Ingredients:
** 2 shots (3 oz.) espresso
** ¼ cup granulated sugar
** 2 ½ cups low-fat milk

Preparation:
1. Stir sugar into espresso; cool mixture. Stir milk and pectin into espresso mixture until pectin is dissolved. Fill a glass with ice and either serve mixture over ice or pour glass contents into blender.
2. Blend for 30-45 seconds.

** 2 slices of salmon,

Directions:
Lay the salmon in a baking-dish, place pieces of butter over it, and add the other ingredients, rubbing a little of the seasoning into the fish; baste it frequently; when done, take it out and drain for a minute or two; lay it in a dish, pour caper sauce over it, and serve. Salmon dressed in this way, with tomato sauce, is very delicious.

Time. About 45 minutes.


2. Collared salmon.

Ingredients:
** A piece of salmon, say 3 lbs.,
** A high seasoning of salt, pounded mace, and pepper;
** water and vinegar,
** 3 bay-leaves.

Directions:
Split the fish; scale, bone, and wash it thoroughly clean; wipe it, and rub in the seasoning inside and out; roll it up, and bind firmly; lay it in a kettle, cover it with vinegar and water (1/3 vinegar, in proportion to the water); add the bay-leaves and a good seasoning of salt and whole pepper, and simmer till done. Do not remove the lid. Serve with melted butter or anchovy sauce. For preserving the collared fish, boil up the liquor in which it was cooked, and add a little more vinegar. Pour over when cold.

Time. 45+ minutes.


3. Salmon a la genevese.

Ingredients:
** 2 slices of salmon,
** 2 chopped shalots, a little parsley, a small bunch of herbs, ** 2 bay-leaves,
** 2 carrots, pounded mace, pepper and salt to taste,
** 4 tablespoonfuls of Madeira,
** 1/2 pint of white stock, thickening of butter and flour,
** 1 teaspoonful of essence of anchovies, the juice of
** 1 lemon, cayenne and salt to taste.

Directions:
Rub the bottom of a stew pan over with butter, and put in the shalots, herbs, bay-leaves, carrots, mace, and seasoning; stir them for 10 minutes over a clear fire, and add the Madeira or sherry; simmer gently for 1/2 hour, and strain through a sieve over the fish, which stew in this gravy. As soon as the fish is sufficiently cooked, take away all the liquor, except a little to keep the salmon moist, and put it into another stewpan; add the stock, thicken with butter and flour, and put in the anchovies, lemon-juice, cayenne, and salt; lay the salmon on a hot dish, pour over it part of the sauce, and serve the remainder in a tureen.

Time. 1-1/4 hour.

** 6 eggs

** 1 jar (16 oz.) thick and chunky red salsa, divided
** 1 can (15 oz.) red kidney or black beans, drained and rinsed
** 1 cup whole kernel corn (about 3 oz.)
** 1 cup chopped green, yellow and/or sweet red pepper (about 5 oz. or 1 medium)

Directions:
1. Evenly coat 11 x 7 x 2-inch baking pan with spray. Set aside. In medium bowl, beat together eggs and cheese. Stir in rice. Pour into prepared pan. Smooth with back of spoon or gently shake pan to spread rice mixture evenly in pan.
2. Gently spread 1 cup of the salsa over rice mixture. In medium bowl, stir together beans, corn and pepper. Evenly spoon bean mixture over salsa. Drizzle remaining 1 cup salsa over bean mixture.
3. Bake in preheated 350 degree F oven until custard is puffed and begins to pull away from sides of pan and knife inserted near center comes out clean, about 55 to 60 minutes.

You may also use boiled eggs in the making of cornbread dressing and/or giblet gravy, which are both popular Easter dishes in some southern states.

