eggs are high on Tracey’s comfort food list, along with grilled cheese

and a cheese omelet. One day, when she couldn’t choose between them, she

made these cheesy eggs.



They are so good that perhaps your kids will clean

their rooms in order to have them. We use two eggs each, but if you are

cooking for little ones, 1 egg each and 1⁄2 of the remaining ingredients will be more than enough.



1/2 tablespoon unsalted butter

4 large eggs

3/4 cup shredded (packed) extra-sharp Cheddar cheese (3 ounces)

1 ripe medium tomato, cut into

1/3- inch dice




Kosher salt and freshly ground black pepper



1.Preheat the broiler with the rack set in the highest position.



2.Melt the butter in a medium nonstick or well-seasoned cast-iron skillet over medium heat.



Crack the eggs and add to the pan, spacing as best you can. Sprinkle the cheese and diced tomato on top around the yolks.



Cook until the bottom of the eggs is just firm enough to slip a spatula under, 1 to 2 minutes.



3.Transfer the skillet to the broiler and cook until the cheese is bubbly and the tops of the eggs are just set, 2 to 3 minutes (depending on the intensity of

your broiler). Season with salt and pepper.



Cooks’ Notes



✤ To keep the yolks a little runny, broil the eggs as soon as they are set on

the bottom. For six to eight eggs, use a larger skillet and a little more butter, cheese, and tomato. The cooking time will be about the same.

Hello every one :D



This is a great way to make use of fresh or day-old sliced brioche or challah

bread; the thick slices of golden toast are like puffy cinnamon- vanilla soufflés. Top with warmed maple syrup or sautéed fresh fruit.

4 large eggs

3/4

cup low-fat milk

1/2 teaspoon cinnamon

Dash of pure vanilla extract

Four 1-inch- thick slices brioche or challah bread (8 ounces)

2 tablespoons unsalted butter

1.In a large, wide bowl, combine the eggs, milk, cinnamon, and vanilla. Add all of the bread slices, turning to coat and stacking in two layers.

Let soak for about 2 minutes, turning and restacking the slices.



2.Meanwhile, melt 1 tablespoon of the butter in a nonstick large skillet over medium heat until the butter begins to sizzle.

Carefully remove the bread slices from the bowl and place them in the skillet.



Let cook on medium heat until golden brown underneath, about 4 minutes.



3.Turn the slices, add the remaining tablespoon of butter to the center of the skillet, and cook until the toasts are nicely golden on the other side and springy to the touch, about 3 minutes longer.

Juice of 1 Lemon

Longhorn Prairie Dust (Recipe here)

Ranch Dressing



Directions:



Fry shrimp in large skillet according to package directions.



Drain and pat dry with a paper towel.



Place stick of butter in a large saucepan with juice of 1 lemon. Heat over medium low heat until butter is melted.



Add fried shrimp, cherry peppers and 1 1/2 teaspoons Prairie Dust mixture.



Mix together and simmer on low heat until flavors mix, about 5 minutes.



Transfer to serving dish and serve with ranch dressing.

1 (15 ounce) can black beans, rinsed and drained

1/4 cup quinoa

1/2 cup water

1/2 cup bread crumbs

1/4 cup minced yellow bell pepper

2 tablespoons minced onion

1 large clove garlic, minced

1 1/2 teaspoons ground cumin

1/2 teaspoon salt

1 teaspoon hot pepper sauce

1 egg

3 tablespoons olive oil



Bring the quinoa and water to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer

until the quinoa is tender and the water has been absorbed, about 15 to 20 minutes.

Roughly mash the black beans with a fork leaving some whole black beans in a

paste-like mixture.

Mix the quinoa, bread crumbs, bell pepper, onion, garlic, cumin, salt, hot pepper

sauce, and egg into the black beans using your hands.

Form the black bean mixture into 5 patties.

Heat the olive oil in a large skillet.

Cook the patties in the hot oil until heated through, 2 to 3 minutes per side.

Panera Bread Honey Walnut Cream Cheese Spread

1 8 ounce package of Neufchatel cream cheese

1 tablespoon honey

1 teaspoon molasses

1 tablespoon brown sugar

1/4 teaspoon cinnamon

1 tablespoon of chopped walnuts



If desired toast nuts by placing in a skillet over medium heat. Heat just until the walnuts become fragrant. When the walnuts become fragrant remove from the skillet. Watch the skillet closely, there is a short time between the nuts being toasted and burnt. Allow the nuts to cool completely.



