Ingredients:
** 4 cups sifted all-purpose flour
** 4 cups white sugar
** 1 1/2 cups dry milk powder

Place all ingredients in a large bowl and mix well with a spoon. Sift mixture twice. Store in a tightly covered container as it keeps well for several weeks at room temperature.

Ingredients:
** 2 lg Eggs, lightly beaten
** 1 t Vanilla
** 1 16-oz can pumpkin
** 1/4 c Golden or dark brown sugar
** 2 1/2 t Special Seasoning (***recipe follows)
** 1 c Evaporated milk
** 1/2 c Half-and-half
** 1/2 c Granulated sugar
** 1 9-inch unbaked pie shell

Directions:
1. Mix together the eggs, vanilla, pumpkin, sugar and seasoning mix. In a saucepan, mix the evaporated milk, half-and-half and sugar; cook over low heat until sugar dissolves. 2. Add to the pumpkin mixture. Pour into unbaked shell and bake at 425 degrees for 15 minutes; lower heat to 350 and cook 25 minutes. Store in frig.

*** Special Seasoning ***
** 4 T. ground cinnamon
** 2 T. ground allspice
** 2 T. black pepper
** 2 T. salt
** 1 T. ground nutmeg
** 1 T. ground cloves
** 1 T. ground ginger

Directions:
Mix all and store in an air-tight container. Makes about 3/4 cup.

** 2 cups catsup

** 3 tablespoons Worcestershire sauce

** Buns

Directions:
1. In stockpot, boil meat in water for 4 hours or until it is falling apart. Of course one can always use leftover pork roast but you will need a lot!!
2. Remove meat, cool, shred. Discard the liquid. In same pot, add catsup, vinegar, Worcestershire sauce, mustard, Tabasco, butter and brown sugar. Boil for 5 minutes, stirring. Mix in the shredded pork and simmer for at least 30 minutes but longer is even better!!

refrigerator. These freeze wonderfully and look beautiful on a tray.

Pluckers Wing Bar Hot Wings



3 pounds chicken wings
2 cups Hot sauce Lousianna Hot Sauce
1/2 cup butter
2 jalapenos sliced
2 teaspoons freshly ground black pepper
oil for frying

Cutting the wings
If the wings are not already pre-cut, straighten out the wing, and cut the wing at each joint.

Frying the wings
Preheat vegetable oil to 350 degrees.
Deep-fry the wings for 8 to 10 minutes. The chicken will be done when 165 degrees, juices from the chicken should be clear. Drain chicken on a wire rack resting on a baking sheet.

Spicy Buffalo Wing Sauce
While the chicken is cooking prepare the sauce by combining the hot sauce, butter, vinegar, jalapeno slices, and ground black pepper in a small pot.
The sauce will be done when all of the butter has been melted. Whisk the sauce together so it forms an emulsification.

Toss the Wings
When you are ready to serve the wings, place several of them into a bowl, add a ladle or two of sauce, and toss the wings to coat them well.

** salt and pepper, to taste
** cooking oil, for braising meat

** 1 lg carrot,diced
** 1 bay leaf
** 1 large onion,diced
** 2 stalks celery,diced
** 1 pn thyme
** 1 clove garlic,cut in half
** 8 T flour
** 3/4 c tomato puree
** 4 c beef stock
** 2 c water

Directions:
1. In a large, thick-bottomed pot place a little cooking oil. Place in a 425-degree oven and get it smoking hot. Add beef shin and veal knuckle (have butcher break shin and veal knuckle into medium size pieces), salt, and pepper, and cook to a golden brown.

2. Add butter and all remaining ingredients except tomato puree and liquids. Blend thoroughly and continue to brown until vegetables are almost tender and flour is a deep brown.

3. In the meantime, mix tomato puree, beef stock, and water; bring to a boil. Stir into hot bones and vegetables, and add salt and pepper to taste. Reduce heat to 275 degrees and cook covered for at least 2 hours. Stir
frequently.

4. Strain sauce through a medium strainer, place on stove, and bring to a slow simmer. Skim off excess fat (or cool overnight and remove fat). Refrigerate until needed. Makes approximately 1 quart.