The good news is that there are plenty of dishes that go wonderfully well with eggs. If you like ham this is a great dish to serve with dressing, to make ham salad with later, and to simply have along with your favorite egg recipe. Ham is relatively simple to make as the hard part is often waiting on it to be finished. If you want even more simplicity the only thing you really need to do to have an excellent ham dinner is poor a can of Coca-Cola over the ham, cover it in aluminum foil, and bake it for the necessary duration. It really can't get any easier than that though there are plenty of more complicated ham recipes available.

You will want to offer plenty of side dishes to compliment your main dish. Popular favorites are vegetables, macaroni and cheese, mashed potatoes, dressing, sweet potato casserole, and rolls. These are all relatively simple to prepare, not very time consuming and can also be delegated to guests if you'd like without too terribly much fuss. You'll also want to have a few appetizers on hand for the time before dinner is ready and a couple of desserts for the perfect finish - as if those chocolate bunnies from the Easter basket's are not enough.

For those looking for fare that is a little lighter on Easter I recommend offering salads with low fat dressing, steamed veggies, use diet coke on the ham instead of regular and prepare at least one sugar free dessert as well as offer some fruit and a raw veggie platter with fat free dip along with the appetizers. Easter is a day to celebrate and you shouldn't leave family members who are dieting to dread their lack of healthy eating options. You'll also find yourself surprised by those who, given the option, will eat the healthier foods if they are available.

Make-Ahead Crispy Chicken Cutlets



2 large egg yolks
1/2 cup mayonnaise
2 tsp. kosher salt
4 lb. skinless, boneless chicken cutlets, pounded 1/4" thick (for smaller pieces, quarter cutlet before pounding)
3/4 cup extra-virgin olive oil
6 cups panko (Japanese breadcrumbs)
2 Tbsp. mustard powder, garlic powder, finely grated Parmesan, or dried herbs (optional)

Whisk egg yolks, mayonnaise, and salt in a large bowl until smooth.
Add chicken and turn several times with tongs until evenly coated.
Heat oil in a large skillet over medium-high until shimmering.
Add panko and cook, stirring constantly with a wooden spoon,
making sure to get around the edges to incorporate darker breadcrumbs, until golden brown, about 5 minutes.
Let cool slightly, then stir in mustard powder, if using.
Using tongs, place a cutlet in skillet.
Pat surrounding toasted panko onto cutlet with one of your hands, pressing firmly to adhere.
Turn and repeat on the other side with more breadcrumbs.
Lightly shake off excess breadcrumbs.
Transfer to a wire rack set inside a rimmed baking sheet.
If you are making these ahead and freezing, skip wire rack and place directly on a baking sheet.
Repeat with remaining cutlets, spacing evenly apart on baking sheet.
Discard any remaining panko. At this point, breaded cutlets can be frozen up to 3 months.
Freeze chicken on baking sheets until firm, about 1 hour, then transfer to resealable freezer bags or layer in an airtight container with sheets of parchment between cutlets.
Preheat oven to 450°F and bake cutlets until cooked through and juices run clear when pierced with a knife,
10–12 minutes.
If cutlets are frozen, they will take a little longer, 14–16 minutes.
You can also bake chicken 1 or 2 at a time in a toaster oven at 450°F.
Bake directly on rack, 12–14 minutes.


Gnocchi with Bacon and Roasted Cauliflower

1 medium head cauliflower (about 2 pounds), trimmed and cut into small florets
2 tablespoons capers, drained
2 tablespoons extra-virgin olive oil
Kosher salt and freshly ground pepper
1 16 ounce package potato gnocchi
4 slices bacon
2 tablespoons pine nuts or roughly chopped hazelnuts
2 cloves garlic, thinly sliced
2 tablespoons roughly chopped fresh chives

