Seamark Seafood Chef Bubba's Deviled Crabs
From: Seamark Seafood, Kitty Hawk, N.C - A delicious crab coquette sauteed with onions, celery, green peppers and seasoned with Old Bay, rolled and oven baked.
1 pound regular or backfin crabmeat, remove shells
2 tablespoons minced onions
2 tablespoons minced celery
1 tablespoon minced green pepper
3 tablespoons chopped fresh parsley
1 tablespoon Old Bay Seasoning
3 eggs, beaten
4 cups fresh bread crumbs
1 teaspoon Worcestershire sauce
3 teaspoons baking powder
1/2 teaspoon Tabasco sauce
16 to 18 natural crab or aluminum shells
Combine and mix all ingredients well. Spoon into shells, heaping up in the center. Bake in 400 degree F preheated oven for 15 to 20 minutes, until golden brown on top.
NOTE: If you use natural shells, wash them in 1 part vinegar and 2 parts water before using.
