Smack Shack Biscuits and Country Sausage Gravy

Country Sausage Gravy

What started as a food truck is now one of the most popular seafood restaurants in the Twin Cities! Smack Shack, in Minneapolis' trendy North Loop neighborhood, is known for all things lobster... from lobster rolls to lobster guacamole! Chef and Owner Josh Thoma shares this -

1 cup ground Andouille sausage
1/2 cup unsalted butter
1/2 cup all purpose flour
1 quart whole milk
4 oz thyme
Salt and black pepper
1. In a medium saucepan, melt half of the butter over medium heat.
2. Add sausage and saute, stirring continually, until sausage has broken apart and browned thoroughly.
3. Add remaining butter and melt.
4. Whisk in flour 1 TB at a time, until butter, flour, and sausage form a roux.
5. Continue to cook for 5 minutes, stirring continually.
6. Gradually add milk and whisk in until all roux has dissolved into the milk, creating a smooth gravy.
7. Pick thyme off stem and rough chop. Add to gravy.
8. Grind fresh black pepper into gravy and add salt to taste.
9. Serve over your favorite buttermilk biscuits and top with two eggs.
