Port-a-Pit BBQ Chicken
Started in 1986, Port-a-Pit has been ranked among the “100 Foods You Must Eat in 100 Counties” that was featured in Our State magazine - located in Statesville but their mobile grill trucks are all over North Carolina.




1 lb butter, melted
1 cup water
1 cup vinegar
2 tablespoons salt
1 tablespoon pepper
4 tablespoons Worcestershire sauce


6 -8 lbs chicken pieces



Combine all marinade ingredients.
Pour over chicken in large roasting pan. Cover with aluminum foil.
Bake in 325 degree oven 30 to 45 minutes.
Grill chicken until browned (about 15 minutes) dipping in marinade several times.


Due to cross contamination - I reserve some of the marinade and use for basting so that the raw chicken never touches it.
