Cinnamon Apple Pie, Streusel Topping

1 [9-inch / 23-cm] pie shell

6 cups [1.5 L] Cortland apple slices*

2/3 cup [160 mL] brown sugar

2 tablespoons [17.5 g] all-purpose flour

1 teaspoon [5 mL] cinnamon

Whipped cream or vanilla ice cream, to serve [optional]



Streusel Topping



3/4 cup [190 mL] rolled oats

1/3 cup [45 g] all-purpose flour

1/4 cup [60 mL] brown sugar

1/4 cup [60 g] cold butter dices







Preheat oven to 425°F [220°C].

Line a 9-inch [23-cm] pie plate with pie shell.

*Peel, core then slice apples into a bowl.

Mix together brown sugar, flour and cinnamon; evenly coat apple slices with mixture.

Into a clean bowl, mix together topping rolled oats, flour and brown sugar.

Using a pastry cutter or 2 knives, cut in butter until mixture resembles coarse meal.

Evenly sprinkle all over apple slices.

Bake into preheated oven for 15 minutes.

Lower oven temperature to 350°F [180°C].

Bake pie for approximately 30 to 35 minutes, until apples are tender.

Transfer onto a wire rack; leave to cool before serving, warm.
