Mitchell Fish Market Shanghai-Style Tuna
Mitchell’s Fish Market is a premier upscale-casual seafood restaurant concept featuring the absolute freshest seafood. The Mitchell (Columbus) Fish Market group of restaurants serves this popular dish from their extensive menu – and although this recipe calls for tuna, other firm fleshed fish could be substituted. A hint of ginger, tangy citrus sauce and served over a bed or rice and spinach! This will yield 2 servings.



Fresh Tuna - 12 oz
2 servings cooked sticky white rice
1 package fresh spinach, blanched
4 oz ponzu sauce**see below – recipe included
scallions
sesame seeds
salt, pepper, ginger to taste

1. Place fish of choice on perforated pan and season with salt and pepper and ginger
2. Place into the steamer to cook, each fish will have a different time, check for doneness every 2 minutes
3. Place rice in the center of a large bowl and surround it with hot spinach
4. Set cooked fish on top of rice in the center of the bowl
5. Ladle ponzu over top of the fish and around the spinach
6. There should be a puddle of sauce in the bottom of the bowl
7. Garnish with scallions and sesame seeds

** a traditionally Japanense citrus-based sauce - tart, with a thin, watery consistency and a dark brown color; it’s a tangy soy-based sauce with a “snap” of citrus – fresh lemon and orange juice



Homemade Ponzu Sauce

1/2 cup low-sodium soy sauce
1/4 cup fresh orange juice
2 tablespoons fresh lemon juice
1 tablespoon water
1 tablespoon mirin (sweet rice wine)
1/8 teaspoon crushed red pepper


Combine all ingredients in a bowl. Cover and chill.
