KFC Tender Roast Chicken
This tender roast chicken was first introduced by KFC in 1996 competing with Boston Market and Kenny Rodgers. Although it was short-lived, it doesnt mean it wasnt good! Why not still enjoy this today?
Preheat oven to 375*F.
Combine your spices for your spice blend:
½ t. salt
½ t. black pepper
½ t. lemon pepper
¼ t thyme
¼ t. paprika
Place your chicken skin side up on your baking sheet (I oil my sheet, place the chicken pieces on it and turn to coat lightly.) Now here is where you choose to flavor the skin or not. Some remove the skin, some dont and you want the taste. I season the skin and I also slide my hand up the inside of the skin the season the chicken as well for flavor. That is why I make a jar of the seasoning.
This way if you dont like the skin you still have flavor. You can bake the chicken for 20 minutes, remove the skin and season if you want its your choice. Return to oven and continue baking until done.
I do this also if I want my chicken done rotisserie-style and I stick my hand up the inside and season as well.
To begin with since I like the spice blend and like to use it I make a jar of it:
3 T. Kosher salt (I like Kosher)
3 T. cracked black pepper
3 T. lemon pepper
2 t. thyme (I am not a big fan of thyme)
2 T. (scant) paprika
Store airtight.
Whichever way you try this I know you will enjoy it. Serve with other KFC goodies
