Crawfish or Shrimp Pistolettes



Ingredients

2 1/2 pounds crawfish tails or shrimp

2 1/2 sticks butter or margarine

2 ounces margarine for brushing

3 medium onions

6 ribs celery chopped fine

1 cup bell pepper chopped fine

1 tbsp garlic cloves minced

3/4 cup chopped parsley

3/4 cup chopped green onions (scallions)

2 cans mushroom soup or 1 cream of mushroom and 1 cream of shrimp

8 ounces Velveeta cheese

1 small can or jar of pimentos (optional)

1 tsp black pepper

1/2 tsp cayenne or more (optional)

1/2 tsp Season All or Cajun Seasonings

hot sauce to taste

1 tsp Accent (optional)

2 bags Pistolette Rolls (24) or dinner rolls that are large enough to be stuffed

enough flour and water to make a paste



Directions

First prepare the pistolette rolls; cut off one end, about 1-1/2-inch thick, and set aside. Take a knife and cut a pyramid shape opening into the heart of the roll and remove the middle of the roll. (Save this bread to make bread pudding.) Keep the two pieces of roll together for an easier fit. Set aside. Make a glue with 1 part flour and 3 parts water - Set aside.



In medium saucepan over medium heat melt the butter and sauté the onion, bell pepper, celery and garlic until onions have wilted.

Add the seasonings along with the cans of cream of mushroom and/or cream of shrimp. Add the Velveeta cheese and stir until completely melted. Add the crawfish/shrimp to the mixture. Note - you could chop the crawfish/shrimp into smaller pieces as in a dip. Bring to a boil then simmer about 10 minutes. Do not forget to stir to prevent scorching. You could choose to add more or less cheese to achieve your desired "pudding" consistency. Add the parsley and green onions to mixture combining well. Once cooked set aside to cool some.



Once cooled, fill the pocket of the bun with 1/4 cup of the filling. Dip the nose of the bun in the "glue" of flour and water and attach it to the same bun. Push the roll to the side of the tray to secure.



Stuffed Pistolettes may now be baked at 375 degrees F until golden brown about 20 minutes. If frying, drop into heated cooking oil until browned. Make sure there is enough oil to cover the pistolettes. Drain fried pistolettes on paper towels; serve hot.



The pistolettes can be frozen until needed. Remove from freezer one hour before baking or frying.

(Makes 4 burgers)



Ingredients:

1 1/3 pounds ground beef

4 pineapple rings

2 cups teriyaki sauce

4 slices cheddar cheese

4 hamburger buns with sesame seeds

4 Tablespoons mayonnaise

4 slices tomatoes

1 cup shredded lettuce



Directions:

Form ground beef into 4 equal sized patties. Pour one cup of teriyaki sauce in a container and let hamburger patties marinate for at least thirty minutes. Pour the second cup of teriyaki sauce in a bowl and let pineapple rings marinate for at least thirty minutes. Remove hamburger patties from teriyaki sauce and grill on high heat until desired doneness. Melt cheese on top of hamburgers while still on the grill. Grill pineapple rings on medium heat for one minute on each side. Spread 1/2 Tablespoon of mayonnaise on each half of each hamburger bun. Place tomato slices on the bottom buns and top with hamburger patties. On top of each hamburger patty, place pineapple rings and shredded lettuce. Top with top half of hamburger buns. Serve with extra teriyaki sauce.

1.5 parts Jameson Irish Whiskey

.75 part Hiram Walker Butterscotch Schnapps

1.5 parts Pressed Apple Juice

.5 part Lime Juice

1 part Sugar Syrup



Pomegranate Apple Martini

3 parts Brancott Estate Sauvignon Blanc

(or Chardonnay or Pinot Gris)

2 parts Apple Cider

1 part POM pomegranate juice



Directions: Shake ingredients very well with ice and

strain into a chilled martini glass.

Garnish: sliced apple (when in season) or lime wheel



Mama’s Maple Cider

1 part Mama Walker’s Maple Bacon Liqueur

look what I found today -

I am now closer to the 21st century - no more dial-up - now on cable - what a huge difference.



But the little guy lost his email when I switched over and I don't want him getting all kinds of junk mail, etc. and I don't want him on Yahoo, etc.



So I did a bit of investigating -

Certainly will bring a tear to your eyes!



This is for all the grandfathers out there.



Last week, I took my grandchildren to a restaurant.

My six-year-old grandson asked if he could say grace.

As we bowed our heads he said, "God is good, God is great. Thank you for the food, and I would even thank you more if Grandpa gets us ice cream for dessert.

And liberty and justice for all! Amen!"



Along with the laughter from the other customers nearby, I heard a woman remark, "That's what's wrong with this country. Kids today don't even know how to pray.

Asking God for ice cream! Why, I never!"



Hearing this, my grandson burst into tears and asked me, "Did I do it wrong? Is God mad at me?"

As I held him and assured him that he had done a terrific job, and God was certainly not mad at him, an elderly gentleman approached the table.

He winked at my grandson and said, "I happen to know that God thought that was a great prayer."

"Really?" my grandson asked.

"Cross my heart," the man replied.



Then, in a theatrical whisper, he added (indicating the woman whose remark had started this whole thing), "Too bad she never asks God for ice cream. A little ice cream is good for the soul sometimes."



Naturally, I bought my grandchildren ice cream at the end of the meal.

My grandson stared at his for a moment, and then did something I will remember the rest of my life.

He picked up his sundae and, without a word, walked over and placed it in front of the woman.



