Sherwood Forest Bed & Breakfast Ragu Bolognese
Located in Douglas, Michigan, this is one of their popular pasta dishes.

2 large carrots, finely chopped
2 celery ribs, finely chopped
1 small onion, finely chopped
1 15 oz. can crushed tomatoes (oven roasted if possible)
One half-cup chicken broth
2 tablespoons balsamic vinegar
One-quarter teaspoon crushed red pepper
Three quarter's of a cup milk
8 oz. pasta
2 tablespoons prepared pesto


Coat pan with olive oil and saute carrot, celery and onion lightly. Stir in tomatoes, broth, vinegar and pepper flakes. Bring to a boil. Stir in milk. Reduce heat; simmer uncovered for 1 hour or until thickened, stirring occasionally. Stir in pesto and serve over pasta.