** 1 1/2 T tomato paste
** 1 T tamarind pulp
** 1/2 T shallots,chopped

** 1 1/4 c olive oil
** 1/4 t kosher salt
** 1 ds black pepper
** 1 red onion
** 1 1/2 T balsamic vinegar
** 6 c spinach

Directions:
FOR THE DRESSING:
1. Place the tomato paste, tamarind pulp, shallot, and vinegar in a blender and mix well. Slowly add the oil a drop at a time at first and then in a slow but steady stream until it is all incorporated. Add the salt. Can be kept in the refrigerator for 1 week.

FOR THE ONIONS:
Peel and slice one large red onion thick enough so that you can handle the slices and they will not fall apart when you cook them. Rub them with a little olive oil and cook the onions over a charcoal fire or under a hot broiler until soft. (Approximately 5 to 6 minutes per side.) Toss in a
bowl with 1-1/2 tablespoons balsamic vinegar so that the slices become single rings. These will keep refrigerated 2 to 3 days.

TO ASSEMBLE THE SALAD:
Wash and dry one medium handful (about 1 cup) spinach for each portion and toss with enough dressing to coat each leaf, being careful not to over-dress the salad. Arrange the onions over the salad and serve.

*** Always serve salads on chilled plates.

Ingredients:
Honey Mustard Marinade:
** 1/2 cup Grey Poupon Dijon mustard
** 1/2 cup honey
** 1 1/2 teaspoons vegetable oil
** 1/2 teaspoon lemon juice
Chicken:
** 4 skinless, boneless chicken breast halves
** 1 tablespoon vegetable oil
** 2 cups sliced mushrooms (10−12 mushrooms)
** 2 tablespoons butter
** salt and pepper
** paprika
** 8 slices bacon, cooked
** 1 cup shredded Monterey Jack cheese
** 1 cup shredded Cheddar cheese
** 2 teaspoons finely chopped fresh parsley

Directions:
1. Using an electric mixer, combine mustard, honey, 1 1/2 teaspoons oil and lemon juice in small bowl. Whip mixture for about 30 seconds. Pour about 2/3 of marinade over the chicken breasts and marinate them (covered) in the refrigerator, for about 2 hours.

2. Chill remaining marinade until later. After the chicken has marinated, preheat oven to 375 F and heat up an ovenproof frying pan (large enough to hold all four breasts) with 1 teaspoon of oil over medium heat. If you don't have an ovenproof skillet, transfer the chicken to a baking dish for the baking. Sear chicken in pan for 3−4 minutes per side or until golden brown. Remove the pan from heat, but keep the chicken in the pan. As the chicken is cooking, saute the sliced mushrooms in butter in a small frying pan.

3. Brush each seared chicken breast with a little of the reserved honey mustard marinade (not the portion the chicken marinated in), being sure to save a little extra to serve as a side. Season chicken with salt, pepper, and a dash of paprika. Stack two pieces of cooked bacon, crosswise, on each chicken breast. Spoon the sauteed mushrooms on the bacon, being sure to coat each breast evenly. Spread 1/4 cup Monterey Jack cheese onto each breast, followed by 1/4 cup of Cheddar.

4. Bake the pan of chicken for 7−10 minutes or until the cheese is thoroughly melted and starting to bubble. Sprinkle each chicken breast with 1/2 teaspoon Outback Steakhouse Alice Springs Chicken 323 parsley before serving. Place extra marinade in small bowl to serve on the side.

** 1 T dry sherry
** 1 c dry red wine
** salt & pepper,to taste
** 1 c beef broth
** 4 T parsley, minced

Directions:
1. Remove skin from onions. Cut a thick slice off stem end & discard. Scoop out centers & leave 1/4" shell. Cook onions in boiling water for 4 minutes. Invert on paper towel and drain. Finely chop centers to make 1 cup.

2. Heat 1/2 stick butter in skillet. Add chopped onions, green onions, garlic & tabasco sauce. Saute 5 minutes. Add remaining butter, mushroom ham, parsley, sage & cinnamon. Saute until mushrooms are soft. Add cream, sherry, salt & pepepr to taste. Stir well & cook 5 minutes.

3. Sprinkle onions with salt & pepper to taste; arrange them open side up in a casserole just large enough to hold onions. Divide the stuffing among onions mounding stuffing. Combine wine & broth.