With a big smile he told her



"Here, this is for you. Shove it up your a.s.s, you grouchy old .b.it.c.h!"

just another sweet potato side dish -

So easy - so good!



Wash, boil, peel and cut into chunks your sweet potatoes.



Melt a couple tablespoons of butter in skillet; add about 1/2 c. orange marmalade; melt. Add potatoes; salt to taste.



Heat over a low flame until heated through.





Sometimes I plump raisins in boiling water, drain and add.

another sweet potato dish we enjoy -

Wash clean and boil your sweet potatoes. Peel and slice into slices about 1/3-inch thick. You don't want them too thin.



Layer in buttered (not oiled) baking dish with brown sugar, salt, pepper, dots of butter (much better than spreads or margarines).



Top with crushed butter-flavored crackers. At this point you can drizzle with a tiny bit of melted butter, or you can dot the crumbs lightly or leave them plain.



Bake in preheated moderate oven until crumbs are lightly toasted and taters are heated through.

Sweet Potato Fries

We enjoy homemade sweet potato fries - so I thought you may want to try how we like them -



Wash, peel and cut sweet potatoes into fries. (you decide if you want them thin like McD's, regular cut or steak cut)



In bowl, combine egg white(s) (depending on how many you are making) and season with chili powder, garlic powder and onion powder to taste.'



Add fries and toss to coat.



Oil baking sheets (I don't like sprays) and bake in preheated 400* F. oven until done (depends on fry size).





You can make a dipping sauce -



4 T. sour cream

2 T. mayo

brown sugar and cinnamon to taste



(my preference is plain!)

Boston Market Sweet Potato Casserole

going through my recipes I wanted something a bit different for a sweet potato casserole - and I got 2 different "versions" of this one -







6 cups mashed sweet potatoes (5 to 6 potatoes-see step #1)

3/4 cup dark brown sugar

1/2 cup heavy cream

1/4 cup melted butter

1/4 teaspoon cinnamon

1/4 teaspoon salt

2 cups mini marshmallows



Oatmeal Streusel:

1/2 cup rolled oats

4 tablespoons dark brown sugar

2 tablespoon all-purpose flour

1/4 teaspoon ground cinnamon

4 tablespoons cold butter



Rub a little vegetable oil on the skin of each sweet potato and bake them in a preheated 400 degree oven for 60 to 70 minutes or until they are tender. When the potatoes are cool enough to handle, scrape out the insides and use an electric mixer on high speed to beat the potatoes until they are mashed and smooth. Measure exactly 6 cups of the mashed sweet potato into a large bowl.



Add 3/4 cup brown sugar, heavy cream, melted butter, 1/4 teaspoon cinnamon, and salt into the sweet potatoes and mix well with the beater until all the ingredients are incorporated. Pour this mixture into an 8×8-inch baking dish.



Preheat oven to 350 degrees.



Make the oatmeal streusel by grinding the rolled oats to a fine flour using a food processor. A blender will also work.



Combine the oat flour with 4 tablespoons brown sugar, all-purpose flour, and 1/4 teaspoon cinnamon in a small bowl. Cut the cold butter into the dry mixture using a pastry knife or a fork. You should have a crumbly mixture with pea-size bits. Sprinkle this oatmeal streusel over the sweet potato mixture and pop it into the oven for 70 to 80 minutes or until the top begins to brown slightly.



When you remove the casserole from the oven immediately spread the marshmallows over the top. Let this sit for about 10 minutes. The heat from the casserole will melt the marshmallows, and then it’s ready to serve.







and I have -



3 large sweet potatoes

1 cup sugar

2 eggs

1/2 cup butter, softened

1 teaspoon vanilla extract



Crunch Topping

1/3 cup melted butter

1/3 cup flour

1 cup brown sugar

1 cup chopped pecans

1 tablespoon cinnamon





Boil potatoes till tender. Take skin off when cooled and able to handle.



Put in a large bowl and whip them till fluffy adding all other ingredients.



Pour into a buttered casserole and top with the crunch topping.



Bake at 350 for 45 minutes







What I did was I boiled sweet potatoes and white potatoes and diced them. No I did not want to mash them. I wanted them diced. I sprinkled with brown sugar, salt, pepper, and a bit of cinnamon. Combined heavy cream with melted butter, pour over, stir to coat well.



Placed in a buttered (no oiled) casserole.



Topped with some caramelized onions, baked in 350F oven - and everyone enjoyed it.



It may not be Boston Markets - but it was good.



We preferred the onions instead of the crunch topping or marshmallows - pleasantly good.

Honeybaked Ham

1 10-15 pound spiral cut ham

2 cups sugar

1 tablespoon pumpkin pie spice

1 teaspoon garlic powder

1 blow torch



in a small bowl combine sugar, pumpkin pie spice, and garlic powder. Mix well. Remove ham from package, and do not pat dry. Place ham on a large baking sheet. Sprinkle sugar blend over the ham, coating well. Quickly wave the blow torch over the sugar coating, not staying in any one place for too long. Be careful not to allow the sugar to burn, move the flame on quickly if the sugar begins to brown and smoke. Once you have a thin layer of hardened sugar on the ham, sprinkle on more, and touch with the flame to build up the crust.



If you prepare the ham ahead of time, do not wrap with plastic wrap. If you wrap with plastic wrap the sugar crust will come off. Store loosely covered with foil before serving. This whole process takes about 30-45 minutes. Be sure to move slowly and be patient, and you will have great results.