In a small bowl combine room temperature cream cheese, honey, molasses, brown sugar, and cinnamon. Stir cream cheese until all of the ingredients are well blended. Chop walnuts and stir into the cream cheese.



Store in an air-tight container in the refrigerator.

Even though Parente calls this "a very different and fantastic film," you get the impression that he’s heading down the wrong track when he consistently says that The Skeleton Twins was "the talk of the festival" at the Toronto International Film Festival. Except The Skeleton Twins didn’t play Toronto. Simple mistake, and if Parente stopped there, he might have avoided viral video-dom. But he didn’t.

As someone who fears making a mistake on live television, Bill Hader’s question gives me spinal chills: "Did you see this film? Chris?!"The Skeleton Twins, which I’ve seen, is a terrific little offbeat drama that soars on the chemistry of Wiig and Hader as dysfunctional siblings who have drifted apart and realize they are still woefully broken when they try to reunite. It isn’t as funny as the above video, but it has a killer lip-synch karaoke version of Jefferson Starship’s Nothing’s Gonna Stop Us. And for that alone, you need to see it if it reaches a theater near you.

When it comes to making a Boardwalk style fry, the creators of Five Guys burgers and fries have doing it as well as anybody, including the folks that actually do it on the Boardwalk, since 1986. What is a Boardwalk style fry?



These fries have some characteristics that help them stand apart from typical fast-food offerings; first, they are made using 100% pure peanut oil, which gives them a very distinct flavor that cannot be achieved using any other cooking oil. Before you start to panic about peanut allergies, just know that highly refined peanut oil has had the allergy causing proteins removed. Of course, always check that any peanut oil you would use falls into this category before you proceed with the cooking process.



Boardwalk fries, at least the ones being served up at any local Five Guys location, are not served ‘crispy.’ I know, this flies directly in the face of what people have come to expect with restaurant fries, considering that most of us were practically raised on McDonald’s fries. Crispy does not necessarily mean flavorful, so suspend your disbelief for a moment. Five Guys fries are cooked until they are firm to the touch on the outside, with a baked potato-like consistency on the inside. They may come out of the deep fryer with a crispness to them, but they won’t stay that way for long.





Once they hit the fry dump station, they are lightly dusted with salt, and then Cajun spices can be added for flavor and spice, but the heat won’t kill you. The Cajun spice blend used to make Five Guys Cajun fries is a rather mild and mainstream selection, and right now I believe they are using a product from McCormick, but purveyors may change with the times. Cajun spice mix is rather pricey, so be sure they add as much as they are supposed to, which is quite a bit. The Cajun fries at Five Guys are spicy, but you can also order them with light seasoning, or even with the Cajun seasoning on the side, it’s up to you.



If you want to know how to make Five Guys fries at home, then you’ll need to have some very basic equipment and ingredients. A deep fryer and a potato cutter will be needed for prep. These gadgets can be purchased rather cheaply at Amazon, but take care to purchase quality over low price, as this is important for the longevity of the gadgets.



Next, you’ll need 100% peanut oil, sea salt, and Russet potatoes from either Idaho or Washington State. There are no other potatoes that will give you the Boardwalk feel like Russet potatoes will, and they are so damn cheap, why would you pay more for an inferior potato?



Cut the potatoes with your cutter, and then soak them in ice-cold water until the water runs completely clear. This will wash away all the excess starches that could lead to soggy, limp fries. You will have to drain the sink a few times to achieve this, but if you skip this step you will be disappointed with the fries, I guarantee it!



Set the fryer temperature to 345-350 degrees. Once your fries have been soaked to perfection for at least 15 minutes, then you can drop a basket of them in the oil, and fry them until they just start to turn from translucent color to a VERY light brown. You can lightly squish one of the fries to see if it passes the ‘smush test,’ which means that this stage of the frying is complete. Yes, there are two stages involved with cooking a Five Guys fry.



Once the fries have rested for at least 5-10 minutes, and no more than a few hours, you can then fry them to your desired done-ness. You can go by the color of the fry, but Russet potatoes can be funny to work with in this way, as color doesn’t always give the best indication of done-ness. Instead, I recommend checking to see if the fries are floating at the top of the oil, as this will usually mean that they have reached a level of done-ness that you can be happy with. Also, it’s important to note that you need to occasionally shake the fries a bit to ensure that they don’t stick together, but soaking the fries helps to eliminate that worry.

