BLACK BEAN TOAST
2 (15 oz.) cans black beans, rinsed & drained
4 cloves garlic, minced
¼ C. packed cilantro leaves*
1 ripe avocado, diced
1 tsp. salt
1/2 tsp. ground black pepper
1/4 C. olive oil
24 slices Crostini bread
2 large tomatoes, diced
½ C. chopped red onion
Cotija cheese

Directions
1. In a blender or food processor, purée the beans, garlic, cilantro, avocado, salt and pepper until smooth.
2. Slowly stream the olive oil in until well blended, scraping down the sides when needed.
3. Using a spatula spread some of the bean mixture onto the toasted Crostini bread slices. Top with some tomatoes, red onion, Cotija cheese and garnish with some cilantro.