Preheat the oven to 450 degrees F.
Toss the cauliflower, capers and 1 tablespoon olive oil on a rimmed baking sheet; season with salt and pepper.
Roast, stirring halfway through, until the cauliflower is tender and lightly browned, 25 to 30 minutes.
Meanwhile, bring a large pot of salted water to a boil.
Add the gnocchi and cook as the label directs.
Reserve 1/2 cup cooking water, then drain.
Cook the bacon in a large nonstick skillet over medium-high heat, turning, until crisp, about 8 minutes.
Remove to a paper towel lined plate, reserving the drippings in the skillet.
Add the gnocchi to the skillet and cook, stirring occasionally, until lightly browned and well coated, about 3 minutes.
Add the pine nuts and garlic to the skillet and cook, stirring,
until the pine nuts are lightly toasted and the garlic is softened, about 2 minutes.
Stir in the roasted cauliflower, the remaining 1 tablespoon olive oil and 1/4 cup of the reserved cooking water,
adding more cooking water as needed to loosen.
Remove from the heat.
Crumble the bacon and stir into the gnocchi along with the chives.
Season with salt and pepper.

About half of them were obese and the remaining half of normal weight. In both cases, higher fat consumption increased insulin resistance.

Then we tasted it, and were totally hooked: it’s delicious! Ginger and turmeric combine with citrus and maple syrup to make the perfect blend of healing nutrients. We streamlined the recipe to make it ultra-easy, too:

Ingredients:
** 2 cups alkaline water
** 1/2 teaspoon powdered ginger
** 1/2 teaspoon powdered turmeric
** 1 tablespoon maple syrup
** Juice of 1/2 lemon

Directions:
1. Bring water to a boil, then add powdered herbs. Simmer for 10 minutes.

2. Strain tea into a mug, add maple syrup and lemon, stirring to combine. Drink warm.

Makes 1 serving.

1 pound lean ground beef
2 tablespoons butter
1 small yellow onion diced
1 small green bell pepper diced
6 ounces pepperoni quartered
2 cups marinara sauce
2 teaspoons Italian seasoning
1/2 teaspoon Kosher salt
1/2 teaspoon fresh ground black pepper
8 ounces mozzarella cheese shredded

Cook the large shell pasta according to the directions on the bag and drain (do not rinse).
Add the ground beef to a large cast iron skillet (this browns very well) and brown until a deep brown crust appears before breaking the beef apart.
Stir the ground beef and brown until a deep crust appears on about 50 or so percent of the beef.
Remove the beef (you can leave the fat) and add the butter and the onions and bell peppers.
Let brown for 1-2 minutes before stirring, then let brown for another 1-2 minutes before stirring again.
Add the beef back into the pan.
Add the marinara sauce, pepperoni, Italian seasoning, salt, and black pepper into the pan.
Cook until the mixture is only slightly liquidy (about 75% of the mixture is above liquid), 3-5 minutes.
Add the pasta back to the pan and mix together gently.
Turn off the heat, add in the mozzarella cheese and stir until melted.

** 1 lb Wild American Shrimp, cleaned

** 1 small bay leaf
** 1/3 tablespoon fresh-squeezed lime juice
** 21/2 cups water
** 2/3 teaspoon turmeric
** 3 tablespoons lime juice
** 2 pinches of turmeric powder
** 1/3 tablespoon red chili powder
** 3 tablespoons cilantro, chopped

Directions:
1. Place the peeled garlic cloves in a food processor with the salt and mince. Toss with the shrimp and set aside for 15 minutes.

2. In a saucepan, bring the water to a boil with the bay leaf, 1/3 tablespoon lime juice and the 2/3 teaspoon turmeric. When the water is boiling, add the shrimp, stirring, and cook just until opaque, about 2-3 minutes at most. Do not overcook! Drain.

3. Immediately spread the shrimp onto a large baking sheet to cool, as they will continue to cook. Mix the additional lime juice, red chili powder and additional turmeric together and pour over the warm shrimp. Toss until well-combined. Add the chopped cilantro leaves to the cooled shrimp.

** 1/2 bag chickpeas
** 11/2 bulbs roasted garlic
** 1/8 cup fresh-squeezed lemon juice
** 1 cup tahini sauce
** 1 preserved lemon
** 2 avocados, ripe, remove pits & scoop out flesh
** 1 tablespoon curry powder
** salt & pepper to taste

- Place chickpeas in salted boiling water and cook until soft, about one hour. Drain in a colander and then puree in a food processor with the rest of the ingredients. Taste for seasoning.