Hammy Egg Maple Bagel

1 tablespoon butter, divided

1 plain bagel, split

4 slices ham

2 eggs

salt and ground black pepper to taste

2 slices American cheese

2 tablespoons maple syrup



Heat 1 1/2 teaspoons butter in a skillet over medium heat; arrange bagel halves, cut sides down, in the melted butter. Cook until bagel is very slightly toasted and softened, 1 to 2 minutes per side. Transfer bagel to a plate.

Cook ham slices in the same skillet until heated through, 1 to 2 minutes. Arrange 2 ham slices onto each bagel half.

Heat remaining 1 1/2 teaspoons butter in the same skillet; cook eggs in the melted butter until whites are set but yolks are still runny, about 3 minutes. Gently flip eggs and cook until whites are set, about 1 more minute. Season eggs with salt and pepper. Layer eggs and American cheese slices onto 1 bagel half; top with the second bagel half, creating a sandwich.

Place bagel sandwich back in the skillet and cover with a lid; heat until cheese is melted, about 45 seconds per side.

Transfer bagel sandwich to a plate; drizzle with maple syrup.

1 (3.5-ounce) bag boil-in-bag brown rice

2 tablespoons butter, divided

1 pound chicken breast cutlets (about 4 cutlets)

3/4 teaspoon salt, divided

1/4 teaspoon freshly ground black pepper

1/2 cup refrigerated apple cider

1 teaspoon Dijon mustard

1/4 cup chopped pecans

2 tablespoons chopped fresh flat-leaf parsley



Cook rice according to package directions in a small saucepan, omitting salt and fat; drain.

While rice cooks, melt 1 teaspoon butter in a large heavy skillet over medium-high heat.

Sprinkle chicken with 1/4 teaspoon salt and pepper. Add chicken to pan; cook 3 minutes on

each side or until done. Remove from pan. Add cider and mustard to pan, scraping pan to

loosen browned bits; cook 2 to 3 minutes or until syrupy. Add chicken to pan, turning to

coat. Remove from heat; set aside.

Melt remaining 5 teaspoons butter in saucepan over medium-high heat; cook for 2 minutes

or until browned and fragrant. Lower heat to medium; add pecans, and cook for 1 minute

1/2 cup slivered almonds, toasted

2 cups all-purpose flour

3 tablespoons sugar

1 1/2 teaspoons table salt

1/2 cup cold butter, cubed

1/4 cup cold vegetable shortening, cubed

3 tablespoons ice-cold water

3 tablespoons vodka, chilled

TOPPING

1 cup fresh blueberries

1 cup fresh blackberries

2 tablespoons sugar

2 teaspoons lemon zest

1 tablespoon fresh lemon juice

1/4 teaspoon almond extract

FILLING

1/3 cup sugar

3 tablespoons all-purpose flour

1 tablespoon fresh lemon juice

2 cups fresh blueberries

2 cups fresh blackberries

2 tablespoons butter, cut into pieces

ADDITIONAL INGREDIENTS

1 large egg, beaten

1 tablespoon sugar

Honey Sour Cream (optional)

1. Prepare Crust: Pulse almonds in a food processor 15 times or until finely ground. Stir together ground almonds and next 3 ingredients in a bowl. Cut cold butter and cold shortening into flour mixture with a pastry blender until mixture resembles small peas. Gradually stir in ice-cold water and vodka just until dry ingredients are moistened. (Add up to 2 Tbsp. ice-cold water, if necessary.) Shape into a disk. Wrap in plastic wrap; chill 3 to 24 hours.

2. Meanwhile, prepare Topping: Toss together 1 cup blueberries and next 5 ingredients. Let stand, stirring occasionally, 30 minutes. Cover and chill until ready to serve.

3. Unwrap chilled dough, and place on floured parchment paper; sprinkle with flour. Roll to a 14- to 15-inch circle. Carefully transfer dough and parchment paper to a jelly-roll pan.

