1 cup of sugar and baking soda. Add water, oil, vinegar, and vanilla. Beat until well mixed.



Fill 24 greased or paper-lined muffin cups one-third full with chocolate batter. Top each with a heaping spoonful of cream cheese mixture. Sprinkle with additional sugar, if desired. Bake fro 30 to 35 minutes, or until done.



Makes 24 cup cakes

Grilled turkey burgers with gouda

2 pounds ground turkey (preferably 1 pound thigh and 1 pound breast)

1/2 cup dried whole wheat bread crumbs

1/2 cup finely chopped yellow onion

2 tablespoons Worcestershire sauce

1 teaspoon fine sea salt, divided

1 red onion, thickly sliced

1 teaspoon extra-virgin olive oil

6 ounces Gouda cheese, sliced



Prepare a gas or charcoal grill for medium-heat cooking. In a large bowl, combine turkey, bread crumbs, onion, Worcestershire sauce and 1/2 teaspoon salt. Using your hands or a large spoon, gently mix the ingredients together—do not overmix. Divide the mixture into 6 equal portions. Flatten into patties about 5 inches in diameter and no more than 3/4-inch thick (patties will shrink and thicken as they cook).



Skewer the onion slices on metal skewers, putting about 2 slices on each skewer. Brush slices on both sides with olive oil and sprinkle lightly with remaining 1/2 teaspoon salt.



Grill burgers and onion slices until browned on one side, about 4 minutes. Turn burgers and onions and grill on the other side, about 2 minutes. Top burgers evenly with Gouda slices, cover grill, and continue cooking until the onions are browned and the burgers are cooked through and the cheese is melted, about 2 minutes more. Serve burgers topped with onions as they are or in buns with your choice of condiments.

Mediterranean veggie burgers

1 cup peeled and diced potato (from an 8-ounce russet potato)

2/3 cup cooked garbanzo beans (also known as chickpeas), coarsely mashed

1/2 cup finely chopped kale

1/3 cup quick-cooking oats

1/3 cup finely diced roasted red bell pepper

1/4 cup pitted Kalamata olives, sliced

3 tablespoons finely chopped parsley

1 tablespoon onion granules

1/4 teaspoon freshly ground black pepper



Cook potato in boiling water until very soft, about 15 minutes. Drain and cool slightly.



Preheat the oven to 400°F. In a large bowl, combine potato and remaining ingredients. Use your hands to break up chunks of potato and press the ingredients until they hold together. With damp hands, form into patties* about 4 inches in diameter and 3/4-inch thick. Place on a parchment paper-lined baking sheet. Bake 15 minutes, then flip burgers and continue to bake until lightly browned on other side, about 15 minutes longer.



*Forming neat veggie burgers:

Dampen the inside of a 1/2-cup measuring cup and pack it with the burger mixture, pressing down firmly. Turn the cup over and shake it gently to release the mixture into the palm of your hand, then press down with your other hand until the patty is about 3/4-inch thick.



Freezing veggie burgers:

Cool cooked burgers and wrap individually in plastic wrap and then foil, or place them in individual resealable plastic bags, and freeze up to 6 months. To reheat, unwrap the burgers, place on a parchment paper-lined baking sheet and bake at 300°F until heated through, 20 to 25 minutes.

