Poached Vanilla Pear
Oh you can feel it in the air! Fall is coming soon. I know it is just the last days of July and we still have August - but to look at that night sky and the fall coolness is starting to set in already. I hope for a long fall - but I dread the winter months. Living in the snow belt we can get hammered. We didn't get totally buried last year - and the year before wasn't too bad - so we're due.
But as fall approaches, the apple and pear picking starts - great canning and great recipes -
4 pears.
2 tablespoons of raspberries
1 teaspoon of honey
1 teaspoon of vanilla
Peel each pear and cut in half and scoop out the core.
Place in a pan and barely cover with water. Add the honey and the vanilla essence and simmer gently for about five minutes or until the pears are tender.
Stir in the raspberries.
Lift out all the fruit including the raspberries and place in a serving dish.
Boil the juice to reduce to a syrup, then pour over the fruit.
Serve warm or chilled.
Yields four servings.
