Chocolate Banana Cream Pie





Chocolate Cookie Crumb Crust



2 cups [500 mL] chocolate cookie crumbs

1/3 cup [75 g] melted butter



Chocolate Banana Filling



1 tablespoon [7 g] unflavored gelatin

1/4 cup [60 g] sugar

2 eggs

1 1/4 cups [310 mL] milk

1/2 cup [125 mL] semi-sweet chocolate chips

1 cup [250 mL] mashed bananas

1 teaspoon [5 mL] vanilla

1 cup [250 mL] whipping cream

Whipped cream, to decorate

Chocolate curls, to decorate







For the chocolate cookie crumb crust, well mix together chocolate cookie crumbs and melted butter.

Delicately press chocolate cookie crumb mixture over bottom and sides of a 9-inch [23-cm] pie plate; set aside.

For the filling, combine unflavored gelatin and sugar into a saucepan.

Beat together eggs and milk before stirring into mixture.

Heat over low heat stirring to completely dissolve the gelatin.

Add chocolate chips; cook stirring until completely melted.

Beat mixture using a wire whisk or a rotary beater until chocolate is well blended.

Remove from heat; stir in mashed bananas and vanilla.

Transfer into a large bowl; refrigerate, stirring occasionally, until mixture resembles unbeaten egg white consistency.

Whip cream until stiff peaks form.

Fold whipped cream into cold banana mixture.

Evenly spoon into reserved chocolate cookie crust.

Refrigerate until set before serving, decorated with whipped cream and chocolate curls.