Chocolate Cookie Crumb Crust



2 cups [500 mL] chocolate cookie crumbs

1/3 cup [75 g] melted butter



Chocolate Banana Filling



1 tablespoon [7 g] unflavored gelatin

1/4 cup [60 g] sugar

2 eggs

1 1/4 cups [310 mL] milk

1/2 cup [125 mL] semi-sweet chocolate chips

1 cup [250 mL] mashed bananas

1 teaspoon [5 mL] vanilla

1 cup [250 mL] whipping cream

Whipped cream, to decorate

Chocolate curls, to decorate







For the chocolate cookie crumb crust, well mix together chocolate cookie crumbs and melted butter.

Delicately press chocolate cookie crumb mixture over bottom and sides of a 9-inch [23-cm] pie plate; set aside.

For the filling, combine unflavored gelatin and sugar into a saucepan.

Beat together eggs and milk before stirring into mixture.

Heat over low heat stirring to completely dissolve the gelatin.

Add chocolate chips; cook stirring until completely melted.

Beat mixture using a wire whisk or a rotary beater until chocolate is well blended.

Remove from heat; stir in mashed bananas and vanilla.

Transfer into a large bowl; refrigerate, stirring occasionally, until mixture resembles unbeaten egg white consistency.

Whip cream until stiff peaks form.

Fold whipped cream into cold banana mixture.

Evenly spoon into reserved chocolate cookie crust.

Refrigerate until set before serving, decorated with whipped cream and chocolate curls.

1 pound [454 g] small chicken white strips

1 onion, sliced

2 cups [500 mL] thinly sliced celery

2 pounds [900 g] bean sprouts

1 cup [250 mL] water

4 tablespoons [60 mL] chinese chop suey sauce mix

1 tablespoon [15 mL] cornstarch, diluted with a little cold water







Into a frying pan, heat oil until really hot.

Add chicken strips, onion and celery slices.

Fry stirring until chicken strips are no longer pink inside.

Mix in bean sprouts, water, chinese chop suey sauce mix and diluted cornstarch.

Cover and leave to simmer for 3 to 5 minutes.

Mix well before serving.

12 ounces [340 mL] Chinese pineapple sauce

1 teaspoon [5 mL] soy sauce







Arrange chicken white bites onto a microwave bacon cooking sheet.

Microwave on 'MEDIUM' for 4 to 6 minutes.

Transfer chicken bites into a 4-cup [1-L] microwave-safe bowl.

Mix in pineapple sauce and soy sauce.

Cover and microwave, on 'MEDIUM', for 3 to 4 minutes.

Stir, cover and microwave, on 'MEDIUM-LOW', for 5 minutes.

Leave to rest for 5 minutes before serving.

1 1/2 cups [375 mL] dried whole yellow peas

Cold water, to soak

8 cups [2 L] water

1/4 pound [113 g] salt pork dices

1/2 cup [125 mL] chopped celery

1 cup [250 mL] chopped onion

1/2 cup [125 mL] rutabaga dices

1 cup [250 mL] carrot dices

2 tablespoons [30 mL] freshly chopped parsley

2 tablespoons [30 mL] salted herbs

Salt and pepper, to taste







Leave dried whole yellow peas to soak in enough cold water to cover overnight.

Drain then transfer peas into a large heavy casserole.

Pour in 8 cups [2 L] water.

Mix in salt pork dices, chopped celery and onion, rutabaga and carrot dices, freshly chopped parsley and salted herbs.

Bring to a boil, lower heat, cover and leave to simmer slowly for 2 hours.

Salt and pepper before serving.

1 Octoberfest smoked sausage

1 tablespoon [15 g] butter, softened

1 tablespoon [15 mL] Dijon mustard

1 tablespoon [15 mL] freshly chopped parsley

12 any desired crackers

Red onion slices, to garnish







Into a nonstick skillet, cook sausages over medium-high heat for 2 to 3 minutes, until fully cooked.

Leave to drain onto paper towels; leave to cool completely before slicing into 25 slices.

Into a small bowl, mix together softened butter, Dijon mustard and freshly chopped parsley.

Evenly spread butter mixture over crackers.

Top each with a slice of smoked sausage.

Garnish with red onion slices, and serve.

Cosi Tomato, Basil and Mozzarella Flatbread Sandwiches

For the flatbread:



1 1/4-ounce packet active dry yeast

Pinch of sugar

3 cups bread flour, plus more for dusting

Kosher salt

2 tablespoons extra-virgin olive oil, plus more for brushing



For the dressing:



3 tablespoons balsamic vinegar

3 teaspoons dijon mustard

1/4 teaspoon dried basil

Pinch of sugar

Kosher salt and freshly ground pepper

1/2 cup extra-virgin olive oil

For the sandwiches:

4 medium tomatoes, sliced (about 1 1/4 pounds)

1 1/2 pounds fresh mozzarella, sliced

16 to 20 fresh basil leaves

Kosher salt and freshly ground pepper

Directions

Make the flatbread: Stir the yeast, sugar and 1 1/2 cups warm water (about 110 degrees F) in a bowl. Let sit until foamy, about 5 minutes. Whisk the flour and 1 1/2 teaspoons salt in a large bowl. Add the yeast mixture and olive oil and mix with your hands into a smooth dough. Cover the bowl with plastic wrap; set aside in a warm place until the dough doubles in size, about 1 hour.



Turn the dough out onto a lightly floured surface and knead until slightly elastic, dusting with more flour if the dough is too sticky to handle, about 5 minutes. Return the dough to the bowl, cover and set aside again until doubled in size, about 1 hour.



