Caesar Salad

2 medium Romain lettuce heads

1 egg

1/3 cup [80 mL] olive or salad oil

2 tablespoons [30 mL] fresh lemon juice

1 clove garlic, crushed

or

1 1/2 tablespoons [22.5 mL] garlic powder

Salt and pepper, to taste

1/3 cup[75 g] grated Parmesan cheese

1 [1 3/4-ounce / 50-g] can anchovy fillets, well drained

1 cup [250 mL] Caesar croutons







Rinse, drain, well pat dry then tear to shred lettuce leaves into small pieces.

Into a large bowl, beat togehter egg, oil, lemon juice, crushed garlic or garlic powder, salt and pepper.

Add lettuce pieces; mix delicately to well coat with salad dressing.

Add grated Parmesan cheese and anchovy fillets.

Mix delicately until well mixed in, then top salad with Caesar croutons.

Serve immediately.