NOTE: To make your own quickly preserved lemons: Lightly score 4 lemons all the way around (do not cut through to the flesh) and then boil in 1 cup water, 1 cup fresh lemon juice, 2 bay leaves, 1/2 tablespoon whole black peppercorns and 1/4 cup kosher salt until lemons are soft, approx. 30 minutes.

To assemble:
Mound the Hip Hummus in the middle of the plate and surround with the Turmeric Shrimp.

2. Bring mixture to a boil, and stir. Reduce heat, cover and simmer until rice is tender, and moisture is absorbed, 25 to 30 minutes.

White Chocolate Apricot-Hazelnut Truffles

Ingredients:
** 1 1/4 C hazelnuts (aka filberts)
** 1/4 C finely chopped dried apricots
** 24 ounces imported white chocolate
** 6 Tbl heavy cream

Instructions:
1. On a baking sheet, spread out 1 1/4 C hazelnuts. Bake at 350 F for 10 minutes, or until nuts are light brown and the dark skins are cracked. Remove as much of the skins as possible by rubbing nuts in a terrycloth towel. Finely chop nuts in a food processor.

2. In a 1-quart glass container, combine 12 ounces imported white chocolate, cut up and 6 Tbl heavy cream. [Note: I used the Nestle white chocolate chips that are available in my local supermarket. It worked well, but I am sure it would be better if you use a good import instead.]

3. Microwave mixture on MEDIUM (70% power), 3 to 4 minutes, stirring twice, until chocolate is melted and smooth. [You can do this step in a double-boiler if you don't have a microwave.] Stir into melted chocolate 3/4 C of the chopped nuts and 1/4 C finely chopped dried apricots.

4. Cover the mixture and refrigerate 1 to 2 hours, or until mixture is firm enough to hold its shape. (If mixture gets too hard, let stand at room temperature for 30 minutes or so, until firm but soft enough to shape.)

5. Form 28 smooth 1 1/4-inch diameter balls, either by using a 1 1/4inch automatic-release ice cream scoop, or by rolling 1 Tbl of the mixture between your (clean!) hands. Place on a wax paper-lined cookie sheet and refrigerate until firm, 1 hour or longer.

** 2 cloves garlic, minced
** 1/4 cup olive oil
** 6 portobello mushrooms

** 1 pound lean ground beef

** Cherry juice (4 to 5 tsp)

Directions:
1. In bowl, stir together flour, cocoa, salt, baking powder and baking soda. In another bowl, beat butter and sugar until fluffy. Add egg and vanilla to butter-sugar mixture and beat well. Gradually add dry ingredients to butter-sugar mixture and beat until well blended.

2. Shape dough into 1-inch balls. Place on ungreased cookie sheet and push down center of each ball with thumb. Drain cherries and reserve juice. Place 1 cherry in center of each indentation. Heat oven to 350 degrees.

3. For frosting, put chocolate chips and sweetened condensed milk in small saucepan. Heat until chocolate melts. Stir in 4 teaspoons cherry juice. If too thick, add more juice.

4. Spoon 1 teaspoon frosting over each cherry. Spread to cover cherry. Bake for 10 minutes or until done. Do not overcook. Remove to wire rack and cool. The cookies freeze nicely.

Good cholesterols are called HDL, and their job in the body is to take excess bad cholesterol (LDL) to the liver, where it can be broken down and then will leave the body. LDL is actually not needed by your body at all from foods. Our bodies make enough of this kind of cholesterol on its own. It is the LDL cholesterol that hurts our hearts, not the HDL cholesterol, which actually helps our hearts be reducing the amount of LDL cholesterol in the body.

LDL stands for low-density lipoproteins. Because this substance has a low density, it does not flow through the blood stream as readily as it should. The red blood cells easily release the LDL cholesterol and it sticks to the walls of your blood vessels, especially in the arteries leading to your heart. This is bad for a number of reasons.