4. Prepare Filling: Stir together 1/3 cup sugar and next 2 ingredients in a large bowl; stir in 2 cups each blueberries and blackberries. Spoon mixture into center of dough, leaving a 2 1/2-inch border around edges; dot with butter. (Do not make filling ahead or it will become too juicy.) Fold edges of dough around fruit, pleating as you go and sealing cracks. Brush dough with beaten egg, and sprinkle with 1 Tbsp. sugar. Freeze 15 minutes.

5. Preheat oven to 425°. Bake on lower oven rack 30 to 35 minutes or until crust is golden. Transfer to a wire rack; cool 30 minutes. Serve with Honey Sour Cream, if desired.

eat fresh - they don't last -



1 1/4 cups all-purpose flour

2 tsp baking powder

1/4 tsp salt

1/4 cup milk

1/4 cup buttermilk

1/4 cup granulated sugar

3 Tbsp melted butter

2 cups vegetable oil, for frying

Granulated sugar, cinnamon sugar or powdered sugar, for coating







Preheat oil over medium heat in a 10 inch non-stick fry-pan (keeping an eye on it as it is heating). In a small mixing bowl, whisk together flour, baking powder and salt. In a medium mixing bowl, whisk together milk, buttermilk, sugar and melted butter. Using a fork stir in dry ingredients and mix just until combine (think of making biscuit dough, you just want to incorporate the ingredients).

Once the oil has reached 350 degrees, measure out 1/2 tablespoonfuls dough and using your hands gently roll into a ball (gently rolling to keep them fluffy, think of rolling something really fragile. Again this is like a biscuit dough you don't want to overwork it). Gently place dough ball into oil and fry until golden brown on bottom then flip and cook reverse side until golden brown. Carefully remove with metal tongs or a fork and drain onto a paper towel lined plate. Roll in sugar.




Chicken with Quinoa and Veggies

1 cup rinsed quinoa

2 cups chicken broth

2 tablespoons extra-virgin olive oil

2 garlic scapes, chopped

1 small onion, chopped

2 skinless, boneless chicken breast halves - cut into strips

2 tablespoons extra-virgin olive oil

1 zucchini, diced

1 tomato, diced

4 ounces crumbled feta cheese

8 fresh basil leaves

1 tablespoon lime juice



Bring the quinoa and chicken broth to a boil in a saucepan; reduce heat to a simmer

and cover the pan. Simmer until the broth is absorbed, the quinoa is fluffy, and the

white line is visible in the grain, about 12 minutes.

Heat 2 tablespoons of olive oil in a skillet; cook and stir the garlic scapes and

onion until onion is translucent, about 5 minutes. Stir in the chicken breast strips

and cook until the chicken is still slightly pink in the middle, about 5 more minutes.

Remove the chicken meat and set aside. Pour 2 more tablespoons of olive oil in the

skillet and cook and stir the zucchini and tomato until the zucchini is tender, 5 to

8 minutes. Return chicken to skillet and sprinkle with feta cheese, basil leaves,

and lime juice. Cook until the chicken is fully cooked and hot, about 10 more

minutes. Serve over hot quinoa.

Chicken and Dressing Casserole

2 large chicken breasts or 6 thighs

3/4 cup Red bell pepper

1/4 cup melted margarine

1 6-8 oz box/bag stuffing

1 can cream of mushroom soup

1/2 teaspoon Salt

1/2 teaspoon Freshly ground black pepper

1/4 cup Parsley flakes

3/4 cup Cheddar cheese grated



Cook chicken in water with salt and pepper. When chicken is done remove chicken

from broth and let cool. Once cooled cut into bite size pieces.



Reserve 1 1/2 cups of broth and mix with ream of mushroom soup.



In medium size bowl mix box/bag dressing mix with 1/4 cup of melted margarine



Using an 8×8 casserole dish, layer 1/2 of dressing mix covering the bottom of dish.

Sprinkle half the chicken pieces, cheese and parley as next layer. Using the rest

of the dressing mixture sprinkle on top of chicken layer and then place rest of

chicken, peppers and parsley on this layer. Pour the soup mixture over the entire

casserole and bake for 30 minutes at 350.

Whether Michael Bay comes back for another Transformers film or not, it looks like the series is keeping even Optimus Prime himself in the dark on the adventure to come. 10 red chiles (such as red jalapenos, thai chiles, habaneros) process in food processor to mash (wash, stem and seed – if you want a milder chili paste remove all seeds)

add one clove of garlic or a 1/2 to 1 tsp of minced garlic



add a teaspoon or so of sugar

add a dash of salt

pour in a teaspoon or two of distilled vinegar



Process/pulse all ingredients mixing well to desired consistency.



