Cumin-Spiced Pork Skewers, Apricot Mustard Dip





Servings: 18 skewers





6 boneless pork loin center chops, approximately 1 1/4 pounds [560 g], each cut into 3 strips

1 teaspoon [5 mL] roasted garlic seasoning paste

1 teaspoon [5 mL] ginger seasoning paste

1 teaspoon [5 mL] cumin

1 1/2 teaspoons [7.5 mL] salt

2 teaspoons [10 mL] olive oil



Apricot Mustard Dip



1/3 cup [80 mL] apricot jam

1/3 cup [80 mL] whole grain Dijon mustard

1 teaspoon [5 mL] loosely packed freshly chopped rosemary



18 soaked in water wooden, or metal, skewers







Preheat oven broiler.

Place rack in the middle of the oven.

Transfer pork strips into a bowl.

Coat with already mixed together roasted garlic seasoning paste, ginger seasoning paste, cumin, salt and 1/2 teaspoon [2,5 mL] of the olive oil.

Leave to marinate for 10 minutes.

Insert skewers through the length of each pork strip.

Arrange onto a rimmed baking sheet and drizzle with remaining olive oil.

Broil onto middle rack of preheated oven broiler for 5 to 7 minutes, until cooked through and lightly golden.

Meanwhile, into a bowl, mix together apricot mustard dipping sauce jam, Dijon mustard and freshly chopped rosemary.

Serve brochettes warm, along with apricot mustard dip.
