Potato Pancakespancakes (placki ziemniaczane)
6-8 medium-size firm potatoes, peeled
1 onion, peeled (can be a sweet onion)
1 egg, beaten
2 tablespoons flour
salt and pepper
oil for frying
Grate the potatoes with the coarse side of a box grater and place them in a colander in the sink. Grate the onion with the finer side of the grater on top of the potato. Press out as much liquid as you can. Dump the potato and onion into the bowl. Add the beaten egg, flour, and salt and pepper to taste. Stir to combine into a thick mixture. Heat the oil in a large frying pan. Drop several mounds of the mixture into the hot oil, and flatten each with a spatula to make a pancake. Fry for 2-3 minutes per side, turning once. When the pancakes are golden brown, remove and place on a plate with a paper towel beneath to absorb the extra oil.