Adding red sweet bell pepper will keep the chili paste on the milder side.



Depending on the recipe – you can add lemon or lime juice, balsamic vinegar, barbecue sauce, mustard powder, paprika

Frosting



1/2 cup milk

2 cups good-quality semisweet chocolate chips



3/4 cup caramel



1 1/2 cups toasted pecans







Preheat oven to 350 degrees. Grease 3 (9-inch) cake pans. Cover each bottom with disk of parchment paper.



In bowl, combine egg, oil and buttermilk. In large separate bowl, mix together flour, sugar, cocoa, salt and baking soda. Gradually add wet ingredients to dry until well mixed. Gradually add hot coffee. Scrape batter into prepared pans.



Bake for 25 to 30 minutes, or until toothpick inserted into center comes out clean. Let cake rest in pans for 10 minutes. Turn out onto wire racks to cool.



To make frosting



Mix sugar and milk in saucepan. Add butter. Bring to a boil. Remove from heat. Add chocolate chips to pan. Using wire whisk, mix until smooth. If frosting is too thick or grainy, add 1 or 2 teaspoons hot coffee.



To assemble cake



Place one cooled cake layer, top-side down, on cake plate. Spread with one-third of frosting, pushing it out gently from edges to make a petal effect. Sprinkle with 1/2 cup pecans, Drizzle with 1/4 cup caramel. Add next layer, again top-side down. Repeat frosting and sprinkle with 1/2 cup pecans and drizzle with 1/4 cup caramel. And final layer top-side up, frost with petal effect and finish with remaining pecans and caramel.

1 (10-3/4-ounce) can condensed tomato soup

1 1/2 cup water

3/4 cup raw brown or white rice

Preheat oven to 350 degrees F.



Brown beef in a skillet and drain fat. Add onion and saute until translucent. Add soup, water, and rice, cover and let simmer for 10 minutes.



Spread cabbage in bottom of a 9 x 13-inch casserole dish. Layer beef mixture on top, spread evenly but don't stir.



Cover and bake for 1 hour and 20 minutes, or until rice is cooked. If desired, sprinkle cheese on top and bake for another 10 minutes.

8 ounces cream cheese, softened

3/4 cup powdered sugar

For the Topping (optional):

2 tablespoons butter, melted

1/4 cup brown sugar

1 teaspoon cinnamon







Preheat oven to 350 degrees F.



Once cinnamon rolls have risen, spray an 8 x 8 inch pan with cooking spray. Arrange 4 cinnamon rolls in the pan and press them down a bit to mostly cover the bottom.



In a medium bowl, beat together the cream cheese, powdered sugar and vanilla until smooth. Spread the cream cheese mixture over top the cinnamon rolls.



Place 4 more cinnamon rolls on top the cream cheese mixture and lightly press down so they mostly reach to the edges of the pan.



If you'd like to use the optional brown sugar topping, combine butter, brown sugar and cinnamon in a small bowl. Sprinkle the mixture on top of the cinnamon rolls.



At this point, you may choose to cover and refrigerate overnight to bake in the morning





Bake for 20 - 25 minutes or until the top is nice and brown. Remove from the oven and let cool slightly. Pipe the icing over top, and cut into 4 large pieces or 8 small pieces.

6 slices bacon

1 C mushrooms, sliced

1 C onion, diced

1 T butter

4 slices American cheese

2 hamburger buns

Mayo, mustard, ketchup, etc



Heat oven to 425 degrees F. Place the bacon on a baking sheet and bake until crispy, about 10 minutes.

Place the butter in a saute pan over medium heat. Add the mushrooms and onions and saute until caramelized, about 10 minutes. Remove from heat.

Make 4 patties out of the ground beef.



Heat a griddle to medium heat and place the patties on the hot surface. Season with salt and pepper. Cook until edges are cooked. Flip and cook another few minutes, until the burgers are done throughout.

To assemble the burger, place the bottom half of bun on a plate. Add mayo, mustard, or other condiments. Place a burger, top with cheese, then another burger and cheese. Top with bacon and sauteed veggies. Place the top of the bun on the burger.

Repeat with remaining ingredients.

