Kelsey's 4 Cheese Spinach Dip
A delicious dip from Kelseys and you can make it right at home. Cheesy with spinach you can serve with fried pita wedges like Kelsey does, or use your favorite dippers.
8 ounces cream cheese, softened
3/4 teaspoon garlic powder (not garlic salt)
1/4 cup freshly grated Parmesan cheese
1 tablespoon freshly grated Romano cheese
1 tablespoon very finely chopped red bell pepper
1 green onion (scallion) white and green finely chopped
1/2 package frozen chopped spinach, thawed and squeezed dry
1/2 cup grated medium Cheddar cheese
1 pinch cayenne pepper
Preheat oven to 400 degrees F.
Combine the cream cheese, garlic powder, Parmesan, and Romano with a hand or stand mixer on medium speed until well mixed.
Add the red bell pepper and green onion and mix on medium-low until just mixed in.
Add the spinach and mix on low.
Transfer the mixture to an ovenproof dish and top with cheddar cheese and cayenne.
Bake at 375 degrees F for 15-18 minutes or until the edges are bubbly.
Remove the dish from the oven and let sit for 5-7 minutes before serving. Serve with fried or baked pita wedges or tortilla chips.
