Homemade Fruit Ketchup
Ingredients Preparation
2 tablespoons [30 g] butter
2 large onions, peeled then diced
2 celery stalks, chopped
3 apples, peeled, cored then diced
3 pears, peeled, cored then diced
4 large tomatoes, diced
1 hot green pepper, seeded then diced
3 tablespoons [45 g] sugar
1/4 cup [60 mL] white balsamic vinegar
Hot sterilized jars
Melt butter into a large casserole.
Fry onion dices stirring often for 5 minutes.
Mix in chopped celery along with apple, pear, tomato and hot green pepper dices.
Mix in sugar.
Cook for 5 minutes, stirring delicately.
Sprinkle with white balsamic vinegar.
Half cover the casserole; leave to simmer over low heat for 30 minutes.
Laddle hot into sterilized jars.
Leave to cool completely before closing jars.
Refrigerate for at least 2 days before serving.