Serve hot!

16 tbsp. unsalted butter, plus more for greasing

8 oz. bittersweet chocolate, cut into ¼" pieces

4 eggs

1 cup sugar

½ tsp. fine salt

1 cup flour







1. Heat oven to 350°. Grease a 9" x 13" baking pan with butter and line with parchment paper; grease paper. Set pan aside.



2. Pour enough water into a 4-quart saucepan that it reaches a depth of 1". Bring to a boil; reduce heat to low. Combine butter and chocolate in a medium bowl; set bowl over saucepan. Cook, stirring, until melted and smooth, about 5 minutes. Remove from heat; set aside.



3. Whisk together eggs in a large bowl. Add sugar, brown sugar, vanilla, and salt; whisk to combine. Stir in chocolate mixture; fold in flour. Pour batter into prepared pan; spread evenly. Bake until a toothpick inserted into center comes out clean, 30–35 minutes. Let cool on a rack. Cut and serve.

1/4 teaspoon nutmeg

½ cup (1 stick) unsalted butter, at room temperature, cut into small pieces

¾ cup sugar

1 and ½ teaspoons vanilla extract

2 large eggs

½ cup milk

1 cup banana, smashed (about 3 ripe)

1 cup white chocolate chips

½ cup chopped Pecans



1. Preheat oven to 350°. Place paper liner in a 12-cup cupcake pan or mini-muffin cups in a 24-cup pan.

2. Whisk flour, baking powder, salt, cinnamon, ginger, nutmeg, and cloves together in a small bowl until combined; set aside.

3. In a large bowl, using a hand mixer set on medium-high speed, beat butter until creamy (about two minutes). Add sugar gradually, beat until light and fluffy for two more minutes. Beat in vanilla extract.

4. Beat in eggs one at a time, scraping down after each addition. Add the flour mixture in four additions, alternating with milk. Begin and end with the flour mixture and beat until smooth on low-medium speed after each addition. Beat in banana just until incorporated. Stir in pecans and chips. Fill cupcake liners 3/4 full.

5. Bake 18-20 minutes for regular size muffins or 14-15 minutes for minis, until a toothpick inserted in the center comes out clean. A crumb or two on the toothpick is fine.

6. Cool in pan for 5-10 minutes than remove to wire racks. Cool completely before frosting.

8 ounces cream cheese, at room temperature

4 tablespoons butter, at room temperature

1 teaspoon vanilla extract

1 teaspoon cinnamon

2-2 and 1/2 cups confectioners’ sugar

1-2 tablespoons Milk

1. Beat the cream cheese until fluffy, about two minutes.

2. Add butter and beat another minute. Add vanilla extract and cinnamon, beat in.

3. Add confectioners ½ cup at a time. Add in a tablespoon milk. Add sugar and milk in small amounts, beating in between until you get the right consistency. Beat an additional two – three minutes until frosting is light and fluffy.

3 cups cake flour (not self-rising)

1 teaspoon salt

1 teaspoon baking powder

1/2 teaspoon baking soda

1 cup butter, at room temperature

2 cups granulated sugar + 1/4 cup for sprinkling in pan

4 large eggs, at room temperature

1/4 cup sour cream

2 teaspoons vanilla extract

1 cup buttermilk

1/4 cup coconut flakes



Glaze:



2 cups confectioners' sugar

1/4 cup melted butter

2 - 3 tablespoons heavy cream or whole milk, as needed

1/2 teaspoon pure vanilla extract

1/4 cup coconut flakes

1/4 cup sliced almonds









Preheat the oven to 350 degrees F. Butter and flour a tube or bundt pan.

Sift together the flour, salt, baking powder and soda. Set aside.

In a separate large bowl beat butter on medium speed until fluffy about 2 minutes. Add sugar and beat 3 more minutes until light and fluffy.

Beat in eggs one at a time. On the lowest speed beat in sour cream and vanilla.

On the lowest speed mix in 1/3 of the dry ingredients followed by 1/2 the buttermilk then repeat ending with the the last third of the flour. Don't over mix or your cake will be dense!

Sprinkle the 1/4 cup of sugar over the bottom of the pan and shake so the sugar goes up the sides 2 - 3 inches. Sprinkle with the coconut flakes.

Scoop the batter into the pan and spread evenly. Bake 55 - 65 minutes or until a wooden skewer in center comes out clean.