Brush 2 baking sheets with olive oil. Turn the dough out onto a lightly floured surface and knead until smooth and elastic, dusting with more flour if needed. Cut the dough in half and form into 2 balls. Roll out each ball into a 12-by-3-inch rectangle, about 1/2 inch thick. Transfer each dough rectangle to one of the prepared baking sheets and let rest, uncovered, until a dry crust forms on top, 1 hour, 30 minutes to 2 hours.



Meanwhile, position racks in the middle and lower thirds of the oven. Place a pizza stone or inverted baking sheet on the bottom rack and preheat to 475 degrees F for at least 40 minutes.



Press your fingertips through the dry crust on top of the dough to create a spotted pattern. Gently stretch each piece of dough into a 14-by-4-inch rectangle, then brush the tops with olive oil and sprinkle with salt. Put 1 baking sheet of dough on the pizza stone and bake until the bottom of the bread is golden brown, about 7 minutes. Transfer to the middle rack and continue baking until golden all over, about 5 more minutes. Remove from the oven and immediately brush the top of the bread with olive oil and sprinkle with salt; let cool on the baking sheet on a rack. Repeat with the remaining dough.



Make the dressing: Whisk the vinegar, mustard and dried basil in a bowl. Add the sugar and 1/4 teaspoon each salt and pepper. Slowly whisk in the olive oil.



Assemble the sandwiches: Slice each flatbread in half horizontally and brush with the dressing. Top the bread bottoms with the tomatoes, mozzarella and basil leaves. Season with salt and pepper and cover with the bread tops. Cut into pieces.

In-N-Out Animal-Style Burgers

2 tablespoons vegetable oil, plus more for brushing

2 large onions, finely chopped

Kosher salt

1/4 cup mayonnaise

2 tablespoons ketchup

1 tablespoon sweet pickle relish

1/2 teaspoon white vinegar

2 pounds ground beef chuck (preferably 60 percent lean)

4 hamburger buns, split

1/4 cup sliced dill pickles

3/4 cup shredded iceberg lettuce

4 to 8 thin slices tomato

Freshly ground pepper

1/4 cup yellow mustard

8 slices American cheese



Heat the vegetable oil in a large skillet over medium-low heat. Add the onions and 3/4 teaspoon salt, cover and cook, stirring occasionally, until golden and soft, about 30 minutes. (If the onions brown too quickly, reduce the heat to low.) Uncover, increase the heat to medium high and continue to cook, stirring often, until caramelized, about 8 more minutes. Add 1/2 cup water to the skillet, scraping up any browned bits from the bottom of the pan. Simmer, stirring, until the water evaporates, about 2 more minutes; transfer to a bowl and set aside. (The onions can be made up to 3 days ahead; cover and refrigerate, then reheat before using.)



Mix the mayonnaise, ketchup, relish and vinegar in a bowl; set aside. Shape the beef into 8 patties, about 4 inches wide and 1/2 inch thick.



Heat a griddle or skillet over medium heat; lightly brush with vegetable oil. Toast the buns on the griddle, split-side down. Spread each toasted bun bottom with about 1 tablespoon of the mayonnaise mixture, then top with a few pickles, some lettuce, 1 or 2 slices tomato and another dollop of the mayonnaise mixture; set aside. (Keep the griddle hot.)



Season both sides of the patties with salt and pepper. Working in batches if necessary, put the patties on the griddle and cook 3 minutes. Spread about 1 1/2 teaspoons mustard on the uncooked side of each patty, then flip and top each with 1 slice cheese; continue cooking about 2 more minutes for medium doneness. Top 4 of the patties with caramelized onions, then cover with the remaining patties, cheese-side up. Sandwich the double patties on the buns.

Bonefish Grill Spicy Fried Shrimp

For the Sauce:



1/2 cup mayonnaise

1 tablespoon plus 1 teaspoon Asian chili sauce (such as sambal oelek)

2 teaspoons honey

Kosher salt



For the Shrimp:



Vegetable oil, for frying

2 large eggs

3/4 cup all-purpose flour

1/2 cup cornstarch

Kosher salt and freshly ground pepper

1 1/4 pounds small shrimp, peeled and deveined

Bibb lettuce leaves, for serving

Thinly sliced scallions, for garnish



Make the sauce: Mix the mayonnaise, chili sauce, honey, 1/4 teaspoon salt and 1 tablespoon water in a large bowl; set aside.



Prepare the shrimp: Heat about 2 inches of vegetable oil in a heavy-bottomed pot or Dutch oven over medium heat until a deep-fry thermometer registers 350 degrees. TGI Friday's Green Bean Fries

For the Dip:



1/2 cup ranch dressing

1/2 cup peeled, seeded,chopped cucumber

1 tablespoon horseradish, drained

1 tablespoon milk

1 teaspoon distilled white vinegar

2 teaspoons wasabi powder (found in the spice aisle or with the Asian foods)

Pinch of cayenne pepper

Kosher salt



For the Beans:



2 cups low-sodium chicken broth

1/2 pound green beans, trimmed

1 large egg

1/2 cup milk

1 cup instant flour (such as Wondra)

1 cup breadcrumbs

1/4 teaspoon onion powder teaspoon garlic powder

Pinch of cayenne pepper

Kosh er salt and freshly ground black pepper

Peanut or vegetable oil, for frying

Directions

Make the dip: Puree the dressing, cucumber, horseradish, milk, vinegar, wasabi powder, cayenne pepper, and salt to taste in a blender until smooth. Cover and refrigerate until ready to serve.



Prepare the beans: Fill a large bowl with ice water. Bring the broth to a boil in a saucepan over high heat. Add the green beans and cook until tender, about 5 minutes. Remove the beans with a slotted spoon and transfer to the ice water to stop the cooking. Let cool in the water, then drain and pat dry.