I met a Cajun

The rattlesnake recipe reminded me of meeting a Cajun last month. We have a log cabin in the Smoky mountains and go there once each month for R & R. There is a BBQ place there called The Cajun shack. It has good BBQ, pork ribs and Jambalaya. I asked if he knew any of the swamp people such as Troy. He said he lived 20 miles from Pierre Park where Troy lived, before he moved to Wear's Valley in Tennessee. We got to talking about eating alligator, and I asked you only eat the tail right? He said we eat any meat there is on the gator. He said I like turtle, and it has 4 unique flavors from the different cuts. He said we eat fried snake, swamp rats, squirrels and c*on (raccoon). He said you have to know how to clean a c*on because he has got 27 glands you must remove or the meat is not good. He said he tried gar fish balls but he did not like those. I said a squirrel is a rodent the same as a swamp rat only it can climb trees. He said yes but it was good eatin'. I asked if he like possum and he said no. I said I can understand why because they will eat anything dead or alive. I asked if he ever had a armadillo and he said no and Louisiana did not have any. When I lived in Texas those were called possum on the half shell. I was in middle Tennessee about 2 years ago, and I saw a armadillo that looked to be road kill, so I suspect they are migrating just like the fire ants. I never wanted to eat one. I have heard that people will stop and if a road kill (any kind, deer preferred) is fresh they will take it home and cook it and eat it. I do believe this to be true because I have seen people on the side of the road looking at the road kill. I suspect they make sure no one is looking before they pick it up.



I personally don't like wild game because the taste is a bit strong for me.

Ingredients for 5 Crunchwrap Supremes:

5 10-inch flour tortillas

1 pound taco meat (1 lb ground beef prepared with one taco seasoning packet)

3/4 cup nacho cheese

5 tostado shells

1/3 cup sour cream

3/4 cup shredded lettuce

1/3 cup chopped tomato



Ingredients for 1 Crunchwrap Supreme:

1 10-inch flour tortilla

1/2 cup taco meat

2 teaspoons nacho cheese

1 tostado shell

1 tablespoon sour cream

2 tablespoons shredded lettuce

1 tablespoon chopped tomato



Warm flour tortilla in a skillet or the microwave. Place taco meat in the center, and spread it to the same diameter as the tostado shell



Drop warmed nacho cheese across the top of the meat



Place tostado on top and press down gently



Spread sour cream on top of tostada shell



Sprinkle lettuce and tomato on top of sour cream



Place a skillet over medium-high heat. Fold the sides of the flour tortilla up around the tostada shell, creasing the folds as you go



Take the whole thing and place it face down in the skillet and gently press down with a spatula



Allow the tortilla to brown a bit in the pan, 2-4 minutes



Flip over and brown the other side. Remove from pan and cut in half, serve

How do you know what recipes are good for your heart anyway

Low fat - High fat- low cholesterol - low sugar -high etc

seems to me one expert will stand up and say you should have more fat in your diet and that sugar and carbs are the cause of inflamation in your viens. Then another "expert" will come along and say the oposite, and they will both site different research to back them up.

One expert will point out that more people with low cholesterol die of heart attacks than those with high etc and that eating cholestorol is not an important factoer ect. I'm not sure if anyone really knows the answer so I say eat what you like in moderation and screw em unitil one day they just might learn how to do decent research done with common sense that you can trust.

Rattlesnake Tails



In short, these are Anaheim peppers stuffed with a combination of ground turkey and spicy pork sausage, wrapped in bacon, smoked, then glazed with a mixture of barbecue sauce, honey and butter. They are sticky sweet, with just a touch of spicy goodness.



Ingredients

12 whole Anaheim chiles, as straight and round as you can find

12 slices Standard (thin sliced) bacon

1 lb Ground turkey, 85% lean

1 lb Hot breakfast sausage (I used Jimmy Dean brand)

1 Tbsp Tiger Sauce

1 Tbsp Garlic salt

1 1/2 Tbsp Your favorite BBQ seasoning

2 tsp Lemon pepper

Optional: 1 Jalapeño chile, seeded, veined and minced



Glaze



1/2 cup Your favorite barbecue sauce

1/4 cup Honey

3 Tbsp Butter, melted



Method

Wash the Anaheim chiles and cut the stem ends off so that they are of equal length.



Cut a long V-shaped sliver out of one side of each chile. Start at the cut end, about 1/4″ wide and end about an inch from the tip. The intention is to get them to open enough to seed, de-vein and stuff.



Remove the seeds and veins from each chile.



Mix all of the remaining ingredients, except the bacon, well in a large mixing bowl.



