Bruschettas

Ingredients Preparation
1/2 cup [125 mL] balsamic vinegar
1/2 cup [125 mL] olive oil
1 garlic clove, minced
1/2 teaspoon [2.5 mL] salt
1/2 teaspoon [2.5 mL] freshly ground pepper
4 cups [1 L] finely chopped seeded tomatoes
1/3 cup [80 mL] freshly chopped basil
Garlic Bread Slices
2 tablespoons [30 mL] olive oil
1 garlic clove, minced
1/2 teaspoon [2.5 mL] salt
1/2 teaspoon [2.5 mL] freshly ground pepper
1 tablespoon [15 mL] freshly chopped rosemary
16 slices of bread
Preheat barbecue to medium intensity.
To prepare garlic bread, into a small bowl, mix together olive oil, minced garlic, salt, freshly ground pepper and freshly chopped rosemary.
Using a pastry brush, brush both sides of bread slices with mixture.
Toast garlic bread slices onto warm barbecue rack for 1 minute on each side; arrange side-by-side onto a serving plate.
Meanwhile, whip together balsamic vinegar, olive oil, minced garlic, salt and freshly ground pepper.
Delicately mix in chopped tomatoes until well coated with mixture; evenly spoon mixture over toasted garlic bread slices.
Sprinkle toasts with freshly chopped basil, and serve.
