1/2 ounce arugula
1 ounce fresh mozzarella cheese, diced
1 cup bruschetta
Sauce:
1 pound tomatoes
3 ounces extra virgin olive oil
fresh lemon juice
6-8 basil leaves
1 teaspoon salt
1/2 teaspoon ground pepper
Sauce:
Combine all in a bowl and let sit for 30 minutes before serving.
Toss sauce with mozzarella cheese.
Place on bed of arugula.