Whisk the egg and milk in a shallow bowl. Put 1/2 cup flour in another shallow bowl. Combine the breadcrumbs, the remaining 1/2 cup flour, the onion powder, garlic powder, cayenne, and salt and pepper to taste in another bowl.



Line a baking sheet with parchment paper. Toss the green beans in the flour and shake off the excess. One at a time, dip the beans in the egg mixture, dredge in the breadcrumb mixture and lay on the prepared baking sheet. Freeze until the coating is set, about 30 minutes.



Heat 3 inches oil in a deep pot over medium heat until a deep-fry thermometer registers 350 degrees F. Fry the green beans in batches until golden brown, 1 to 2 minutes. Transfer the beans with tongs or a skimmer to a rack or paper towels to drain. Serve with the dip.

Taking place over a week in 1961, Inside Llewyn Davis plays as a slice of life of its title character as he bumps along from gigs at hole in the wall venues in New York City, to crashing on couches of anyone who’ll have him, and stumbling into a brief road trip to Chicago. As Davis is in every scene of the film, rising actor Oscar Isaac has the intimidating task of shouldering the majority of the movie. And he does so beautifully. There’s no attempt to win us over with a winsome smile or good intentions, as Davis is not a charming man. He is coarse and angry as he recklessly careens into the lives of his friends and family. But Isaac’s performance throbs with a brooding pain of a talented, tortured artist that wins us over just as it does everyone else in Davis’s life.



Watch Insidious Chapter 2 Online At the Q&A held immediately after the screening, Ethan Coen described the film as an Odyssey without a destination. Indeed, Davis is a wanderer. But in his travels he comes across a fascinating cast of characters. Of course you should expect nothing less of a Coen Bros movie. There’s Mulligan’s furious Jean, who is tirelessly and comically enraged with Davis. Stark Sands, Adam Driver and Justin Timberlake play three other folk singers, all who struggle but none on the level of Davis. There are crass club owners, clueless agents, and an upper class academic couple (Ethan Phillips and Robin Bartlett) who treat Davis as some sort of beloved stray. Then, there’s John Goodman as a folk music-mocking gasbag who shares his road trip with Davis and a steely and sexy loner called Johnny Five, played by Garrett Hedlund. Last but not least, is a lost orange cat that Davis feels obligated to keep safe as he bumbles along.



Watch GI Joe Retaliation Online These colorful characters speak in that patter that the Coens have mastered which plays out like a distillation of American speech. It’s slightly ridiculous, yet totally recognizable, and lends graceful moments of levity and humanity to this story of an artist who seems destined to fail. Painting their film in muted colors, the Coens create a sense of the past while also draping us in Davis’s sullen perspective. But the narrative never gets too grim, in part because of the wonderful music that is threaded diagetically throughout. Simple folk songs that soothe the soul stream out in scene after scene, smoothing away the pangs of pain in Davis’s journey. The Coens worked with T-Bone Burnett to create Inside Llewyn Davis’s addictive soundtrack, and I suspect it will do for this brand of folk what O Brother Where Art Thou did for bluegrass. After hearing these numbers, it’s impossible to not want to hear them again and again, to wrap yourself in their lovely melodies and the bittersweet stories they tell.



Watch Iron Man 3 Online Inside Llewyn Davis is a vivid portrait of the period right before folk went from musicians finding new grace in old standards to the emergence of the singer-songwriter. Davis’s window of breaking through is closing fast, but as aimless as he is, he can’t stop to see it. This music defines him. It means more to him than the comfort of a home, than the love of his family, the respect of his friends, or even the possibility of success.. Hopefully, its lack of histrionics won’t hurt it come award season, as this mellow tale doesn’t need showy drama to deliver.



Watch World War Z Online Well if the trailer, or extended trailer are any indication, someone like me will probably die of asphyxiation while watching this movie, because even in the couple-of-minute teasers there were multiple moments where I completely forgot to breathe. I could almost feel myself tumbling through space with Sandra Bullock, considering the prospect of hurtling off into the great nothingness never to be seen again. And when she wasn’t listening to the rasp of her own breath, glancing around at infinite blackness, and half-heartedly calling for help that would probably never come, there were the moments of missing salvation by fingertips and scrambling for safety in zero gravity. I didn’t have a full blown panic attack, but man it was sure close. And that was just from a couple of clips on YouTube. What happens when I sit down in the theater? Do I expire right there in my seat?

But at least we have some movies to discuss. That always helps. This week we’re hurtling through space and getting jobbed by online poker. Let's take a look at what This Rotten Week has to offer. “Everything you touch turns to {omitted}{omitted}{omitted}{omitted},” sneers Llewyn Davis’s bitter former lover played by Carey Mulligan, “like King Midas’s idiot brother.” While it seems a cruel thing to say, she’s not wrong. Davis, a folk musician desperately trying to break through with his covers of tender and tragic tunes, is like a bad luck charm, not just to those around him, but to himself as well. Every choice he makes seems destined to hurt someone. And though the anti-hero at the center of Ethan and Joel Coen’s latest drama is decidedly unlikeable—being bullheaded, selfish, arrogant and sometimes flat-out mean—he isn’t unlovable.

Watch Don Jon Online Night Film is set to be directed by Rupert Wyatt, who pleased audiences with the Brian Cox-led crime drama The Escapist, and the surprisingly awesome “James Franco plays with monkeys” thriller Rise of the Planet of the Apes. For both of those films, he worked with screenwriters who only had one or two films produced, and turned both of those scripts into something memorable. It stands to reason he’s a good fit for any screenwriter, so the scary ball is in Aguirre-Sacasa’s horror court, or something.