4. Pour enough around onions to reach 1: up sides. Cover with foil & bake at 350 degrees for 1 hour basting twice. Transfer with slotted spoon & garnish with parsley.

Treyzon added that good digestive health improves one's immune system and may reduce the risk for some chronic diseases, such as heart disease and some forms of cancer.

Chicken Sauté With Balsamic-Dried Plum Sauce

Prep time: 10 minutes
Cook time: 25 minutes

Ingredients:
** 2 tablespoons olive oil
** 4 boneless skinless chicken breast halves (about 1 1/2 pounds)
** 1/2 teaspoon salt
** 1/4 teaspoon pepper
** 1/2 cup finely chopped shallots
** 2 cloves garlic, minced
** 1 cup low-sodium chicken broth
** 1/2 cup (about 3 ounces) coarsely chopped California pitted dried plums
** 1/3 cup balsamic vinegar
** 1/2 teaspoon dried thyme leaves, crushed

Directions:
1. In large skillet, heat oil over medium heat until hot. Season chicken with salt and pepper. Place chicken in skillet; cook 10 minutes or until browned and centers are no longer pink, turning once. Transfer to serving platter; keep warm.

1 (2-lb.) piece skinless, boneless pork shoulder (Boston butt)
7 guajillo chiles, seeds removed
3 morita chiles, seeds removed
4 garlic cloves
1/3 cup fresh orange juice
¼ cup fresh lime juice
3 Tbsp. achiote (annatto) paste
1 Tbsp. Diamond Crystal or 1½ tsp. Morton kosher salt
8 (6"-diameter) corn tortillas
4 Tbsp. extra-virgin olive oil
12 oz. quesillo (Oaxaca cheese), coarsely grated
Chopped white onion, coarsely chopped cilantro, and lime wedges (for serving)

Place pork shoulder on a parchment-lined rimmed baking sheet and freeze, uncovered, until almost completely frozen, about 2 hours. Using a very sharp knife, thinly slice pork (shoot for about ?" thick). Transfer to a large bowl.
Meanwhile, bring guajillo and morita chiles and 1 cup water to a boil in a medium saucepan. Cover, remove from heat, and let sit 30 minutes to allow chiles to soften.
Transfer chiles and soaking liquid to a blender. Add garlic, orange juice, lime juice, achiote paste, and salt; purée until smooth. Pour over pork and toss to coat. Cover and let sit at room temperature 2 hours, or chill up to 6 hours.
Place a rack in middle of oven; preheat to 350°F. Evenly space out tortillas on a baking sheet and bake until lightly toasted and very crisp (edges will curl and pucker), 35–45 minutes.
Heat 1 Tbsp. oil in a large nonstick skillet over high until smoking. Spread about one-fourth of pork across skillet in a single layer; cook, undisturbed, until browned underneath, about 2 minutes. Turn over and cook, undisturbed, until browned underneath and cooked through, about 2 minutes. Transfer to a platter and wipe out skillet. Working in 3 batches, repeat process with remaining pork and 3 Tbsp. oil.
Increase oven temperature to 500°F. Divide pork among tostadas and top with quesillo; bake until cheese is melted, 8–10 minutes. Top with onion and cilantro and serve with lime wedges.

Ingredients:
** 2 c Dijon mustard
** 3 TB Ancho chile powder

Directions:
1. In a blender, puree, garlic, bay leaves, jalapenos, salt and 1 tablespoon of the vinegar until a paste is formed. Transfer to a mixing bowl and add the herbs. Whisk in the remaining vinegar and olive oil until smooth. Add ribeye steaks and let marinade for one hour.
2. Prepare a wood or charcoal grill and let it burn to embers. Remove steaks from marinade and grill steaks until done to your liking, about 4 minutes on each side for medium rare. Serve with chile mustard to taste.
3. Red Chile Mustard: Combine the mustard, Ancho chile powder, and 3 tablespoons of lukewarm water and mix well. May be prepared up to one week ahead and refrigerated.

Bring to room temperature before serving.

