Chicken Casserole with Pineapple



2 lbs. chicken pieces
2 carrots peeled and diced
1 large sweet pepper cut into chunks
1 can pineapple chunks, not drained
1 onion, chopped
4 cloves garlic, chopped
3 medium potatoes, peeled and cut into chunks
juice of one lime
1 can tomato sauce
Olive oil or butter
1 cup chicken broth
salt and pepper to taste
1 can black olives

Sauté the onion and garlic in a skillet with butter or olive oil.
After 2-3 minutes, add the meat that you previously seasoned with salt, pepper and olive oil.
When the meat gets golden color, add finely chopped carrots, peppers and potatoes and add chicken broth.
Simmer until tender, 8-10 minutes.
Add pineapple, tomato sauce, lime juice, olives, and stir 3-5 minutes until well mixed.
Put into large casserole dish or large cast iron skillet.
Bake at 350 for 45 minutes.