Watch We're The Millers Online Night Film, which was just published on August 20 by Random House, centers on an investigative journalist named Scott McGrath who probes into the suicide of a young woman because he thinks someone else was at fault for her death. It turns out her father is a reclusive horror filmmaker who hasn’t been seen in thirty years, and that somehow leads McGrath to think that the daughter’s murder was in revenge. I haven’t read it yet, though I cannot wait, as Pessl’s debut was 2006’s masterpiece Special Topics in Calamity Physics.



Watch Insidious Chapter 2 Online I don't dare have doubt in Aguirre-Sacasa, who already has one of the more interesting resumes out there, moving onto Carrie after writing episodes of Glee and Big Love. He’s also penned the Ryan Murphy-produced remake of The Town That Dreaded Sunshine from director Alfonso Gomez-Rejon. He’s also writing the potential Archie feature based on the comics. His work doesn’t just end in film and TV though, as he was one of the writers who turned the musical Spider-Man Turn Off the Dark from a huge punchline to a more successful punchline. He also wrote the book for the Broadway transfer of Steven Soderbergh’s Magic Mike. It seems like all that’s left for him to do is release a popular, high-selling album, and the EGOT is surely his. It’ll probably be a while before this one hits the production stage, so in the meantime, go check out Carrie on October 18 and tell me how it is, since I’ll probably be at home not watching it. Here’s the preview.

That's solidly above the $30 million the first film made in its opening weekend, and about on par with the opening for Epic earlier this year.

That doesn't exactly surprise us, since we didn't really like it either, but the movie had mostly been well-received by other critics. Maybe JGL's natural charm doesn't quite translate when he's playing a {omitted}{omitted}{omitted}{omitted} addict?

Early reviews suggest that might just happen. Critics are raining down heaps of praise on Gravity, calling it a technical achievement, gripping, inspiring, visually-stunning, tense, awesome and some nobody named James Cameron said this about the film. Sitting at 95% through more than forty reviews, Gravity has the makings of a classic. There aren’t many films I feel compelled to absolutely see on the big screen. The current state of movies means one is usually safe waiting until it comes into our own souped-up home theaters. But there are exceptions to be made. Gravity appears one of them. Alfonso Cuaron (Children of Men-93%, Harry Potter and the Prisoner of Azkaban-91%) appears to have put a new spin on an old setting, giving us a space that isn’t filled with aliens or astronauts stuck in their broken ships, but rather a space that is a true blank wilderness. A space that we wouldn’t look to in awe, but rather in abject hopelessness. A space that we need to see on the twenty-two foot screen or in IMAX so he can set us adrift in that void, forgetting to breathe and dying right there in our theater seats. I can’t wait. The Rotten Watch for Gravity is 94%.

Deadline has buoyed my spirits by reporting a screenwriter has been hired for the project, and it’s Roberto Aguirre-Sacasa, whose first feature credit will come next month when Kimberly Pierce’s remake of Carrie hits theaters. I really, really want to hope that script comes out as more than just a haphazard carbon copy of Brian De Palma’s original film. I’m telekinetically crossing all of your fingers.

Pumpkin Lust Cake

Pumpkin Lust Cake





1 stick butter, melted

1 cup flour

1 cup chopped pecans

2 tbs sugar

1 (8oz) package of cream cheese, soft

1 cup powdered sugar

2 (8 oz) containers cool whip (or one 16 oz. container)

2 small packages (3.4oz) of Jello Instant Pumpkin Spice Pudding

3 cup cold milk

Nutmeg for sprinkling



For the crust



Combine butter, flour, chopped pecans and sugar and press into a 9 x 13 in baking dish. Bake at 375 for 10-15 minutes. Let cool completely.



For the Cream Cheese Layer



Beat cream cheese, powdered sugar, and 1 1/2 cups cool whip until smooth. Spread over crust.



For the Pumpkin Layer



Mix pudding mixes with cold milk, whisking for several minutes. Set it in the fridge for 5-10 minutes to let it thicken. Spread over the cream cheese layer. Top with remaining container of cool whip. Sprinkle with nutmeg.

Cut into squares and serve. Keep refrigerated.

Buffalo wing sauce







Prepare macaroni and cheese according to package instructions. Place in serving dishes.

Top each bowl with desired amount of ranch dressing and wing sauce. Sprinkle with just a little bit of blue cheese, and celery.

For the Crust:

1 box yellow cake mix

1 egg

1 stick (1/2 cup) melted butter



For the Cake:

8 oz cream cheese; room temp

1 (15oz can) pumpkin puree

1 stick (1/2 cup) melted butter

3 eggs

1 tsp vanilla extract

2 tsp pumpkin pie spice

16 oz box of Powdered Sugar

Whip Cream (optional)







Preheat oven to 350 degrees F.

In a medium bowl combine cake mix, egg and 1/2 cup melted butter with a wooden spoon until a soft dough forms. Press evenly into the bottom of a 9x13" cake pan. Set aside.

In the bowl of your stand mixer, blend the cream cheese and pumpkin puree until smooth and combined. Be sure to scrap the sides down occasionally.

Add the melted butter, eggs, and vanilla and blend until combined again.

With the mixer running slowly add the pumpkin pie spice and gradually add the powdered sugar until completely blended.

Pour over the prepared crust.

Bake for 45-50 minutes or until the outer edges are set and the middle is still soft set. Don't let it firm up 100%, you still want it slightly gooey in the center.

Let cool to room temp and serve with whipped cream.