** 4 T butter
** 2/3 c pecans
** 1 lemon,juice
** 1 T flour
** 1/2 t salt
** 2/3 c brown sugar
** 6 c apples,sliced
** 1/3 c brown sugar,firmly packed
** 1 1/4 c white sugar
** 1/2 t nutmeg

PIE CRUST
** 2 3/4 c flour
** 1 1/2 t salt
** 1 T vinegar
** 1 c lard
** 1 egg
** water

Directions:
1. Cut lard into the flour & salt mixture Beat one egg in a cup and add 1 TBSP of vinegar & finish up with water to 1/2 cup.
2. Add egg mixture to the flour mixture & form into a ball to be rolled out.
3. In a 9 or 10" pie plate spread evenly butter & brown sugar which have been combined. Arrange pecan halves in design, pressing into the sugar.
4. Roll out & cover with plain pastry made as above. Trim pastry leaving 1/2" hanging over all around.
Filling: Combine all dry ingredients with apples & lemon juice. Pile on pastry, leveling as much as possible. Cover the filling with the second crust. Fold bottom crust over top crust wetting edge of top as you go. Flute edges and prick the top crust.
5. Bake at 450 degrees for 10 minutes. Reduce heat to 350 degrees and bake 30-45 minutes longer. When syrup in pan stops bubbling, place serving plate over pie and invert. Remove pie plate.

Serve with vanilla ice cream.

5. Drain the vegetables. Melt the butter in a skillet and when quite hot but not brown, add the vegetables. Cook over relativly high heat, shaking the skillet and stirring the vegetables.

1/3 cup light brown sugar
1 teaspoon ground cinnamon
Bread Loaf
1/2 cup butter softened
2/3 cup granulated sugar
2 eggs room temp

1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk or almond milk room temp
Chopped Apple Mixture
2 large apples any kind, peeled and chopped small, but not fine. Then toss apples with 2 tablespoons granulated sugar and 1 teaspoon cinnamon just before adding it to the bread mixture.
Old-Fashioned Creme Glaze
1/2 cup of powdered sugar
1-3 tablespoons of milk or cream- depending on thickness of glaze wanted.


Preheat oven to 350 degrees. Use a 9x5-inch loaf pan and spray with non-stick spray or line with foil and spray with non-stick spray to get out easily for slicing.
Mix 1/3 cup brown sugar and 1 teaspoon cinnamon together in a bowl. Set aside.
Combine & whisk 1 & 1/2 cups flour and 1 & 3/4 teaspoons baking powder together in another bowl and set aside.
In another medium-sized bowl, beat 2/3 cup granulated sugar and 1/2 cup softened butter together using an electric mixer until smooth and creamy.
Beat in 2 eggs, one at a time until blended in; add in 1 & 1/2 teaspoons vanilla extract and mix in.
Add the flour mixture into creamed butter mixture and mix until blended.
Mix 1/2 cup milk into batter and continue mixing until smooth.
Pour half the batter into the prepared loaf pan; add half the chopped apple mixture with the sugar and cinnamon added in.
Sprinkle 1/2 of the brown sugar/cinnamon mixture you set aside earlier, on top of apple layer.
Pour the remaining batter over apple layer and top with remaining chopped apples, then the remaining brown sugar/cinnamon mixture.
Lightly pat apples into batter; swirl brown sugar mixture through apples using knife or spoon.
Bake in the preheated oven until a toothpick inserted in the center of the loaf comes out clean, approximately 60 minutes.
To make glaze, mix 1/2 cup powdered sugar and 1 to 3 tablespoons milk or cream together until well mixed. (Place mixture in microwave for 10 seconds to get it pourable if it needs a boost.)
Let loaf rest in pan for about 15 minutes before removing from pan to let cool off completely on a cooling rack. Drizzle with glaze.

Note
If you want more glaze, make a double batch.
For more apple fritter style like the apple fritter donut- use more milk for a thinner glaze that you can pour over the whole loaf.

** 1 tsp chili powder
** 1/4 cup water
** 1 diced bell pepper

Directions:
1. Place stew meat, 1/4 cup water, salt and pepper in crockpot. turn heat to high and let simmer for 1 1/2 hours. Drain juice from tomatoes into measuring cup. Add tomoatoes garlic and onions to crock pot STIR let simmer on high for 30 minutes.

2. Add cumin, oregeno, and chili powder to crock pot and stir. Blend juice and enough water to equal 1 1/2 cups liquid and flour stir into meat/veggie mixture.

3. Let cook on LOW for 3-4 hours until sauce is nice and thick (if you like runnier gravy three hours is good) Serve with warm flour tortillas.
