Curried Chicken on a Stick

Ingredients:

· 2 lbs. boneless chicken thighs cut into 1 ½ inch pieces (breasts could be used)

· 1 medium red onion cut in wide strips

· 8 oz. med button mushrooms

· 8 oz. coconut flavored low-fat yogurt

· 2 Tbsp. curry powder

· 1 Tbsp. Tandoori Seasoning

· 2 cloves garlic minced

· 1 tsp. hot smoked paprika

· 2 tsp. soy sauce

· Pinch salt and pepper

Method of Preparation:

1. Mix all ingredients except chicken well in a bowl.

2. Pat chicken with paper towels to remove excess moisture, and then toss in marinade making sure all chicken is well coated. Wrap tightly and marinated in refrigerator for 3-5 hours.

3. Skewer chicken, mushrooms, and onions on metal or soaked bamboo skewers.

4. Grill on medium to high heat 5-7 minutes or until chicken is 165°F in the center. Serve on Naan with raita and cucumber.

Mango Raita

Ingredients:

· 2 Cups plain yogurt (full fat is preferred)

· 2 ripe mangos, diced small

· ½ tsp. mustard powder

· ½ tsp. smoked paprika

· 1 roasted red chili pepper

· 2 tsp. chopped cilantro

· Pinch salt

Method of Preparation:

1. Puree 1 mango in blender or food processor with chili pepper.

2. Mix with all other ingredients. Cover and let sit in refrigerator at least 4 hours.