Roll a tapered cylinder of the stuffing and fit it into the chile, packing it loosely from the tapered end up. You want it full, but not overflowing.



Wrap each chile with one of the bacon slices. Starting about 1″ from the cut end, tuck the end of the slice between the inside of the pepper and the stuffing. Stretch it around the pepper in a spiral pattern moving toward the other end (not overlapping). Tuck the other end in the tapered end of the chile, just as you started. It should leave you with about an inch of chile exposed at each end.



Start your fire and prepare for indirect cooking at medium-high heat (about 300º).



Add one small chunk of fruit wood (apple or cherry) to the fire about 10 minutes before adding the chiles. Wood chips soaked for 30-60 minutes will work well, too. If you’re using a gas grill, make a smoker pouch.



Dust each wrapped chile lightly with the seasoning.



Cook the chiles indirect about 1 hour and 15 minutes, turning once at the halfway point.



Mix the glaze ingredients in a small bowl.



Glaze each chile on one side, turn, glaze the other side, and cook another 15 minutes.



Glaze and turn the chiles again, then cook another 10 minutes.

INGREDIENTS



•4 to 6 large navel oranges, peeled, pith removed and cut into ½-inch (1 cm) slices

•1 cup (250 mL) Grand Marnier Cordon Rouge (or to taste)

•Vanilla ice cream



Directions



Preheat grill or barbecue to medium-high



1. Place orange slices in a shallow dish. Cover with Grand Marnier. Turn slices over once or twice. Cover with plastic wrap. Chill for at least 1 hour.



2. Grill orange slices, brushing carefully with reserved marinade, for 2 to 4 minutes per side or until caramelized. Serve hot with vanilla ice cream.

Ingredients

2 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon salt

3/4 cup butter, room temperature

3/4 cup sunflower seed butter, chilled

3/4 cup sugar

3/4 cup brown sugar, firmly packed

2 eggs

1 teaspoon vanilla



Directions

Preheat oven to 375.

Stir together flour, baking soda, baking powder and salt.

In a separate bowl, beat together butter, Sunflower Seed Butter and both sugars until fluffy.

Beat in eggs and vanilla.

Gradually beat in flour mixture.

Wrap dough in plastic and refrigerate until well chilled, about 2-4 hours.

Roll tablespoonfuls of dough into balls with your hands. Place about 3 inches apart on ugreased baking sheets. Dip a fork in flour and press onto tops of cookies, making a criss-cross pattern on each cookie.

Bake for about 10 minutes, or until golden brown. Careful not to burn the bottoms. Cool on baking sheets for a minute, then transfer to wire racks to cool completely before eating.

Prep Time: 40 min



Ingredients:

- 3 pound(s) (small) red potatoes, scrubbed

- Kosher salt

- Pepper

- 1/4 cup(s) aged sherry vinegar

- 1 small shallot, finely chopped

- 2 teaspoon(s) Dijon mustard

- 1/2 cup(s) blue cheese, crumbled

- 1/3 cup(s) olive oil

- 3 tablespoon(s) extra-virgin olive oil

- 14 ounce(s) watercress, coarsely chopped

- 2 green onions, thinly sliced



Directions:

1. Place potatoes in 8-quart saucepot and add enough cold water to cover. Add 2 tablespoons salt and heat to boiling on high. Reduce heat to medium and boil 10 to 20 minutes or until potatoes are just cooked through but not soft. Test by piercing a potato with a thin skewer or toothpick; when skewer meets some resistance but can slide all the way through, drain potatoes immediately. Potatoes can be drained and set aside at room temperature up to 4 hours ahead.



2. In medium bowl, whisk together vinegar, shallot, mustard, blue cheese, and 1/3 cup oil. Vinaigrette can be covered and refrigerated up to 4 hours ahead.



