Roasted portabello mushroom salad melts

Original recipe called for tuna but my wife and I prefer salmon.

Get two large Portobello mushrooms. about 4-5 inches wide.

Scrape out black "gills" in center. Brush with olive oil and bake for 15 mins @ 400*.

Make a can of salmon or tuna as you normally like it.

After mushrooms baked...put slice of red onion, slice of fresh tomato and scoop of tune or salmon salad on top...top that with a slice of you favorite cheese...I used Pepper Jack.

Put back in oven for 10-15 mins to melt cheese.
