Margaritaville Jerk Shrimp Fajitas
Can't find Jammin' Jerk shrimp? You can easily make your own Jammin' Jamaican Jerk Sauce - recipe follows. full of flavor and packed with a bit of hit - Enjoy.
Serves 2

Fajitas:
1 (8-oz.) package Jammin’ Jerk Shrimp
1/2 red pepper, sliced
1/2 yellow pepper, sliced
2 slices of red onion
4 flour tortillas

Garnishes:
guacamole
sour cream
salsa
chopped cilantro

Stove Top Directions: Saute Jammin’ Jerk Shrimp, 1/2 red pepper sliced, 1/2 yellow pepper sliced and 2 slices of red onion in a dry medium size pan over medium heat for 8-10 minutes. Divide shrimp, peppers and onion between 4 warmed flour tortillas. Top each with guacamole, sour cream and/or salsa. Sprinkle with chopped cilantro.

Grill Directions: Preheat grill to medium-high. Place Jammin’ Jerk Shrimp in foil pan on grill. Coat 1/2 red pepper, 1/2 yellow pepper and thick red onion slices with olive oil and place directly on grill. Cook for 8-10 minutes, turning often until vegetables are tender and shrimp is done. Slice peppers and onions. Fill 4 warmed flour tortillas. Top each with guacamole, sour cream, salsa and/or chopped cilantro.



Jammin' Jamaican Jerk Sauce
You can prepare it on many types of meat including seafood. Everyone loves jerk chicken! You can use it as a dipping sauce as well. See the note below.
1/2 c olive oil
2 Tbsp thyme - I use fresh
1 bunch scallions, chopped
1 inch thick ginger, chopped
6-8 cloves garlic, chopped
3 medium brown onions
6 scotch bonnet peppers or jalapenos, sliced
2 Tbsp allspice, ground
1 Tbsp black pepper
1 tsp salt
1 Tbsp nutmeg, ground
2 stick cinnamon, broken
1/2 c soy sauce
1 c orange juice
1 c white vinegar
1/2 c brown sugar, firmly packed
2 Tbsp sugar

Puree the ingredients in a food processor or blender until smooth.
Rub the sauce on chicken, pork, fish, tofu, shrimp or red meat, and marinate the protein overnight; any leftover sauce will keep for weeks in the refrigerator.

NOTE: For all meat, except seafood, marinade overnight. Seafood can marinate for 30 mins. Can bake or grill... Meat may turn a very dark color, this is normal not burned... Save some for basting and dipping! Try marinating chicken legs and thighs for 8 hours - bake or grill - so good! Add rice and fried plantains - you've got a Jamaican meal!
