Black Pepper Vanilla Fudge


Comments: Pepper gives some 'zing' and personality to the traditional vanilla fudge.

Ingredients Preparation

2 cups [500 mL] brown sugar
1/2 cup [125 mL] evaporated milk
1/2 cup [115 g] butter
1/2 teaspoon [2.5 mL] salt
1/2 cup [125 mL] icing sugar
1 teaspoon [5 mL] vanilla extract
4 tablespoons [60 mL] grossly ground black pepper



Butter a shallow dish.
Line dish with plastic wrap larger than de dish.
Into a heavy casserole, mix together brown sugar, evaporated milk, butter and salt.
Using a woooden spoon, melt brown sugar over medium heat stirring.
Lower heat and leave to simmer, stirring from time to time for approximately 20 minutes, until a candy thermometer indicates 235°F [112°C].
Pour mixture into the bowl of an electric beater.
Using a flat whip at low speed, beat mixture mixing in icing sugar.
Mix in vanilla extract.
Beat at medium speed for 5 minutes.
Pour into prepared dish; smooth top using a spatula.
Refrigerate for at least 45 minutes.
To serve, remove from refrigerate; unmold onto a cutting board.
Remove plastic wrap and cut vanilla fudge, using a small cutter, into small rounds.
Pour grossly ground black pepper onto a small plate.
Roll the outside of each vanilla fudge round into black pepper until coated.
Serve.