3. Prepare outdoor grill for direct grilling on high.



4. Cut potatoes into 1/4-inch-thick slices. Brush both sides of each slice with remaining 3 tablespoons oil, then sprinkle with 1/2 teaspoon salt and 1/4 teaspoon freshly ground black pepper.



5. Place potato slices on hot grill grate. Grill 5 to 10 minutes or until lightly browned on both sides of slices, turning over once.



6. Place watercress on large serving platter. Top with potatoes and green onions. Drizzle vinaigrette on top. Serve immediately.

When I was a kid, my mother used to make a mix of instant tea, Tang, powdered lemonade, and spices. You simply added boiling water for a cup of hot, warming comfort. Does anyone have this recipe?

If you're thinking of washing that chicken before you cook it, please step away from the faucet. Do not wash the bird, despite what you might have heard from celebrity chefs. Washing poultry before cooking increases the chances of spreading foodborne pathogens such as salmonella and Campylobacter over the rest of your kitchen, as this animation from Drexel University's "Don't Wash Your Chicken" public health campaign demonstrate (sorry, the 14sec video didn't post). Studies have found bacteria can fly up to three feet away from where meat is rinsed. To kill the unwanted bacteria that's almost certainly lurking on that delicious chicken, experts say all you have to do is cook meat properly (a thermometer can help), and keep utensils and cooking surfaces clean.

Ingredients:

1/4 pound ground chuck

1 plain jumbo-sized sandwich bun -- (potato kind)



=== CONDIMENTS ===

1 tablespoon mayonnaise

1 tablespoon Heinz ketchup

Mustard -- as needed

3 slices Heinz genuine dill pickle - (thin slices)

2 iceberg lettuce leaves - (to 3)

2 white onion rings - (to 3)

1 tomato slice

Cheese -- (optional)



Cooking Directions:

Using waxed paper, form the 1/4 pound of beef into a 4-inch square patty.

Refrigerate until you're ready to cook.



Pre-heat an electric griddle to 375 to 400 degrees. After its ready, toast the bun faces lightly...about 30 seconds. Don't brown as much as the McDonald's or Burger King buns. Set the bun(s) aside.



Cook the fresh or thawed burger patty about 3 minutes on the pre-heated griddle, salting the top immediately after laying it down. After 3 minutes, turn the patty over, salt again, and cook for 3 more minutes.



While the burger is cooking, dress your toasted top bun in the following order: 1 tablespoon mayonnaise; 1 tablespoon Heinz ketchup; 3 thin slices Heinz genuine dills; 2 to 3 rings of fresh sliced white onion; 1 tomato slice; 2 to 3 iceberg lettuce leaves; 5 to 6 squirts of yellow mustard, evenly spaced.



After the meat is finished cooking, drain the exess fat by tilting to the side and applying pressure with your free hand. Place the patty on top of the dressed bun, and add the toasted bottom bun.



Turn right side up, and eat -- or wrap in a 12- by 12-inch sheet of foil and allow to sit in a warm place 3 to 5 minutes before eating.



This recipe yields 1 burger.



Comments: If you'd like the classic Wendy's double, cook two patties, and dress the bun the same. If adding cheese, use only real American cheese and place it on top of the dressed bun prior to adding the cooked beef. Double cheese? Do the same.



For Wendy's classic bacon cheese burger, cook the burger and dress the bun as directed above. For the bacon, use Oscar-Mayer Ready-Made pre-cooked bacon. Simply microwave 2 slices for about 30 seconds, and add to your burger between the cheese and the beef patty.

5 ounces cool whip

4 (4 ounce) chicken breasts

salt and black pepper (To Taste)

1 lb angel hair pasta

6 -8 medium size roma tomatoes

4 tablespoons olive oil, divided

1/4 teaspoon salt

1/8 teaspoon black pepper

2 minced garlic cloves

10 fresh basil leaves

2 garlic cloves, sliced into thin coins

1/2 cup tomato sauce

1 cup balsamic vinegar

1 tablespoon granulated sugar









Chicken Breasts: Season both sides of chicken breasts with salt and black pepper. Grill 3-4 minutes per side for grill marks or until the chicken breasts reach 165 degrees F. Grill right before serving.



