Chilled Minted Melon Soup



preparation: 5 minutes • processing: 1 minute • yield: 4 cups (960 ml)





1/2 cup (120 ml) water

1/2 cup (120 ml) skim milk or soy milk

1 1/2 tablespoons honey

1/2 medium honeydew, diced

1/2 small lime, peeled

3 large mint leaves





1. Place all ingredients into the Vita-Mix

container in the order listed and secure lid.



2. Select Variable 1.



3. Turn machine on and quickly increase speed

to Variable 10, then to High.



4. Blend for 1 minute. Chill for at least 3 hours

before serving.
