Honey-Glazed Beets

Ingredients Preparation
2 packages baby beets, scrubbed [28 ounce / 794 g]
2 tablespoons [30 g] butter
2 tablespoons [30 mL] honey
2 tablespoons [30 mL] raspberry vinegar
1/4 teaspoon [1 mL] salt
1/4 teaspoon [1 mL] pepper
Bring a saucepan of salted water to a boil over high heat.
Boil beets for 5 minutes.
Drain, rinse under cold water and then cut in half lengthwise.
Bring butter, honey and vinegar to a boil into a saucepan over medium-high heat.
Cook until reduced by half, for 5 to 10 minutes.
Add beets; salt and pepper.
Stir to coat, reheat and serve.
