Carnival Cruise Nacho Cheese




2 tablespoons Butter
2 tablespoons Flour
3/4 cup Milk
3/4 cup Chicken Stock
2 1/2 cups Medium or Sharp Cheddar Cheese, Grated
1/4 cup Pickled Jalapeno, Chopped Fine
Ground Pepper To Taste

In medium sauce pan melt butter over medium-low heat.
Add flour and stir until flour starts to cook and thicken about 2 minutes.
Slowly stir milk into the flour mixture.
Stir over medium heat until milk mixture becomes thickened being careful not to boil.
Remove from heat and stir in grated cheese and pickled jalapeno.
Add pepper to taste.
Serve warm with Soft Pretzel Bites or Tortilla Chips.
