Apple Baked Ham

Comments: Even though this is the best ham of all, feel free to add your favorite spices.
Excellent served along with tiny potatoes, green vegetables...

Ingredients Preparation

1 approximately [8 1/2-pound / 4-kg] bone-in fresh ham, preferably shank end
1 tablespoon [15 mL] ground pepper
1 tablespoon [15 mL] thyme
1 tablespoon [15 mL] oregano
1 cup [250 mL] brown sugar
1/2 cup [125 mL] Cognac
6 large apples, cored
2 cinnamon sticks



Preheat oven to 350°F [180°C].
Line a roasting pan with grease-proof paper.
Lay in ham.
Cover with grease-proof paper, then with al foil.
Bake in preheated oven for 90 minutes.
Remove from oven; remove al foil, and grease-proof paper.
Using a sharp knife, cut shallow 'x's all over the rind.
Sprinkle ham with ground pepper, thyme and oregano.
Cover ham with brown sugar.
Pour Cognac all over prepared ham.
Transfer roasting pan back into oven.
Bake for 30 minutes more.
Arrange cored apples and cinnamon sticks all around the ham.
Bake for 45 minutes more.
Remove cinnamon sticks, and serve.
