Pearl Barley Marinated Tomatoes Salad

Comments: For an even nicer salad, use a mix of red and yellow tomatoes, but use any ripe and tasty tomatoes.
It is alos possible to use bulgur or brown rice instead of barley.

Ingredients Preparation

1 cup [250 mL] pearl barley
17 1/2 ounces [500 g] heirloom tomatoes, chopped
1 bunch fresh basil, chopped
2 tablespoons [30 mL] extra-virgin olive oil
1 small clove garlic, finely minced
1/2 teaspoon [2.5 mL] kosher salt
Freshly ground black pepper, to taste



Boil barley into a large casserole filled with boiling water until tender, for approximately 20 minutes.
Drain, rinse under cold water, then drain well.
While cooking the barley, into a large bowl, toss together chopped tomatoes and basil, olive oil, minced garlic, kosher salt and freshly ground black pepper.
Mix in drained barley, and serve.
