Pittsburgh Blue Steak & Eggs and Creamy Hashbrowns

8oz flat iron steak marinated in rosemary balsamic oil, broiled and topped with shallot butter and served with 2 fry eggs and creamy hash browns.

Grill steak using these tips

•Grill should be at 350 - 400 degrees

•An easy way to clean and get the grill ready is to take a paper towel with cooking oil on it and rub it over the grates.

•Marinade the meat for 2 hours minimum before grilling.

•Rest the meat 2 or 3 minutes after taking it off the grill, before cutting.

Rosemary-Balsamic marinade

1 cup Balsamic vinegar

4 cups extra virgin olive oil

1 table spoon honey

1 large shallot chopped

1 table spoon fresh garlic chopped

1 ounce fresh rosemary chopped

Salt and pepper to taste

In a food processor or blender combine the garlic and shallots and blend for 20 seconds, Add balsamic and honey and continue to blend, very slowly add the olive oil and blend for 40 more seconds, transfer to a mixing bowl and add the chopped rosemary, salt and pepper and mix by hand until well combined.

Herb Shallot Butter

1 pound unsalted butter

2 table spoons fresh chopped garlic

1/2 tea spoon white pepper

1 table spoon kosher salt

1/4 cup lemon juice

1 table spoon lemon zest

1 ounce minced shallots

1 yellow onion chopped

1/2 bunch fresh chopped parsley

Let the butter rest at room temperature for 30 minutes before making the recipe this way would be easier to mix it by hand.

In a food processor or blender mix shallots, onions, garlic and parsley for 1 minute until forming a paste.

Place mixed vegetables and the rest of the ingredients in a mixing bowl and mix by hand for 3 minutes or until well combined.

Creamy Hash browns

(Feeds 6 to 10)

5# hash brown potatoes

1/4 cup bleu cheese crumbles

2 cups heavy cream

1 cup diced yellow onion

1/4 cup roasted garlic puree

1/4 bunch chopped parsley

1/2 cup butter

Mix all ingredients except butter, transfer potato mix to a baking pan.

Melt butter and pour a top of potato mix.

Bake at 350 degrees for 45 minutes.