Pasta: Boil pasta as per directions on box until al dente.Drain and transfer to bowl.



Tomato Salad (Step 1): Wash, core and dice tomatoes to 1/4" pieces, save juices and place in small bowl. Wash, dry and cut basil leaves into thin strips. Combine tomatoes, basil, 2 tablespoons olive oil, salt, pepper, and hold for 2 hours before use.



Tomato Salad (Step 2): Heat heavy bottom saucepan under medium-low flame. Add 2 tablespoons olive oil, heat oil for 20 seconds. Saute cloves of garlic, that are sliced into thin coins, in oil (if small use 3) for 45 seconds on each side until soft and tender - do not brown garlic (if brown DISCARD and start over). Increase heat and add tomato salad and stir.



Tomato Salad (Step 3): Add plain tomato sauce to pan and bring to a boil. Add pasta to sauce pan and toss with fresh sauce (sauce should just coat pasta). Transfer to a service platter or plate individually. Garnish with balsamic glaze.



Balsamic Glaze: Bring to a boil vinegar and sugar in small pan and turn down flame to a simmer Reduce by 75% until sauce turns to a thick syrup, hold at room temperature



To serve: Slice chicken breast into strips on a bias (45 degree angle) and place on top of pasta.Enjoy!

mashed potatoes



marinade



2 tablespoons chopped garlic

2 tablespoons chopped parsley

2 ounces olive oil

1 teaspoon crushed red pepper flakes

1/4 teaspoon black pepper

1/4 teaspoon salt



pepper and onion medley



1 green pepper, julienne

1 red pepper, julienne

1 yellow onion, julienne









Pound chicken breasts to even thickness.



Combine all marinade ingredients. Place chicken breasts in marinade and refrigerate for 2 to 4 hours.



Slice peppers and onions and sauté in olive oil until al dente. Season with salt and pepper.



Saute chicken breasts in olive oil over medium heat; cook evenly on both sides to a golden brown color.



Heat cast iron skillet on burner over medium heat until very hot. Place mashed potatoes on top portion of skillet. Place cheeses on bottom portion of skillet and cover with pepper and onion medley. Add chicken to top of pepper and onion medley, resting on potatoes. Top with chopped parsley. Serve “sizzling.".

4 cups Milk

1 cup Sugar

1 stick Butter

2 tablespoons Cornstarch

4 eggs

4 egg yolks

1 tablespoon Vanilla

4 bananas

8 Oreos

2 cups Heavy Cream

2 tablespoons Granulated Sugar

2 Oreo Pie Shells



Combine milk, 1/2 the sugar and butter and bring to a boil. Mix the eggs, yolks, remaining sugar, cornstarch and vanilla. Mix until smooth. Temper the egg mixture with the hot milk, slowly adding while whisking. Pour the tempered eggs slowly into the hot milk. Whisk vigorously. Turn the heat on high and continue to whisk until mixture thickens. Place the pudding into the fridge until it cools. Remove the pudding mixture from the fridge once it has chilled to room temperature, this may take an hour. Whip the heavy cream to soft peaks and fold into the base mix. Fold in chopped bananas and crumbled Oreos. Fill the Oreo shells with the filling and refrigerate.

Makes about 8 servings



2 pounds ground beef

¼ cup diced green bell peppers

¼ cup diced red bell peppers

¼ cup chopped white onion

2 cloves garlic, minced

1 tablespoon freshly minced sage

3 eggs

1 ½ cups dried bread crumbs

2 tablespoons melted butter

½ cup ketchup

1 pouch packaged onion soup mix

1 pound bacon (any type)

½ cup additional ketchup for garnish



Preheat oven to 350 degrees.