Apple Upside-Down Pie

1 cup chopped pecans

1/2 cup firmly packed light brown sugar

1/3 cup butter, melted

1 (15-oz.) package refrigerated pie crusts, divided

4 medium-size Granny Smith apples, peeled and cut into 1-inch chunks (about 1 3/4 lb.)

2 large Jonagold apples, peeled and cut into 1-inch chunks (about 1 1/4 lb.)

1/4 cup granulated sugar

2 tablespoons all-purpose flour

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg



Preheat oven to 375°.

Stir together first 3 ingredients, and spread onto bottom of a 9-inch pie plate.

Fit 1 pie crust over pecan mixture in pie plate, allowing excess crust to hang over sides.

Stir together Granny Smith apples and next 5 ingredients.

Spoon mixture into crust, packing tightly and mounding in center.

Place remaining pie crust over filling; press both crusts together, fold edges under, and crimp.

Place pie on an aluminum foil-lined jelly-roll pan.

Cut 4 to 5 slits in top of pie for steam to escape.

Bake at 375° on lower oven rack 1 hour to 1 hour and 5 minutes or until juices are thick and bubbly, crust is golden brown, and apples are tender when pierced with a long wooden pick through slits in crust.

Shield pie with aluminum foil after 50 minutes, if necessary, to prevent excessive browning.

Cool on wire rack 10 minutes.

Place a serving plate over top of pie; invert pie onto serving plate.

Remove pie plate, and replace any remaining pecans in pie plate on top of pie.

Let cool completely (about 1 hour).

1 pound ground chicken breast

1 packet of ranch dressing mix

1/2 cup hot wing sauce

1 tablespoon vegetable oil

1 rib of celery, minced

1 teaspoon ground black pepper

12 large jalapeno peppers, cored and seeded

6 strips of bacon, each cut in half

Special equipment

Jalapeno grilling rack

In a bowl combine the first six ingredients and mix well. Remove the tops of the jalapenos and remove the seeds using a corer. Place jalapenos in the rack. Add half the chicken mixture into a zip top plastic bag and cut a small hole in the corner. Using zip top bag as a pastry bag squeeze chicken mixture into each jalapeno. Wrap each jalapeno with 1/2 strip of bacon and secure with a toothpick. Place the rack of peppers on the grill and cook at 350 degrees for 20 to 25 minutes.



Check the internal temperature of the chicken with an instant read thermometer, it should read 165 degrees. Remove from grill and allow to cool.



Serve with blue cheese or ranch dressing for dipping.



If you do not have a jalapeno grilling tool, you can simply slide the jalapeno by slicing it on one side. If you do not like your peppers too hot, you can remove the seeds. Removing the seeds from the peppers will help remove some of the heat. Spoon in about 1 to 2 teaspoons of the chicken mixture in the pepper. Wrap it closed by wrapping the bacon around the pepper. Pierce the bacon wrapped jalapeno pepper onto the metal skewer, each skewer can hold several peppers. Lay the skewers over a 9 x 13 inch baking dish. This will have the peppers upright, and all of the bacon grease will drip away from the pepper.

Hatch Chiles (only one ingredient!)



Preheat the oven to 450 degrees.



Put the chiles on a baking sheet in a single layer, not touching. Bake for about 30-40 minutes, or until the skin of the peppers are blackened and all of the skin is wrinkled. I also flip the chiles over after about 20 minutes, but that’s mostly because my oven doesn’t cook evenly.

Lemon Meringue Ice Cream Pie





Lemon Curd



2 large eggs

2 large egg yolks

6 tablespoons unsalted butter

1 cup sugar

6 tablespoons fresh lemon juice

2 teaspoons finely grated lemon peel

1 pinch salt



Crust



1 1/2 cups finely chopped pecans

1/4 cup sugar

1/4 cup butter, melted



Meringue



4 large egg whites, room temperature

1 pinch cream of tartar

6 tablespoons sugar









For the lemon curd: Whisk eggs and egg yolks together in a medium bowl and set aside.



Melt butter in a medium metal bowl set over a large pot of simmering water.



Whisk in sugar, lemon juice, lemon peel and salt. Gradually whisk in eggs yolk mixture. (Thin stream and whisk constantly, be careful not to cook the eggs. May want the egg yolks at room temperature before beginning this step.).



Continue cooking and whisking until thick and thermometer reads 178-180 degrees F, about 8 minutes.



Transfer curd to a small bowl and cover with plastic wrap pressed down to the surface. Chill for a minimum of 4 hours.



NOTE: Curd can be made up to 2 days ahead.



For the crust: Preheat the oven to 400 degrees.



Mix together pecans, sugar and butter in a medium bowl until moistened. Press into a 9-inch glass pie dish--mixture will be crumbly.



Bake crust until lightly toasted, about 12 minutes. Crust will slip down the sides of the dish. Use the back of a spoon to press crust back into place.



Cool crust on a rack. Freeze crust for 30 minutes.



Dollop 1 1/2 cups of the softened ice cream into the bottom of the crust and spread into an even layer. Spread the lemon curd over the ice cream and freeze until firm, about 2 hours.



Spread the additional 1 1/2 cups of softened ice cream over the curd and freeze until firm, about 2 hours.



For the meringue: Using an electric mixer, beat egg whites in a medium bowl until frothy. Beat in cream of tartar. With mixer running, gradually add sugar. Beat until stiff peaks form. Spoon meringue over pie, swirling decoratively.



NOTE: All steps above can be done up to one day ahead of time. Freeze pie until ready to brown the meringue.



