Marinated Mediterranean Chicken Salad

4 chicken whites

1/2 cup [125 mL] sundried tomato oregano herb salad dressing

12 sweet red pepper strips, membranes removed and seeded

12 sweet yellow pepper strips, membranes removed and seeded

Whole pitted ripe olives, to taste

Chopped Romaine lettuce leaves for 4

Small cubes Greek Feta cheese, to garnish

More sundried tomato oregano herb salad dressing, to serve







Leave chicken whites to marinate in salad dressing for 20 to 60 minutes.

Preheat barbecue to medium-high intensity.

Brush sweet red and yellow pepper strips with salad dressing; thread 3 of each onto 4 skewers.

Grill chicken halves onto hot barbecue rack until no longer pink inside for approximately 10 minutes, along with vegetables until done.

Slice diagonally then arrange chicken strips along with vegetables over chopped lettuce.

Serve, garnished with Greek Feta cheese cubes, along with more salad dressing on the side if desired.