In a large bowl, combine all ingredients except bacon and additional ketchup. Line a large loaf pan (at least 5½-by-9½-inch) with bacon. Lay it in the pan the short way, with the ends hanging over the sides of the pan. Pack meat mixture into pan tightly, pushing air out. Flip ends of bacon over top of meatloaf.



Bake in preheated oven 35 minutes. Remove from oven, brush top of loaf with extra ketchup and bake 15 minutes more.

Crust

• 2 cups crushed vanilla wafers

• 2 tablespoons granulated sugar

• 5 tablespoons melted butter

Filling

• 8 ounces Philadelphia Cream Cheese, softened

• 2 whole eggs

• 2 egg yolks

• One 15-ounce can Eagle Brand Condensed milk

• 3/4 cup Coco Lopez (cream of coconut)

• 3/4 cup Key lime juice

Whipped Cream Layer

• 1 cup heavy whipping cream

• 1 cup powdered sugar

Garnish

• Lime slices

• White chocolate seashells

In a bowl, combine vanilla wafer crumbs, sugar and melted butter. Press into a 9-inch deep dish pie plate.

Bake at 350 degrees for 10 minutes. Allow to cool to the touch before filling.

In a medium bowl, beat cream cheese until smooth. Add eggs and egg yolks, one at a time, beating well after each addition. Add condensed milk and beat well. Add lime juice and Coco Lopez and beat well. Pour into crust. Bake at 325 degrees for 30 minutes or until center is set to the touch. Allow to cool before refrigerating.

In a cold bowl, beat whipping cream and powdered sugar until stiff. Pipe large rosettes around edges.

To make white chocolate seashells: Melt white chocolate almond bark or white chocolate pieces in microwave. Pour into seashell molds. Chill until set.

DIXIE CHICKEN WITH BROCCOLI PEPPER SLAW



RUB

• 2 tablespoons salt

• 1 tablespoon coarsely ground black pepper

• 1 to 2 tablespoons (packed) golden brown sugar

• 2 teaspoons garlic powder

• 1½ teaspoons cornstarch

• 1½ teaspoons onion powder

• 1 teaspoon lemon-pepper seasoning with garlic and onion

• 1 teaspoon chili powder

• 1 teaspoon cayenne pepper

• ½ cup (1 stick) unsalted butter, room temperature

CHICKEN

• ½ cup (1 stick) unsalted butter, room temperature

• 16 bone-in and skin-on chicken thighs (about 6 ounces each) or substitute chicken breasts or legs or chicken leg quarters

• 1 sourdough baguette, cut on diagonal into ¾-inch-thick slices

BROCCOLI AND BELL PEPPER SLAW (see note)

In a small bowl combine all the rub ingredients and blend well. Transfer 1 tablespoon spice rub to medium bowl; add butter and mix well. (Rub and seasoned butter can be made 2 days ahead. Cover separately. Chill butter. Bring butter to room temperature before using.)

Trim any excess fat from the chicken thighs. Pat the chicken pieces dry with paper towels. Sprinkle spice rub over both sides of chicken pieces. Arrange chicken pieces on waxed-paper-lined baking sheets. Cover chicken with more waxed paper and let stand at room temperature at least 1 hour and up to 2 hours.

Prepare a grill for two zones of heat, low-medium and medium-high heat. Reserve 4 tablespoons seasoned butter. Spread remaining seasoned butter on 1 side of baguette slices. Place bread slices on platter and cover.

Place the chicken on the grill, skin side up over indirect heat (the cooler part of the grill), cover and grill about 15-20 minutes. Turn chicken over. Grill until skin is deep golden brown, about 15 minutes. Turn chicken again and move to the hotter part of the grill and continue grilling, skin side up, until cooked through (no red shows when chicken is cut at thigh bone), about 5 to 10 minutes longer. Transfer chicken to platter. Brush chicken with reserved 4 tablespoons seasoned butter.

Grill bread until just golden, about 2 minutes per side. Arrange around chicken.



