FARMER'S SALAD
Ingredients
½ C. red wine vinegar
1 shallot, minced
1 tsp. salt
½ tsp. ground black pepper
1 Tbsp. honey
1 Tbsp. Dijon mustard
¾ C. olive oil
6 C. Lettuce mix
4 oz. Farmer's cheese, cubed
4 hard-boiled eggs, sliced
4 green onions, sliced
1 1/3 C. cooked quinoa
1 C. diced smoked turkey
2 C. diced tomatoes
½ C. sunflower seeds
Directions
1. In a large bowl whisk together the red wine vinegar, shallot, salt, pepper, honey and mustard, drizzle in the olive oil whisking until all ingredients are incorporated.
2. Pour dressing into a mason jar and refrigerate until use.
3. In a large bowl layer the lettuce, cheese, sliced eggs, quinoa, turkey, tomatoes and sunflower seeds.
4. Shake the dressing in the Mason jar, pour desired amount of dressing on the salad, toss to coat and serve.
