Sandbakkelse
1/2 bup butter
1/2 cup granulated sugar
1 egg yolk
1/2 teaspoon almond extract
1 1/2 cups all-purpose flour
-In an electric mixer bowl, place butter and sugar and beat until light and fluffy.
-Add egg yolk and extract and continue beating well.
-Stir in the flour, make marble sized balls and place one in a sandbakkelse fluted shell.
-With your thumb press down dough to cover bottom and sides , making a 1/8-inch thick shell.
-Put the filled shells on a cookie sheet and bake in a a preheated 375-degree oven for 8 to 10 minutes.
-Remove from cookie sheets, put on wire rack to cool slightly. With the tip of a knife loosen shell and turn out on wire rack to finish cooling.
-Makes 4 dozen sandbakkelse
