Goat Cheese Stuffed Mushroom Caps

Ingredients Preparation

1/4 cup [60 mL] white wine
1 tablespoon [15 mL] olive oil
1 tablespoon [15 mL] freshly chopped thyme
1 teaspoon [5 mL] roasted garlic seasoning paste
Pinch of salt
1/4 teaspoon [1 mL] pepper
1 pound [454 g] cleaned fresh mushrooms, stems removed
2 [8 3/4-ounce / 250-g each] packages pepper goat cheese, at room temperature
2 teaspoons [10 mL] freshly finely chopped chives



Preheat oven to 375°F [190°C].
Into a bowl, toss white wine, olive oil, freshly chopped thyme, roasted garlic seasoning paste, salt, pepper and mushroom caps.
Leave to marinate for 5 minutes.
Into a clean bowl, fold together pepper goat cheese and chopped chives.
Remove mushrooms from marinade; stuff with goat cheese mixture, mounding slightly.
Arrange apart onto a baking sheet.
Bake into preheated oven for 20 minutes, then broil for 2 to 3 minutes.
Garnish with freshly finely chopped chives.
Serve warm, or at room temperature.
