Ireland's Angus Stuffed Steak from Triangle Ranch B&B near Badlands National Park, South Dakota
Onions, bread crumbs and seasonings rolled into round steak (or minute steaks)and oven baked to desired doneness. Serve with the optional glaze - recipe included.
2# slice of round steak (3/4 inch best) or 4 minute steaks will do
1 1/2 tsp. salt
1/4 tsp. pepper
2 c. dried bread crumbs or cubes
3 T. finely chopped onion
1 tsp. ground sage
1/3 c. milk
2 T. catsup
1 large egg (beaten)
Combine last 8 ingredients and toss gently until bread is dampened. Spread on steak evenly then roll the steak securing it with cotton string or skewers. Place in roaster with rack. Salt & pepper. Bake covered at 350 degrees for 45 - 50 minutes depending on how well done you like it. We do an optional glaze: 1 - 16 oz. jar of apple jelly combined with 1/3 c. prepared beef broth. Combine and pour over steak. Roast and baste occasionally.
*Slice as you would a jelly roll and serve with a little glaze for sauce.
