Filled Bitter Chocolate Turtles

Comments: Use the blade of a knife already dipped into hot water to unmold turtle chocolate shells.

Ingredients Preparation

5 1/4 ounces [150 g] bitter chocolate
3 1/2 ounces [110 mL] whipping cream
1 cup [250 mL] whipped cream
4 chocolate half egg shells
10 1/2 ounces [300 g] white almond paste



Into a casserole, bring together bitter chocolate and whipping cream to a boil.
Stir until smooth; leave to cool completely.
Fold in whipped cream.
Fill each chocolate half egg shell with mixture.
Cover with plastic wrap; refrigerate.
Shape turtles heads and feet, using white almond paste.
Unmold chocolate turtles; arrange rounded part up, onto a flat surface.
Add turtles heads and feet.
