Easy Chickpeas
Ingredients Preparation
2 tablespoons [30 mL] extra-virgin olive oil
3 cloves garlic, minced
1 cup [250 mL] chopped fresh Italian tomatoes
Generous pinch chile flakes
1 1/2 cups [375 mL] drained boiled cooled or canned chickpeas
1/4 teaspoon [1 mL] salt
Freshly ground black pepper, to taste
Heat olive oil into a casserole.
Stir-fry minced garlic.
Mix in chopped tomatoes and chile flakes.
Leave to simmer for 2 minutes.
Mix in chickpeas; heat through.
Salt, pepper, and serve.