First, when the LDL cholesterol builds up on your arteries, it reduces the amount of blood that can fit through at a time, since the artery becomes smaller. That means your heart has to pump harder and faster in order to allow the same amount of blood to flow through your body. Over time, this makes your heart tired and not as strong. In the worst-case scenario, the blood vessel becomes so built up with LDL cholesterol that your artery could close completely. When this happens, your heart essentially panics because it is not getting the blood it needs and it starts beating rapidly to try to pump the blood. This causes a heart attack.

You can also have a heart attack from LDL cholesterol build up if a piece of the build-up, called plaque, breaks off and floats down the blood stream. When it reaches a smaller part of the blood vessel, it will get stuck and block the blood, which again causes a heart attack. If the piece of plaque travels to the brain instead of the heart, it will cause a blockage in this area of the body, which in turn causes a stroke. Therefore, it is simply important to cut out of your diet the foods high in cholesterol so that you can prevent heart disease and other problems in the body.

** 12 slices Wonder® Classic White Bread
** 1/2 cup light sour cream
** 2 tablespoons orange marmalade

--b) Lightly brush mini-muffin pan with melted butter. Gently press each round of bread into a mini-muffin cup, forming it into a bowl shape. Repeat, making as many Croustades as specified in the recipe.

2. Bake about 9 to 10 minutes, or until golden brown.
Cool slightly, then remove the Croustades from the pan and allow them to cool completely on a wire rack.

3. Curried Chicken Salad: In a medium bowl combine the sour cream, marmalade, curry powder, salt and pepper. Add the celery, green onions, red pepper and chicken breast. Stir to combine; flaking the chicken into small pieces. Gently fold in peanuts.

** 2 pounds medium fresh mushrooms, stems removed

2. Stir together the cream cheese and goat cheese until well blended. Mix in the onions and mushroom stems. Use all of the filling to generously fill each mushroom cap and place, filling side up, in a baking pan.
3. Preheat the oven broiler for high heat. Melt the remaining 1/4 cup of butter with the garlic in a small saucepan over medium heat, cook the garlic for 1 minute once the butter has completely melted. Drizzle the garlic butter over the filled mushroom caps.
4. Place the pan of mushrooms in the preheated oven to broil until golden brown, about 5 minutes.

3. Place stacks in the microwave, and cook 40 to 60 seconds on Medium. Cool slightly before serving.

2. Mash with a fork, then transfer to a fine mesh strainer or sieve, pressing to release excess water. Return to mixing bowl. Melt 4 tablespoons butter in a large skillet over medium-high heat.

3. Add onion and garlic, and cook until lightly browned being careful not to burn the garlic. Remove from heat, stir into the zucchini. Mix in the eggs, Parmesan cheese, bread crumbs, and basil. Season with salt and pepper.

4. Butter an 8 inch square baking dish with remaining butter. Pour the zucchini mixture into the dish, and spread evenly. Bake in the preheated oven until firm in the center and lightly browned on top, about 45 minutes.

Allow it to cool down, cut into squares, and serve.

1. Heat the olive oil in a medium saucepan over medium heat. Mix in tomatoes, fresh basil leaves and garlic. Cook and stir until heated and slightly tender, about 5 minutes.

2. In a small bowl, blend cream cheese with herb and garlic feta. In a toaster or an oven heated to 350 degrees F (175 degrees C), lightly toast the sourdough bread slices.

3. Spread toasted bread slices with the cream cheese blend. Top with tomato mixture. Sprinkle with desired amount of mozzarella cheese.