Note: For the Broccoli and Bell Pepper slaw, mix together one 10-ounce bag of broccoli slaw, 1 heaping cup of mixed bell pepper slices, 1 bunch sliced green onion and 1 cup slaw dressing.

Duff's Bread Pudding

1 cup warm water

1 cup non-dairy creamer

3 eggs

1/4 cup butter

1/2 cup sugar

1 teaspoon vanilla

1/4 teaspoon salt

4 slices white bread

1/4 cup raisins

NUTMEG SAUCE

1/2 cup sugar

1 teaspoon cornstarch

1/2 teaspoon nutmeg

1 cup milk

1/4 cup butter

1 teaspoon vanilla



Instructions



Combine water and creamer. Add butter. Beat 30 seconds. Add sugar, vanilla, eggs and salt. Beat at high speed 1-2 minutes. Set aside. In non-greased casserole dish place 1-1/2 cups mixture and sprinkle with raisins. Add 4 slices bread cut 1" x 1". Toss lightly and add remaining mixture. Pour evenly over bread and sprinkle lightly with cinnamon. Bake at 325 degrees 40-45 minutes. Cool and top with Nutmeg Sauce.



NUTMEG SAUCE:



In small pan combine sugar, cornstarch and nutmeg. Stir in milk and margarine. Cook over medium heat until mixture starts to thicken slightly. Add vanilla and stir constantly until thick. Do not boil. Remove from heat and pour over cooled bread pudding.

Furr's Cafeteria Pineapple Millionaire Pie

2 cups sifted powdered sugar

1/2 cup margarine or butter, softened

2 large eggs (see Note)

1/8 teaspoon salt

1/4 teaspoon vanilla extract

2 baked 9-inch pastry pie crusts

1 cup heavy cream

1/2 cup sifted powdered sugar

1 cup crushed pineapple, well drained

1/2 cup chopped pecans



Cream 2 cups powdered sugar and butter with electric mixer. Add eggs, salt and vanilla. Beat until light and fluffy. Spread mixture evenly into baked pie crusts. Chill.



Whip cream until stiff. Blend in powdered sugar. Fold in pineapple and pecans. Spread mixture on top of filling and chill thoroughly.



If you concerned about using raw eggs, please use imitation eggs such as eggbeaters, or eggs that have been pasteurized, either work well. Pasteurized eggs are very safe for people who may have compromised immune systems.

Greenbrier Hotel Buttermilk Ice Cream

2 whole vanilla bean pods

2 cups milk

1 cup egg yolks (you'll need 1 dozen extra large eggs to yield this measurement)

13 ounces sugar (about 1 1/2 cups)

6 cups buttermilk



Slit open the vanilla beans and scrape out the seeds with a paring knife. Place about half the sugar in a double boiler; add the vanilla bean seeds and pods and milk.



In a bowl, combine the remaining sugar and egg yolks. Mix until smooth.



Over boiling water, bring the sugar, vanilla beans and milk to a high simmer, making sure all sugar is dissolved. When this mixture is very hot, add a little bit of it at a time to the yolk mixture, stirring quickly. (Add about half of the milk. This tempers the yolks so that they will not curdle when added back to milk mixture).



Now add all of the yolks to the milk over the double boiler, whisking quickly. Continue stirring constantly over the double boiler until it begins to thicken and coats a spoon like heavy cream. Remove from the double boiler.



Whisk in the cold buttermilk. Chill mixture in refrigerator until ready to freeze in ice cream machine according to manufacturer's directions. Makes about a half gallon.



Yield: 1 gallon

El Chico Fried Ice Cream

1 quart Vanilla Ice Cream

1 cup Corn Flake Crumbs

1/2 cup Sugar

1/2 teaspoon Cinnamon

Also:

Honey or Chocolate Syrup

Whipped Cream

Maraschino Cherries

Oil



5 hours in advance:



Combine crumbs, sugar, and cinnamon in a shallow pan. Let ice cream soften slightly for 5 minutes. Make 6 balls of ice cream, roll in crumb mixture until well coasted, pressing coating into ice cream. Wrap in aluminum foil and freeze for 5 hours.



