Bob Evans Farms Banana Nut Bread Loaf
The old-fashioned goodness of a moist, delicious banana bread that brings back the flavors, texture, aroma and love from Grandmas oven!
Preheat oven to 325 degrees F.
Grease an 8x4-inch loaf pan.
In bowl, combine, beat on medium/high speed and cream well:
½ cup butter, softened
1 cup granulated sugar
To this, add beat on high until smooth
2 large eggs
Mash 3 medium ripe banana (leaving no large chunks) and add to bowl; beat well
In separate bowl, whisk:
7 1/5 ounces (1 1/2 cups) all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
Add to wet mixture, adding:
1/4 cup buttermilk
1 teaspoon vanilla extract
Stir in:
1/2 cup chopped walnuts
Pour batter into prepared loaf pan. Bake in preheated oven for 1 hour 15 minutes or until done (do the toothpick test. The toothpick should come out clean.)
Cool in pan on rack for 1 hour before removing from pan.
Slice and serve.
