Iron skillet corn bread

corn bread recipe:



Dry ingredients

1 1/4 cups flour

3/4 cups corn meal

1/2 cup sugar

1 teaspoon salt

4 teaspoons baking powder

Combine together in a large bowl



Wet ingredients

3 eggs

1 cup milk

1 heaping tablespoon mayonnaise (almost three level ones)

Mix together in med bowl and add to dry mix



1/3 cup shortening (I use butter flavored crisco) melted in the oven as it preheats to 350 degrees. Pour melted shortening into batter -stir together and then pour mixture back into hot skillet. Careful! This is a skill to not get burned- not for kids to do!



Bake 35 min or until knife inserted into middle comes out clean.
