Parmesan Cheese Bites

Ingredients Preparation

20 large slices white bread
1/3 cup [75 g] softened butter
1/2 pound [227 g] cream cheese
1/4 cup [60 mL] mayonnaise
2 green onions, finely chopped
1/2 teaspoon [2.5 mL] dill seeds
1/2 cup [115 g] freshly grated Parmesan cheese



Using a 1 1/2-inch [4-cm] in diameter cutter, cut 4 rounds out of each slice of bread.
Lightly butter one side of each round with butter; arrange rounds onto a cookie sheet and broil until toasted on both sides, turning rounds only once.
Into a small bowl, mix together remaining butter, cream cheese, mayonnaise, chopped green onions and dill seeds until smooth and creamy.
Spread 1 teaspoon [5 mL] cream cheese mixture over buttered side of bread rounds; sprinkle with freshly grated Parmesan cheese and arrange onto a clean baking sheet.
Bread rounds can now be frozen, side-by-side, then transfered into an airtight container and kept frozen until ready to use; it is not necessary to thaw these rounds before reheating.
Preheat oven broiler.
Broil bread rounds, 4 inches [10 cm] from heat for 3 to 5 minutes, until golden brown.