To finish the pie, using a kitchen butane torch, toast the meringue until golden in spots or place pie in a preheated 500 degree F oven until meringue is golden in spots, watching to prevent burning (about 3 minutes).



Cut pie into wedges and serve immediately.

125 g/1 c sugar

125 g/1/2 c butter

125 g/1 c self raising flour

2 tablespoons sultanas

1 teaspoon baking powder

1 lemon, juice and zest of, grated

2 eggs

2 apples









Preheat oven to 180°C/350F



Grease and line the base of a 8-inch loose based round cake tin (springform).



Quarter the apples and cut out the core. Cut quarters into slices and put them into a small bowl with the lemon juice. Toss to mix and set aside.



Sieve the flour and baking powder into a large mixing bowl.



Add the butter, sugar, eggs, sultanas and lemon zest. Beat together with a wooden spoon for 3 to 4 minutes until well mixed.



Put mixture in the cake tin and level the top.



Drain the juice from the apples and put the slices neatly on the cake.



Bake for about 35 minutes - when you gently press on the top of the cake it should spring back.



Take out of the oven and leave to cool before removing from the tin.







Alternative toppings use fresh pears or canned, drained pineapple or mandarin oranges.



This cake is great served with a generous spoon of whipped cream / crème freche.

Whisk chocolate mixture into egg mixture; then stir in flour until just combined.



Pour mixture into prepared pan, spread into corners and level surface with rubber spatula; bake until slightly puffed and toothpick inserted in center comes out with a small amount of moist batter clinging to it, 35 to 40 minutes.



Cool on wire rack to room temperature, about 2 hours, then remove brownies from pan using foil handles.



Cut into 1-inch square and serve.



Do not cut brownies until ready to serve, brownies can be wrapped in plastic and refrigerated up to 5 days.

In attempting to lower expectations, Gravity’s studio Warner Bros points out that even critically acclaimed adult-skewing dramas—like David Fincher’s The Social Network and Martin Scorsese’s The Departed--don’t do $35 mil or higher in fall opening weekends. (Those movies made $22.4 mil and $26.9 mil respectively.) To that end, Warner Bros insists they’d be happy if Gravity hit even $30 million in its opening weekend. As tracking isn’t an exact science, it’s too soon to declare Gravity a hit. But this is definitely a promising sign for the harrowing space drama that won praise as it hit the Venice, Telluride and Toronto International Film Festivals.



Watch Spring Breakers Online A lot of what we've seen from the Ender's Game promotional content has focused on the threat of an alien war -- the latest TV spot included -- and given the backdrop of this futuristic story, that's not all that surprising. The cast --Which includes Harrison Ford, Ben Kingsley and Asa Butterfield -- and the visual effects are two huge selling points for the film. But those who've read Orson Scott Card's novel know there's a bit more to this story than thrilling space battles and apocalyptic alien invasion imagery. Still, the spot sure is exciting. In addition to space battle scenes, a glimpse or two of children floating in zero gravity and some earth-set invasion snippets, the TV spot also includes the sight of a child assuring someone that he'll do everything he can to win this war. It's another exciting promo to add to the other content we've seen, videos, photos and propaganda posters included. But as a fan of the book, I find myself growing more and more eager to see more glimpses of the training side of this story.

While that’s far-fetched and thin, we can at least hope that it means Howard might actually have a scene in the new movie as amazingly cool as this:Then again, that’s pure Spielberg spectacle, and as much as I adore Safety, Trevorrow hasn’t shown that he’s up to that kind of popcorn staging … yet.Casting Howard in a major summer tentpole film seems so 2004, though, doesn’t it? I mean, the talented actress hasn’t really proven herself to be a bankable leading lady. Though she has been part of major sequels (like the despised Spider-Man 3) and pretigious Oscar bait (like The Help), I more associate her with envelope-pushing indies like Lars von Trier’s Manderlay and the cancer comedy 50/50, in which she had a small role. Universal must have a key role that Howard fits for Jurassic World. Maybe we’ll see a plot summary soon to learn where she fits in the grand scheme of the next Jurassic film, which will be in theaters on June 12, 2015.



Watch The Mortal Instruments City of Bones Online As the bulk of the novel's story is less on the war and more on Ender's training, his interactions with his fellow Battle School students and the mental and emotional toll Battle School takes on Ender, who's just a child playing games that aren't games. In terms of my interest in the story and what I loved so much about the book, the space war falls second to Ender's story.

While her father preps Rush for a wider release, Bryce Dallas Howard might be signing her name for an anticipated sequel in a lucrative franchise eyeing a 2015 release. That would be Jurassic World, which The Wrap reports wants Howard to plug in to a lead role. The trade says that the actress “has long been rumored” for a key part in the sequel, but that she “only recently received an offer.” Colin Trevorrow, who directed the outstanding time-travel romance-comedy Safety Not Guaranteed will direct the latest film in Universal’s dinosaur franchise.



Though a lot of what we've seen from the promotional content has focused on the alien attacks and space war, there have been hints that there's more to the story than a child leading a war against aliens. Take, for example, the calendar photos we shared with you earlier this week, all of which focus on Ender at Battle School, standing among his peers, standing in the Mess Hall, sitting in class and training in the zero-gravity Battle Room. We also know that the Mind Game Ender frequently plays in the book will be featured in the film, though there hasn't been so much as a glimpse of that in the promos, from what I've seen. But that's ok. We've been told it's going to be there, and it's ok that they're not showing us everything in the promos ahead of the film's release. So, I'll remain optimistic and enjoy the shiny visuals we're seeing in these promos, while waiting patiently for another month (and a few days) to see how the film looks.