Cool the cake in the pan on a wire rack 10 minutes, then carefully turn out onto a cake dish or platter. Cool completely.

To make the glaze whisk the confectioners' sugar, butter, milk and vanilla together. The glaze should run off your whisk when lifted. If needed add more milk to thin it out.

Poke holes all over the top of the cake 1/2-inch apart using a skewer or toothpick. Slowly spoon the glaze over the top. Sprinkle with coconut and almonds.

1 French deli roll, split

1 teaspoon balsamic vinegar

2 slices mozzarella cheese

1 small tomato, sliced

4 fresh basil leaves

olive oil



Preheat a skillet over medium-low heat.

Sprinkle cut sides of roll with balsamic vinegar. Layer one slice of mozzarella cheese,

tomato slices, basil leaves, and the remaining slice of mozzarella cheese on the roll.

Close sandwich; rub outside with olive oil.

Place sandwich in preheated skillet; top with another heavy skillet to press. Cook

until bread is toasted and golden, about 3 minutes. Flip sandwich; top with skillet.

Cook second side until toasted, about an additional 2 minutes.

1 Box Chocolate Cake Mix

3/4 Cup Butter, melted

1/3 Cup Evaporated Milk

1/2 Bag Large marshmallows, cut in half

1 1/2 bags mini Reese's Peanut butter cups



Chocolate Frosting

2 1/2 Cups powdered sugar

2 tablespoons unsalted, softened butter

1 1/2 tablespoons cocoa

up to 1 tablespoon heavy cream if too thick

pinch of salt







Heat the oven to 350 degrees.

In a mixing bowl, mix together the cake mix, butter and evaporated milk. Spoon into a greased mini muffin tin, about 3/4 full. Bake for 8 to 10 minutes or until almost completely set. Remove from the oven and press in a reese's and top with half a marshmallow. Place back in the oven for an additional 2 to 3 minutes being careful to watch the marshmallows. Allow to cool and frost.





Chocolate Frosting

In a large bowl, using a hand mixer, mix together the butter, powdered sugar, cocoa, salt and heavy cream until smooth but still stiff. Frost the brownies and enjoy!




Cheesy Ramen Noodles

This is very popular with college students, and anyone on a tight budget. May be the cheapest comfort food on the planet!



I made this yesterday, and it was actually good. I used grated cheddar, butter, frozen veggies, ham, milk and hot sauce. I made just enough for the 2 of us by using 2 bags of noodles with only one seasoning packet.



2 cups water

1 package chicken ramen noodles

1 slice American cheese or equivalent of your favorite cheese

or use cheese dip, Velveeta or cheese whiz

A little milk or sour cream for creaminess optional



Bring water to a boil in a saucepan. Add Ramen noodles and cook 2 minutes until tender.

Pour out water, then stir in seasoning packet and cheese to serve. If you are concerned

about too much salt use only half the packet, and you still get the chicken flavor. You

need to add the milk if the consistency is too thick.



Use your imagination!



You can add an egg to the boiling water to get your protein. Or add ham chunks, cooked crumbled bacon or ground sausage. Some folks like cut up hot dogs.



You can add butter, hot sauce, frozen veggies or whatever you like. Eat it with Ritz

or saltine crackers, or crush the crackers and pour over. You can also use these noodles in a stir fry.







Cooking for first time, need help with some recipes

Now that I won't be eating out of my school cafeteria, I'm trying to not fall into the trap of eating everything prepackaged or from a restaurant. I've cobbled together some recipes after looking online for inspiration. The reason I'm tending to use my own creations rather than simply copying other recipes I find is that I don't care for sauce or vegetables (other than garlic) in general. The vegetables that I've added to the recipes below are simply for added nutrition, they'll all simply be chopped and then boiled before being mixed in so as to minimize their flavor. Except garlic, which will generally be chopped and raw. With that in mind, I'm mainly looking to make sure that my proportions for ingredients make sense, and also very open to suggestions for seasonings. Right now I tend to just put basil on everything, but I'm looking to broaden my horizons. Rosemary? Oregano? Tarragon? Thyme? Paprika? These and other things are mysterious to me, but I'd love to learn about them! Also, I'm open to suggestions on what sort of cooking oil to use in all of these. A friend recommended poppyseed oil as their favorite for general use, would that be a good idea?