Amazing Chocolate Chip Cookies

Ingredients:
** 4 cups (1 ounce) squares unsweetened chocolate
** 1 cup butter
** 2 cups all-purpose flour
** 2 cups yellow cake mix (special ingredient for flavor)
** 1 teaspoon baking soda
** 2 teaspoon baking powder
** 1/2 teaspoon salt
** 1 1/2 cups white sugar
** 1 cup brown sugar
** 4 eggs
** 2 teaspoon vanilla extract
** 1 1/4 cups sour cream
** 3 1/2 cups semisweet chocolate chips

Directions:
1. Preheat oven to 375 degrees.
2. Melt butter and unsweetened chocolate together.
3. Sift cake mix, flour, baking soda, baking powder, and salt together.
4. In a large bowl, beat sugar, eggs, and vanilla.
5. Stir the chocolate mixture into the eggs.
6. Stir in the sifted ingredients with sour cream.
7. Mix in chocolate chips.
8. Drop rounded tablespoonfuls cookie sheets.
9. Bake until edges are starting to turn dark brown.

Note: You might notice my secret ingredient. It is the boxed yellow cake mix. Cake flour gives the cookie a little more body than the regular unbleached flour.

You may use any of your favorite brands. If you are making smaller cookies don't forget that the baking time goes down. Many ovens produce heat from the bottom of the oven, so as not burn the bottom of the cookies many times I will double pan the cookies before I bake them.

Baking is similar to a gigantic chemistry experiment. The best way to get the experiment right is to keep experimenting. Once you have found the best combinations of ingredients and procedures, stick with it.

Insane chocolate brownies

Insane chocolate brownies

Ingredients:
** 3/4 cups flour
** 1/4 t. salt
** 1 1/2 squares unsweetened chocolate
** 1/2 c. margarine or butter
** 2 eggs
** 1 cup sugar
** 1 t. vanilla
** 1 ripe banana, well mashed
** 1/2 cup semi-sweet chocolate chips
** 1/2 cup broken walnut meats
Note: No baking powder or soda. This makes them extra dense and moist.

Directions:
1. Preheat oven to 350 F, (325 for a glass pan). Combine flour and salt in a small bowl. Set aside. Melt margarine or butter and unsweetened chocolate in a small pan on low heat. Cool to room temperature.
2. In a large bowl, beat eggs, sugar and vanilla. Add mashed banana. Stir in chocolate mixture. Gradually sift and stir in flour mixture. Add chocolate chips and walnuts.

3. Pour into an 8"x 8" pan that has been sprayed with Pam or cooking oil. Bake for 30 to 35 minutes.

Mocha Truffles

Ingredients:
** 2 packages (12 oz each) Semisweet chocolate chips
** 8 oz. cream cheese, softened
** 3 T instant coffee granules
** 2 tsp. water
** 1 lb. good dark chocolate cocoa confectionery coating white confectionery coating, optional

Directions:
1. In a microwave-safe bowl or double boiler, melt chocolate chips. Add cream cheese, coffee and water; mix well. chill until firm enough to shape. shape into 1" balls and place on a waxed paper-lined cookie sheet. Chill for 1-2 hours or until firm.

2. Melt chocolate coating in microwave-safe bowl or double boiler. Dip balls and place on waxed paper to harden. If desired, melt white coating and drizzle over truffles

Makes about 5 1/2 dozen

Chocolate Covered Truffles 2020

Ingredients:
** 1/4 C butter
** 1 1/2 lbs. real semisweet chocolate
** 3/4 C non-dairy coffee creamer, any flavor
** 1/2 teaspoon vanilla extract
** 1 1/2 pounds real milk chocolate for dipping
** 1 cup finely chopped chocolate, milk or semisweet for decoration

Directions:
1. Melt semisweet chocolate in double boiler over hot water. Heat butter, creamer and vanilla in another saucepan to 125° F on a candy thermometer. Add to semisweet chocolate all at once, beating until smooth and creamy.

2. Chill in refrigerator until nearly set but still pliable. Beat with mixer until light and fluffy. Spread in 9 inch buttered
pan until set enough to roll into small balls. Melt milk chocolate over double boiler.

3. Dip truffles in melted chocolate, then sprinkle generously, or roll in, chopped chocolate.

Makes about 3 dozen truffles
