Not Your Average Baked Pork Chops Casserole!

One of my family's favourite pork chop dish is my Baked Pork Chop Casserole! This is an awesome dish which includes cheese, chopped spinach, beautifully braised chops and a creamy supreme white sauce.

Before you turn your nose upwards because of the spinach, you'd be surprised to learn that even the most discerning eaters will give it a try. My boys love this - hot or cold!

Ingredients:
6 boneless pork chops
Seasoned flour
1 (27 ounce) can spinach, chopped leaf (or family size, frozen chopped spinach, thawed

3 egg yoks
2 cups medium white sauce
grated american cheese (or be creative and try other cheeses - NO PROCESSED)


White Sauce:
4 tbsp butter
4 tbsp flour
1/2 tsp salt
1/2 tsp course ground black pepper
2 cups milk

Southern Baked Pork Chops

INSTRUCTIONS:

Cover pork chops with seasoned flour and sear on both sides over med-high heat until well browned. Reduce heat. Cover the pan and cook about 30 minutes, turning chops frequently.

While pork chops are cooking, cook spinach in separate pan until hot. Next, lay hot spinach in a shallow, buttered baking dish; lay chops atop the spinach, side by side.

Beat yolks well, stir into white sauce, and pour over the chops. Sprinkle with grated cheese and place in 350° oven until cheese bubbles. Serve from baking dish.

Note - Shoulder chops are good for this however, our favourite is tenderloin. Experiment with the cheeses. A truly good smoked gouda, or a combination of extra sharps with a mild makes it flavourful!



WHITE SAUCE:

Melt butter in saucepay. Add flour, salt and petter. Still until well blended. Slowy add milk and cooking, stirring constantly, until sauce thickens. Add well-beaten egg yolks.


Now - what to serve with this dish? Because it already has spinach, we usually have a simple salad and a crusty roll. Keep it small. The casserole is filling!