Heat oil to 450 degrees. Unwrap each ball and fry in hot oil VERY BRIEFLY, about 2 seconds. Place in dessert dish; decorate with toppings, whipped cream and a cherry. Serve immediately.

411 West Black Satin Fudge Cake

1/3 cup Raspberry Preserves

12 ounces Semi-Sweet Chocolate

1/2 pound Butter

1 1/3 cups Sugar

1 tablespoon plus 1 teaspoon flour

Powdered sugar

Raspberry Sauce

1 pint Fresh Raspberries

1 tablespoon Sugar

1 teaspoon Frozen Orange Juice Concentrate



Grease a 9-inch spring form pan and line bottom with a parchment paper circle. Wrap outside of pan with aluminum foil to seal out water.



Preheat oven to 325 degrees.



Strain seeds from preserves by pressing through a wire-mesh sieve. Place preserves, chocolate and butter in a double broiler. Heat over medium heat, stirring until melted. Remove from heat.



In a large bowl, mix sugar, eggs and flour. Add chocolate mixture. Mix gently.



Pour into spring form pan. Place spring form pan in a larger baking pan. Add about 1 inch of water to outside pan, forming a water bath. Bake at 325 degrees until top is dry and skewer comes out clean, about 45 minutes. If water evaporates, replenish.



Let cool, unmold and turn upside down. Remove parchment paper. Place on serving plate and dust with powdered sugar.



Serve individual slices with Raspberry Sauce.



Raspberry Sauce:



Puree all ingredients in food processor. Strain seeds from sauce by pressing through a wire-mesh sieve.

Chickens from farmers’ markets high in bacteria

Some people shop at farmer’s markets because they like to support local growers. Others shop there because of the plentiful supply of quality hand-crafted goods they can peruse at will. Still others shop there because prices for produce are sometimes cheaper than those found at the regular grocery store. While all of these are good reasons for shopping the farmer’s market, you might want to be careful what types of food you buy there. According to a study published last month in The Journal of Food Safety, “The popularity of farmers’ markets is increasing throughout the U.S.A.” and “vendors are selling numerous food products, including raw chicken, which is known to harbor Campylobacter spp. and Salmonella spp.,” both of which are known bacterial instigators of food poisoning.



Large percentage jump from grocery store to farmer’s market



Researchers in this study purchased 100 whole chickens from grocery stores, half of them being organic, and 100 whole chickens from farmer’s markets. They then tested each chicken for Campylobacter and Salmonella. Their findings were as follows: Of the chickens bought at grocery stores, “28 percent of the organic chickens tested positive for Campylobacter and 20 percent for Salmonella, while 52 percent of the nonorganic chickens were contaminated with Campylobacter and 8 percent with Salmonella.” If these numbers sound ominous, consider the results of the farmer’s market chickens: “28 percent tested positive for Salmonella and 90 percent for Campylobacter.”



Small farms not inspected



The study’s authors hypothesized that one reason for this disparity might be the differences in regulations of small versus large poultry farms. Farms that produce less than 20,000 birds per year are not inspected by the Department of Agriculture. With these numbers, however, regulatory inspectors might want to reconsider this omission.



Buyers and sellers handle with caution



The doctoral student who led this study out of Pennsylvania State was Joshua Scheinberg and he wanted to emphasize that his position was not anti-farmers’ markets. However, he suggested buyers and sellers “make sure they’re handling the products properly, keeping them cold, making sure they’re not cross-contaminating tabletops or kitchen implements. Yes, we found in a small study higher levels of these pathogens. But these would be destroyed if properly cooked to 165 degrees.” And even without these results, most cooks already know that it’s imperative to handle raw meat carefully since all meat has some chance of being tinged with food poison-causing bacteria.
