Marinated Chicken Salad

Ingredients Preparation

4 chicken whites
1/2 cup [125 mL] creamy cucumber dill herb salad dressing
2 Delicious apples, cored then cut into rings
Chopped spinach, leaf lettuce and raddichio leaves for 4
Thinly sliced English cucumber, to garnish
More creamy cucumber dill herb salad dressing, to serve



Leave chicken whites to marinate in salad dressing for 20 to 60 minutes.
Preheat barbecue to medium-high intensity.
Brush apple slices with salad dressing.
Grill chicken halves onto hot barbecue rack until no longer pink inside for approximately 10 minutes, along with apple slices until done.
Slice diagonally then arrange chicken strips along with cucumber slices over chopped spinach, leaf lettuce and raddichio leaves.
Serve, along with more salad dressing on the side if desired.
