Teriyaki Pork Chops with Vegetables





Servings: 4





4 pork chops

1/2 cup [125 mL] mandarin ginger sauce

1 1/2 cups [375 mL] minute rice

1 tablespoon [15 mL] sesame oil

1/2 cauliflower, into flowerets

1/2 cup[125 mL] snow peas

1 sweet red pepper, membranes removed and seeded, into strips

2 tablespoons [30 mL] teriyaki sauce







Generously brush pork chops with mandarin ginger sauce.

Set aside.

Boil rice according to the instructions on the box.

Over medium heat, preheat sesame oil into a non-stick frypan.

Stir-fry together broccoli flowerets, snow peas and sweet red pepper stirps for 4 to 5 minutes, stirring in teriyaki sauce towards the end of cooking time.

Into a clean non-stick frypan, brown reserved pork chops for 2 to 3 minutes on each side, until no longer pind inside.

Serve pork chops over a bed of rice, along with vegetables.
