Pear Halves in Brie Cheese Sauce

Ingredients Preparation

1 tablespoon [15 mL] golden raisins
1/8 teaspoon [0.5 mL] ground clove
1 pinch allspice
1/3 cup [80 mL] brown sugar
2 tablespoons [30 g] soft butter
2 fresh pears
1 1/2 tablespoons [22.5 g] butter
1 tablespoon [8.75 g] flour
1/2 cup [125 mL] milk
1 egg yolk
1/3 cup [80 mL] sour cream
2 ounces [56 g] Brie cheese, crumbled



Preheat barbecue to medium intensity.
Mix together golden raisins, ground clove, allspice, brown sugar and soft butter.
Half pears lengthwise; arrange each pear half onto a large doubled sheet of al foil.
Core pear halves using a spoon.
Equally press golden raisins mixture into hollowed pear halves.
Tightly seal each stuffed pears half in al foil.
Barbecue onto hot barbecue rack turning bundles from time to time for approximately 30 minutes, to soften pear halves.
Meanwhile, for the sauce, melt remaining 1 1/2 tablespoons [22.5 g] butter into a small casserole.
Remove from heat and stir in flour, then milk.
Heat sauce stirring over medium heat, until thickened to a light cream consistency.
Remove from heat.
Into a small bowl, beat together egg yolk and sour cream; mix into hot sauce.
Stirring, mix in half [1 ounce / 28 g] of crumbled Brie cheese, stirring only to melt the cheese, being careful not to overcook the sauce.
Remove from heat; cover to keep sauce warm.
Open-up pear bundles by folding out al foil to expose pear halves; arrange onto individual plates.
Evenly pour warm cheese sauce over pear halves.
Evenly sprinkle pear halves with remaining Brie cheese crumbs, and serve.