Lemon garlic salmon/halibut

Broil quarter pound fillet in skillet until done

Over low heat, brush 1 tablespoon lemon juice and 1 tablespoon oil, allow 2 minutes for it to sink in

Still over low heat, add finely chopped garlic and seasonings (teaspoon of basil and what else?)

Melt butter over fillet after seasoning complete



Brown rice with chicken and veggies

Cook 1.5 cups brown rice in unsalted water

Broil .5 cups of cut chicken breast

Boil .25 cups of kale, spinach, peas, carrots, broccoli, and green beans

Finely chop 2 cloves of garlic

Combine ingredients in wok, toss over low flame, adding 1 tablespoon soy sauce and .5 tablespoon of oil

Add seasonings (but what?)



Bacon, vegetable, and egg scramble

Scramble 2 eggs with 2 diced strips of bacon, a half cup of spinach, a diced potato (2.5" diameter), and a teaspoon each of salt, pepper, basil, and other seasonings?

As eggs finish, add 1 clove diced garlic

Gently toss with garlic in pan for 30 seconds, serve



Meat and veggie spaghetti

Boil 1.5 cups noodles

Cook .25 cup chicken and 2 strips of bacon

Boil .5 cups of broccoli and spinach

Over medium flame, toss ingredients, melt in pat of butter

Over low flame, add 2 cloves finely diced garlic, 2 tablespoons parmesan, 1 tablespoon oil, and seasonings



Thoughts? Be gentle. :oops:



Edit: I'd also love to integrate some sea vegetables into my diet somehow, just for some variety, but I have no experience with them.

Banana-Almond Butter French Toast Sandwiches

2 large eggs

1/4 cup unsweetened almond milk

2 teaspoons vanilla extract

1/4 teaspoon ground cinnamon

2 tablespoons almond butter

4 teaspoons maple syrup

1 banana

4 (1.5-ounce) slices multigrain bread

Cooking spray



1. Crack eggs into a shallow bowl. Add almond milk, vanilla extract, and cinnamon; stir with a whisk to combine.

2. Combine almond butter and maple syrup in a small bowl. Cut banana lengthwise into 4 thin slices; cut crosswise

into halves. Spread almond butter mixture evenly across bread slices. Top 2 bread slices with 4 banana pieces.

Place remaining 2 bread slices over banana, sandwiching almond butter and bananas inside.

3. Heat a panini press to 425° or high heat. Dip sandwiches in egg mixture, and let excess drip off. Lightly coat

grill plates of panini press with cooking spray, if needed. Arrange sandwiches on press. Close panini press,

pushing down gently to flatten. Cook 3 to 4 minutes or until sandwiches are browned on the outside and hot in the center.

4. Place sandwiches on a cutting board. Cut in half diagonally. Serve hot.

The Identical (Predicted: 39% Actual: 4%) will probably go down as one of the worst, widely-released movies of the year. A 4% with over 50 reviews in the books is abysmal. Honestly, I should have seen this coming considering the release date. Movies that hit the screens around Labor Day are usually a studio bottom feeder and they get buried in the end-of-summer time period because everyone is outside enjoying the sun. And yet I shot a prediction close to the middle and got crushed. I’ll keep it in mind next year.

Watch Teenage Mutant Ninja Turtles Online The performance (which comes to us thanks to YouTube user BJMallory)was an unnanounced event at Michigan’s Wheatland Music Festival, which is actually strangely far away from where the Hank Williams biopic, titled I Saw The Light, will be filming (the production is all set to go down in Louisiana). For those of you who don't recognize the tune, Hiddleston is singing Williams' hit "Move It On Over," which the singer-songerwriter first wrote and performed all the way back in 1947. While the video above doesn't feature Hiddleston singing the entire track, you can still compare it to the Williams studio recorded version below:

It’s tough to know how this flick will score with critics. We’ve got Sam Miller as director, a dude whose resume is primarily filled with television. Good television mind you, but television nonetheless. And the plot has been done a thousand times before: innocents trapped in a house with a crazy dude looking to kill them (but not right away). Having been down this path before I’d suspect the flick needs to get just about everything right because none of it will be treading any new ground.



I think critics fall a tad below the middle on this one, with Elba giving a strong performance but unable to overcome a somewhat tired plot. And don’t forget to learn from your movies folks. They can save your life.
