Sweet and Sour Cabbage



Ingredients Preparation

1 [1 1/4-pound / 568-g] small red cabbage
1 small onion
2 tablespoons [30 g] margarine
1 tablespoon [15 mL] cider vinegar
2 teaspoons [10 mL] brown sugar
Salt and black pepper, to taste



Remove outside leaves from cabbage.
Half cabbage; remove heart.
Slice into fine slices or chop cabbage.
Chop onion.
Into a large casserole, melt margarine over medium heat.
Stir-fry onion for 5 minutes, until softened.
Add cider vinegar, brown sugar and sliced cabbage.
Mix well; cover.
Leave to simmer for 8 to 10 minutes, stirring occasionally, until cabbage is cooked yet still a bit crisp.
Salt and pepper before serving.
