Honey Cashew Chicken
(Serves 4)
Ingredients:
16 oz chicken breast, cut into cubes
2 teaspoons cornstarch
4 tablespoons oil
2 cloves garlic, minced
2 cups broccoli florets
1 small red bell pepper, diced
1 cup unsalted roasted cashew nuts
Sauce Ingredients:
3 tablespoons soy sauce
5 tablespoons honey
6 tablespoons water
2 teaspoons apple cider vinegar
1 teaspoon sesame oil
2 teaspoons cornstarch
Directions:
Rub the chicken with the cornstarch and let sit for 5 minutes
Mix all the ingredients in the sauce together. Stir to combine well. Set aside.
Heat up a skillet with the oil.
Add the garlic and sauté for 3-4 minutes.
Add the chicken and sauté until the surface turns white, then add in the broccoli, bell pepper and cashew nuts.
Stir to combine well before adding sauce.
Continue to stir fry until the chicken is cooked or the sauce thickens.
Serve immediately with steamed rice.
